METODO Y APARATO PARA PRODUCIR UNA BEBIDA DE CAFE RECONSTITUIDA, QUE TIENE UNA CAPA ESPESA DE CAFE ESPUMADO SOBRE SU SUPERFICIE, SE ASPECTO SIMILAR A UNA BEBIDA DE CAFE EXPRESO. SE COMBINA CON VIGOROSA AGITACION, EN UNA CAMARA DE MEZCLA ENFRIADA, UNA CANTIDAD MEDIDA DE CONCENTRADO DE CAFE DESHIDRATADO, TAL COMO CAFE INSTANTANEO SECADO POR PULVERIZACION Y UNA PEQUEÑA CANTIDAD DE AGUA FRIA, PARA FORMAR UN CONCENTRADO DE CAFE ESPUMADO FRIO. CON LA FORMACION DEL CONCENTRADO ESPUMADO SE INTRODUCE UNA CANTIDAD CONTROLADA DE AGUA CALIENTE EN LA CAMARA DE MEZCLA PARA DILUIR EL CONCENTRADO ESPUMADO MIENTRAS SE CONSERVA SUSTANCIALMENTE LA ESTRUCTURA ESPUMADA CON LO QUE SE PROPORCIONA UNA FRACCION DE CAFE LIQUIDA RECONSTITUIDA DE UNA CONCENTRACION SIMILAR.
