Claims (7)
- Appareil de cuisson avec un four, présentant un espace de cuisson obturable par une porte de four à l'intérieur d'une carcasse de four, laquelle carcasse de four resp. lequel appareil de cuisson (1) présente des orifices d'écoulement (7, 8) menant à l'air libre pour un flux d'air de refroidissement (16) de préférence forcé par un ventilateur pour l'espace de carcasse entourant l'espace de cuisson ainsi que pour l'évacuation de vapeurs grasses (17) générées dans l'espace de cuisson lors du fonctionnement, dans lequel le sens d'écoulement du flux d'air de refroidissement (16) s'écoulant de l'au moins un orifice d'écoulement (8) pour l'air de refroidissement est dirigé dans un sens entre le sens d'écoulement du flux de vapeurs (17) s'écoulant de l'au moins un orifice d'écoulement (7) pour les vapeurs et un objet (6) à protéger contre la contamination par les vapeurs, caractérisé en ce qu'au moins un élément de soufflage (11, 11') présentant les orifices d'écoulement (7, 8) peut être fixé de façon étanche sur la carcasse de four ou sur une plaque de cuisson (1) installée par-dessus resp. sur son encadrement de plaque (4), dans lequel l'élément de soufflage (11, 11') est insérable sur la surface de la carcasse de four resp. sur l'encadrement de plaque (4) et doté d'éléments d'étanchéité, de sorte que le débordement de fluide observé lors de la cuisson ne peut pénétrer dans l'appareil de cuisson, et dans lequel au moins un orifice d'écoulement (8) pour l'air de refroidissement déplace l'orifice d'écoulement (7) pour les vapeurs au moins sur le côté dirigé vers l'objet à protéger (6).
- Appareil de cuisson selon la revendication 1, caractérisé en ce que l'au moins un orifice d'écoulement (8) pour le flux d'air de refroidissement (16) est disposé entre l'au moins un orifice d'écoulement (7) pour les vapeurs (17) et un objet (6) à protéger contre la contamination par les vapeurs.
- Appareil de cuisson selon l'une des revendications précédentes, caractérisé en ce que la section d'écoulement de l'au moins un orifice d'écoulement (8) pour l'air de refroidissement est globalement supérieure à la section d'écoulement de l'au moins un orifice d'écoulement (7) pour les vapeurs.
- Appareil de cuisson selon l'une des revendications précédentes, caractérisé en ce que l'ensemble des orifices d'écoulement (7, 8) se trouvent dans la zone arrière, voisine d'une paroi de réglage (6) ou autre surface de délimitation de l'appareil de cuisson ou dans la zone arrière d'une plaque de cuisson (1) disposée au-dessus d'un four.
- Appareil de cuisson selon l'une des revendications précédentes, caractérisé en ce que les orifices d'écoulement (7, 8) du four sont reliés via des conduits d'écoulement distincts de préférence flexibles (9, 10) à des orifices d'écoulement (7, 8) semblables sur une plaque de cuisson (1).
- Appareil de cuisson selon l'une des revendications précédentes, caractérisé en ce que l'objet (6) à protéger contre la contamination est un objet séparé de l'appareil de cuisson ou relié à l'appareil de cuisson.
- Appareil de cuisson selon l'une des revendications précédentes, caractérisé en ce que les orifices d'écoulement (7, 8) sont orientés de telle façon sur le four que les vapeurs s'écoulant de l'orifice d'écoulement (7) sont dirigées vers le haut, de préférence dans la zone d'un orifice d'aspiration d'une hotte aspirante.
