Abstract

Método para el deshuesado parcial de jamones. Este método contempla: - inicialmente el descarnado de aproximadamente los dos tercios superiores del fémur mediante una gubia u otro elemento similar, accediendo al mismo por la zona superior de la pata, - la realización desde la cara interna del jamón de un corte de amplitud reducida para seccionar transversalmente el fémur por una zona que se encuentra aproximadamente a dos tercios del extremo superior del mismo y a un tercio de su extremo inferior, permaneciendo este tercio inferior unido a la articulación con la tibia y el peroné y, finalmente, - la extracción de los dos tercios superiores del fémur a través del orificio definido durante la operación de descarnado.
