Abstract
Un metodo y aparato para remover una porcion de grasa de cortes de carne implica colocar un corte de carne en un transportador longitudinal, presionar sondas detectoras dentro del corte de carne para medir el espesor relativo de la grasa y el lugar de la carne magra en la carne y enseguida retirar las sondas detectoras de la carne.
