EL AGENTE DE TEXTURA DE GRADO ALIMENTARIO DE LA INVENCION TIENE LA FORMA DE PARTICULAS RESISTENTES AL ENGROSAMIENTO TERMICAMENTE ESTABILIZADAS Y NO CRISTALINAS DE ALMIDON DE ALTO CONTENIDO EN AMILOSA, QUE PRESENTAN UNA ESTRUCTURA BLANDA NO GELIFICADA, EN LAS CUALES EL CONTENIDO DE AMILOSA DEL ALMIDON ES DE ENTRE EL 40 Y EL 70%, Y EN LAS CUALES EL 90% DE LAS PARTICULAS TIENEN UN DIAMETRO EN LA BANDA DE ENTRE 5 Y 30 MICRONES. ESTE AGENTE PUEDE PREPARARSE SUSPENDIENDO EL ALMIDON CON ALTO CONTENIDO EN AMILOSA EN AGUA, CALENTANDO LA PASTA ASI OBTENIDA HASTA 80-100 (GRADOS) C, PREFERIBLEMENTE HASTA 90-100 (GRADOS) C BAJO UNA AGITACION CONTINUA CONTROLADA SIN CORTE PERO SUFICIENTE PARA EVITAR LA CONGREGACION DE LAS PARTICULAS Y DE MANERA QUE SE FORME EL PRODUCTO DE GEL EN PARTICULAS BUSCADO, Y ENFRIANDO EL PRODUCTO. PUEDE UTILIZARSE EN PREPARACIONES ALIMENTARIAS COMO SUSTITUTO DE LA GRASA Y/O AGENTE BLANQUEANTE.
