Abstract
"MéTODO E APARATO PARA REMOçãO DE GORDURA EM CORTES DE CARNE". Um método e aparato destinados à remoção de uma região de gordura em cortes de carne envolvem a colocação de um corte de carne em um transferidor longitudinal, introdução de sensores no corte de carne para medir a espessura relativa de gordura e a localização da parte magra na carne e, então, a retirada das sondas sensoras da carne. Um sinal eletrónico é transmitido do sensor a um controlador, juntamente com um sinal do codificador, de forma a determinar a profundidade da superfície inferior externa do corte de carne através de uma camada de gordura na carne até uma camada magra na carne. Os dados são tomados da etapa anterior, de forma a determinar a posição desejada da lâmina, a qual remove a quantidade apropriada de gordura que deve ser removida no corte de carne.
