La présente invention concerne une méthode de fabrication d'un fromage naturel comportant au moins deux étapes, qui consistent à cuire au moins deux lots de caillé de fromage; transporter de manière alternée un nombre désiré de ces lots de caillé de fromage vers cuve de décharge dans l'ordre désiré; mettre à niveau si nécessaire et pré-presser en plaque ou transporter les lots de caillé de fromage suivant une méthode correspondante directement vers un moule ou similaire.; découper à partir des plaques pré-pressées des morceaux de taille adaptée au moulage et à la pression pour former un fromage, saler, emballer si nécessaire et affiner si nécessaire ou, en cas de distribution directe dans un moule, poursuivre le pressage pour former un fromage, saler et emballer si nécessaire.
