Abstract

Método para deshuesar jamones parcialmente. El método contempla la extracción del cóccix y del fémur del jamón, realizándose inicialmente el descarnado y la extracción del cóccix. Para extraer el fémur se contempla la realización de un corte en el lateral interior de la pata, seccionando la articulación del fémur con la tibia y el peroné; el descarnado del fémur mediante la introducción longitudinal de un útil desde la zona superior del fémur y actuando con dicho útil sobre su superficie lateral y finalmente su extracción en sentido longitudinal por el interior del orificio definido durante el descarnado. La finalidad de este deshuesado es permitir el corte a máquina de una parte importante del jamón.
