Abstract
L'invention a pour objet un produit de cuisson enrichi en fibres comprenant de la farine, caractérisé en ce qu'il comprend de 6 à 20% en poids d'un mélange d'au moins un amidon résistant et d'un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées, les pyrodextrines et le polydextrose, ces pourcentages étant exprimés en poids par rapport au produit fini. Elle a également pour objet un procédé de préparation d'un tel produit de cuisson.
Description
PRODUIT DE CUISSON ENRICHI EN FIBRES ET PROCEDE DE FABRICATION D'UN TEL PRODUIT.
La présente invention a pour objet un produit de cuisson enrichi en fibres comprenant de la farine et un agent améliorant particulier, dont le caractère moelleux et la stabilité au stockage sont améliorés. Elle vise en particulier tous les produits comprenant de la farine, comme en particulier les produits de boulangerie à pâte levée ou à pâte poussée, notamment le pain français traditionnel, les pains de mie, les pains anglais, les brioches, les petits pains, viennoiseries, gâteaux, pâtes à pizza, buns, les pâtes congelées, les pâtes alimentaires non- levées, les produits textures pour alimentation humaine et animale.
Le pain, par sa richesse en glucides complexes et son apport en protéines végétales, est un aliment indispensable à l'équilibre alimentaire quotidien. Pratiquement dépourvu de lipides et d'un apport énergétique modéré, il permet d'améliorer le rapport lipides-glucides de notre alimentation, actuellement trop souvent déséquilibré. Les processus de fabrication (fermentation et cuisson) en font un aliment particulièrement digeste, bonne, source de fibres, vitamines du groupe B et de minéraux. Depuis quelques années, de nombreuses denrées alimentaires, dont le pain, sont enrichies en fibres. Les fibres alimentaires ne désignent pas seulement les matières fibreuses au sens strict, mais également toute une série de composés différents qui surviennent presque exclusivement dans les , aliments d'origine végétale et qui présentent la propriété commune de ne pouvoir être décomposés par les enzymes digestives de l'homme. Presque toutes les fibres
alimentaires sont des polymères glucidiques. Depuis quelques années, les nutritionnistes se sont intéressés à un nouveau type de fibres alimentaires : l'amidon résistant. Il s'agit d'un amidon ou d'une fraction d'amidon qui n'est pas digérée dans l'intestin grêle et qui est fermentée par les bactéries du colon. Quatre catégories d'amidon résistant ont été identifiées : les amidons encapsulés présents dans la plupart des aliments végétaux non raffinés tels que les légumes secs, qui sont inaccessibles aux enzymes (RSl) l'amidon granulaire de certains aliments crus comme la banane ou la pomme de terre et les amidons riches en amylose (RS2) - les amidons rétrogrades que l'on trouve dans les aliments cuits puis réfrigérés ou congelés (RS3) les amidons modifiés par voie chimique comme en particulier les amidons éthérifiés ou estérifiés (RS4)
Les amidons résistants proposés notamment par la société NATIONAL STARCH tels que ceux commercialisés sous l'appellation HI-MAIZE® sont issus de variétés de maïs riche en amylose et se comportent comme des fibres insolubles. Des amidons résistants de ~ type RS3 sont également proposés sous l'appellation NOVELOSE® .
Ces amidons .résistants diminuent la réponse glycémique, améliorent la santé du système digestif grâce à leurs propriétés prébiotiques et contribuent à la régularité du transit, sans être à haute valeur calorique.
A la différence des fibres végétales traditionnelles, ces
amidons présentent l'avantage de ne pas modifier l'apparence du produit dans lequel ils sont incorporés, et constituent en quelque sorte une source de fibres invisibles à l'œil nu. Ces amidons sont préconisés dans de nombreuses applications alimentaires et en particulier dans le pain où leur mise en œuvre est aisée. De telles applications sont notamment citées dans les documents US 6.451.367 et US 2004/0234663. Cependant, ils présentent quelques inconvénients lorsqu'ils sont incorporés seuls, en substitution d'une partie de la farine. En effet ont été relatés dans la littérature des problèmes de diminution du moelleux des pâtes cuites, et des problèmes de conservation tels qu'un rassissement accéléré de la mie, et ce à des taux d'incorporation assez faibles. Il semble donc nécessaire, lorsqu'on veut enrichir un produit de cuisson en fibres telles que l'amidon résistant, de pallier ces inconvénients sans modifier de façon conséquente les procédés de fabrication auxquels sont attachés les industriels . Faisant le constat de cet état de la technique, la société demanderesse a mis au point un produit de cuisson enrichi en fibres et son procédé de fabrication, dans lequel on incorpore en substitution d'une partie de la farine un mélange constitué d'amidon résistant et d'un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées, les pyrodextrines et le polydextrose .
La société Demanderesse a en effet trouvé après de nombreux essais que l'association d'amidon résistant et d'un agent améliorant particulier permettait de par leur complémentarité de corriger les inconvénients de chacun d'eux. L'amidon résistant utilisé seul a un impact négatif
sur le moelleux des pâtes, sur la croustillance de la croûte lorsqu'elle est recherchée. Les maltodextrin.es branchées présentent quant à elles l'inconvénient de nécessiter, à des taux d'incorporation supérieurs à 3% en poids, l'ajout d'un agent réducteur tel que la cystéine par exemple de telle sorte que la pâte puisse être travaillée normalement .
Grâce à cette association spécifique, l'on peut fabriquer des produits de cuisson enrichis en fibres selon les procédés traditionnels, en obtenant des produits dont le moelleux est sensiblement amélioré et dont la conservation est tout à fait satisfaisante, tout en permettant des taux d' incorporation sensiblement augmentés et en tout état de cause supérieurs à 3% en poids sur le produit fini.
La présente invention a donc pour objet un produit de cuisson enrichi en fibres comprenant de la farine, caractérisé en ce qu'il comprend de 6 à 16% d'un mélange d'au moins un amidon résistant et d'au moins un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées, les pyrodextrines et le polydextrose, ces pourcentages étant exprimés en poids par rapport au produit fini.
On entend par « enrichi en fibres » selon la présente invention des produits de cuisson qui comprennent au moins 6g de fibres pour 100 g de produit fini. La détermination du taux de fibres est faite selon la méthode AOAC 2001-03 Gordon et Okhuma. Le produit de cuisson conforme à l'invention comprend avantageusement de 3 à 8% en poids d'amidon résistant et de 3 à 8% d'agent améliorant.
Selon une variante préférée de l'invention, le produit de cuisson est caractérisé en ce que le ratio amidon
résistant/agent améliorant du mélange est compris entre 25/75 et 75/25, et mieux, entre 30/70 et 70/30. De préférence, il est de l'ordre de 40/60.
On entend par maltodextrines branchées les maltodextrines spécifiques telles que décrites dans le brevet EP 1.006.128-B1 dont la Demanderesse est titulaire. Ces maltodextrines branchées ont l'avantage de représenter une source de fibres indigestibles bénéfiques pour le métabolisme et pour l'équilibre intestinal. En particulier on pourra utiliser en tant qu'agent améliorant des maltodextrines branchées présentant entre 15 et 35% de liaisons glucosidiques 1-6, une teneur en sucres réducteurs inférieure à 10%, un poids moléculaire Mw compris entre 4000 et 6000 g/mole et une masse moléculaire moyenne en nombre Mn comprise entre 2000 et 4000 g/mole.
Certaines sous- familles de maltodextrines branchées décrites dans ladite demande peuvent aussi être utilisées conformément à l'invention. Il s'agit en particulier de maltodextrines branchées de bas poids moléculaire présentant une teneur en sucres réducteurs comprise entre 5 et 20% et une masse moléculaire Mn inférieure à 2000 g/mole. Ces maltodextrines peuvent bien entendu être utilisées seules ou en mélange avec d'autres agents améliorants conformes à l'invention. De très bons résultats ont été obtenus avec un produit de cuisson comprenant de 4 à 8%, de préférence entre 4 et 6% d'amidon résistant et de 4 à 8%, de préférence entre 4 et 7% de maltodextrines branchées .
Les pyrodextrines désignent les produits obtenus par chauffage de l'amidon amené à faible taux d'humidité, en présence de catalyseurs acides ou basiques, et présentant généralement un poids moléculaire compris entre 1000 et
6000 daltons. Ce grillage à sec de l'amidon, le plus couramment en présence d'acide, entraîne à la fois une dépolymérisation de l'amidon et un réarrangement des fragments d'amidon obtenus, conduisant à l'obtention de molécules très ramifiées. Cette définition vise en particulier les dextrines dites indigestibles, d'un poids moléculaire moyen de l'ordre de 2000 daltons.
En ce qui concerne les amidons résistants, on pourra utiliser indifféremment les amidons résistants naturels ou les amidons résistants obtenus par modification chimique et/ou physique. De préférence, on utilisera .un amidon résistant issu d'amidon ayant une teneur en amylose supérieure à 50%. Les produits commercialisés par NATIONAL STARCH sous l'appellation Hi-Maize® conviennent particulièrement, ainsi que les amidons riches en amylose EURYLON® commercialisés par la Demanderesse.
Les produits de cuisson selon l'invention désignent des articles fabriqués selon les cas par cuisson par exemple au four, à l'eau, par cuisson-extrusion, de pâtes élaborées par pétrissage d'une farine de départ et d'eau, auxquelles peuvent être ajoutés en fonction des besoins d'autres adjuvants d'usage courant tels que notamment levure, sel, sucres, édulcorants, produits laitiers, matières grasses, émulsifiants, épices, fruits secs, arômes, enzymes amylolytiques . - _ - - - -
Selon une variante avantageuse de l'invention, la pâte ne comprend pas de matière grasse, puisque la combinaison d'amidon résistant et de l'agent améliorant selon l'invention présente l'avantage complémentaire de se substituer partiellement ou totalement aux matières grasses couramment utilisées. De plus, lorsqu'on cherche à préparer des produits à faible teneur en matières grasses, l'on est
généralement confronté à une perte de moelleux des produits, comme c'est le cas en particulier pour les brioches . Dans les conditions de la présente invention, la combinaison spécifique d'amidon résistant et d'agent améliorant présente l'avantage de compenser la perte de moelleux d'un produit moins riche en matières grasses, en utilisant peu ou pas d'additifs supplémentaires.
La farine de départ désigne en général les farines de blé, qui peuvent être complétées ou partiellement remplacées par de la farine de seigle, de maïs, de riz notamment . On entend par « farines de blé » les farines classiques de meunerie, de la farine blanche à la farine complète .
L'invention concerne indifféremment toutes les variétés de pâtes, poussées, levées ou non. Les produits obtenus à partir de pâtes levées sont par exemple les pains, pains spéciaux, pains viennois, produits briochés, pizzas, pains pour hamburgers. Les produits obtenus à partir de pâtes poussées sont par exemple les biscuits, cookies, muffins, cakes et autres gâteaux, les produits à base de pâte feuilletée. Les pâtes non levées désignent en particulier les pâtes alimentaires (spaghettis, tagliatelles, macaronis, nouilles, et autres) sous toutes leur formes préparées à partir de farines de blés durs ou tendres.^ L'invention s'applique également aux produits extrudés tels que les snacks, les céréales pour petit déjeuner, les crackers, et tout produit texture comprenant de la farine .
Le produit de cuisson selon l'invention peut être fabriqué selon tout procédé industriel classique. On prépare une pâte comprenant un mélange de farine, d'eau, le mélange d'amidon résistant et d'agent améliorant selon
l'invention, et éventuellement un agent levant. Les quantités de farine, d'eau et d'agent levant sont déterminées aisément par l'homme de l'art en fonction du type de produit de cuisson souhaité. Cette pâte pourra être levée ou non selon les cas. La pâte mise en œuvre dans le procédé selon l'invention comprendra de l'amidon résistant et l'agent améliorant en substitution d'une partie de la farine, dans des proportions telles que le produit fini après cuisson comprenne de 3 à 8% en poids d'amidon résistant et de 3 à 8% en poids de maltodextrines branchées. En deçà de 3%, les fonctionnalités de chaque ingrédient ne peuvent être mises en évidence. Au-delà de 8%, les qualités organoleptique et la machinabilité des pâtes commencent à être modifiées de façon négative. Bien entendu, la pâte servant à préparer les produits de cuisson selon l'invention peut comprendre tout ingrédient adapté et généralement utilisé par l'homme du métier, et peut être mise en forme indifféremment selon les diverses exigences des consommateurs et les équipements industriels.
La présente invention a donc également pour objet un procédé de fabrication d'un produit de cuisson enrichi en fibres consistant à : former une pâte comprenant de la farine, au moins un amidon résistant et au moins un agent améliorant, pétrir cette pâte, éventuellement laisser la pâte lever, cuire la pâte pour obtenir ledit produit de cuisson, caractérisé en ce que ledit produit de cuisson comprend de 3 à 8% en poids d'amidon résistant et de 3 à 8% en poids d'un agent améliorant choisi dans le groupe
constitué par les maltodextrines branchées, le polydextrose (hydrogéné ou non) et les pyrodextrines seules ou en mélange entre eux, ces pourcentages étant exprimés en poids par rapport au produit fini . La Demanderesse a en outre constaté que certaines fibres végétales pouvaient remplir les mêmes fonctions que l'amidon résistant, et pouvaient s'y substituer en tout ou partie. Il s'agit en particulier des fibres de pois, de pomme de terre, de blé, les fibres de pois étant préférées. Sont également susceptibles de convenir les hydrocolloïdes tels que les gommes de guar, xanthane et autres gommes susceptibles de modifier la disponibilité de l'eau dans la pâte, et de permettre la substitution de tout ou partie des matières grasses. Ainsi, des mélanges de gommes de guar ou de xanthane avec l'agent améliorant selon l'invention et éventuellement l'amidon résistant permettent de préparer des produits de panification enrichis en fibres et allégés en matières grasses. Comme il le sera exemplifié par ailleurs, on a pu préparer conformément à l'invention des brioches présentant un allégement en matières grasses d'environ 40%, et présentant un taux de fibres de 7%, les brioches obtenues étant tout à fait comparables aux produits préparés selon les méthodes de l'art antérieur.
La présente invention a donc également pour objet un - produit de cuisson enrichi en fibres comprenant de la farine, caractérisé en ce qu'il comprend de 3 à 20% en poids d'un mélange d'au moins une fibre végétale, de préférence de pois, et d'au moins un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées, les pyrodextrines et le polydextrose, ces pourcentages étant exprimés en poids par rapport au produit fini.
Selon une variante préférée, le produit de cuisson selon l'invention comprend de 1 à 8% en poids de fibres végétales, de préférence de pois, et de 3 à 8% en poids d'un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées, le polydextrose et les pyrodextrines seules ou en mélange entre eux, ces pourcentages étant exprimés en poids par rapport au produit fini, les maltodextrines branchées étant préférées. Bien évidemment, le procédé d'obtention d'un tel produit de cuisson enrichi en fibres est inchangé par rapport au procédé susmentionné qui met en œuvre des amidons résistants .
Selon une autre variante de la présente invention, ledit produit de cuisson comprend un mélange d' agent améliorant et d'au moins un hydrocolloïde, de préférence une gomme de guar et/ou de xanthane . Lorsque l'agent améliorant représente 3 à 6% du produit de cuisson, la présence de gomme de guar est suffisante pour assurer la préparation d'une pâte correcte. Au-delà de 6% d'agent améliorant, la présence de cystéine conjointement à la gomme de guar devient nécessaire pour ajuster la texture de pâte. L'invention a donc également pour objet un produit de cuisson enrichi en fibres comprenant de la farine, caractérisé en ce qu'il comprend de 4 à 20% en poids d'un mélange de gomme de guar e.t/ou de xanthane et d'au moins un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées et les pyrodextrines, ces pourcentages étant exprimés en poids par rapport au produit fini. Selon une variante de la présente invention, l'agent améliorant représente de 3 à 15% en poids du produit fini, la gomme étant présente dans le produit fini en une
quantité inférieure ou égale à 2%, de préférence comprise entre 0,5 et 1,5% en poids.
L'invention sera mieux comprise à la lecture des exemples qui suivent et de la figure qui s'y rapporte, lesquels se veulent illustratifs et non limitatifs.
Exemple 1 : fabrication de pains enrichis en fibres selon 1/ invention. On prépare des pains conformément à l'invention, en utilisant un mélange d'amidon résistant EURYLON®6 (amidon de maïs à 60% d'amylose) et de maltodextrines branchées, sans ajout d'agent réducteur. Les formules de pâte mises en œuvre sont détaillées dans le tableau ci-après (les pourcentages indiquent la proportion , dans le produit fini) :
Ces essais mettent en évidence que des pains riches en fibres comprenant environ 4% d'amidon résistant et environ 6% de maltodextrines branchées présentent un volume optimal, sans que la pâte ne soit collante avant cuisson. Des taux d'incorporation moindres sont toujours satisfaisants au niveau de la mise en œuvre de la pâte et du volume des pains, mais la teneur en fibres du produit final est moindre. Au-delà de 7% de maltodextrines branchées, la pâte devient légèrement collante (essai 3). Sans amidon résistant (essai 4), la pâte est très collante.
Exemple 2 : préparation de pains de mie ; test de conservation.
On fabrique des pains de mie en mettant en œuvre un mélange d'amidon résistant Hi-Maize®958 ou EURYLON®6 et des maltodextrines branchées. Un test de conservation est réalisé de manière à apprécier l'évolution de la mie après conservation. Les formules mises en œuvre sont reprises dans le tableau ci-après :
Résultats : Ces essais démontrent bien que lorsque les pains comprennent uniquement de l'amidon résistant, la fermeté est pratiquement doublée par rapport à des pains
comprenant un mélange d'amidon résistant et de maltodextrines branchées. Un ratio d'environ 40/60 d'amidon résistant et de maltodextrines branchées (essais A et B) donne des résultats tout à fait corrects en termes de fermeté et d'élasticité de la pâte. La fermeté des pains augmente en même temps que le taux d'incorporation d'amidon résistant. Par ailleurs, il est possible de fabriquer des pains avec maltodextrines branchées sans ajout d'agent réducteur selon l'art antérieur.
Exemple 3 : fabrication de pains de mie enrichis en fibres selon l' invention.
On prépare des pains conformément à l'invention, en utilisant un mélange de fibres de pois et de maltodextrines branchées, sans ajout d'agent réducteur.
L'essai 1 est un témoin selon la formule traditionnelle au dextrose. L'essai 2 est un témoin ne comprenant que des maltodextrines branchées. L'essai 3 est une formule conforme à l'invention. Les formules de pâte mises en œuvre sont détaillées dans le tableau ci-après
(les pourcentages indiquent la proportion dans le produit. fini) . Les pâtons sont cuits au four rotatif à 2000C pendant 25 minutes après des temps de pousse de 2h 15 min pour les essais 1 et 2 , et de lh30 pour l'essai 3. Les ---teneurs en eau. après cuisson et 24 heures de stockage sont mesurées .
Essai 1 : il faut 1 + 10 min pour lier la pâte et obtenir une texture correcte (un pétrissage moins long 'donne"une pâte mal liée de texture collante)
Essai 2 : témoin "négatif" : sans ajout de fibres insolubles, il faut 1 + 18 min pour lier la pâte.
Essai 3 : maltodextrines branchées + fibres de pois : il faut 1 + 11 min pour lier la pâte, soit un temps comparable à la formule traditionnelle de l'essai 1.
Exemple 4 : fabrication de brioches allégées en matières grasses selon l' invention.
On prépare des brioches allégées en matières grasses et enrichies en fibres, comprenant un mélange d'agent améliorant (maltodextrines branchées) et de gomme de guar.
La formule utilisée est la suivante :
La cystéine est dissoute dans l'eau. Toutes les poudres sont mélangées, puis les autres ingrédients sont ajoutés. Le mélange pétri est ensuite cuit, après avoir levé pendant deux heures à 350C, dans un four à 1900C pendant 23 minutes.
Les brioches obtenues comprennent, par rapport à la recette traditionnelle, 42% de matières grasses en moins, 12% de réduction calorique, et plus de 7% de fibres.
Claims
1. Produit de cuisson enrichi en fibres comprenant de la farine, caractérisé en ce qu'il comprend de 6 à 20% en poids d'un mélange d'au moins un amidon résistant et d'au moins un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées, les pyrodextrines et le polydextrose, ces pourcentages étant exprimés en poids par rapport au produit fini.
2. Produit de cuisson selon la revendication 1, caractérisé en ce qu'il comprend de 3 à 8% d'amidon résistant et de 3 à 8% dudit agent améliorant, ces pourcentages étant exprimés en poids par rapport au produit fini .
3. Produit de cuisson selon l'une ou l'autre des revendications 1 et 2 , caractérisé en ce que ledit agent améliorant consiste en des maltodextrines branchées.
4. Produit de cuisson selon l'une quelconque des revendications 1 à 3, caractérisé en ce que le ratio amidon résistant/agent améliorant dudit mélange est compris entre 75/25 et 25/75.
5. Produit de cuisson selon l'une quelconque des revendications 1 à 4, caractérisé en ce qu'il présente un taux de fibres d'au moins 6g/100g de produit fini. -
6. Procédé de fabrication- d'un produit de cuisson enrichi en fibres consistant à : former une pâte comprenant de la farine, au moins un amidon résistant et au moins un agent améliorant, pétrir cette pâte, - éventuellement laisser la pâte lever, cuire la pâte pour obtenir ledit produit de cuisson, caractérisé en ce que ledit produit de cuisson comprend de 3 à 8% en poids d'amidon résistant et de 3 à 8% en poids d'un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées, le polydextrose et les pyrodextrines seules ou en mélange entre eux, ces pourcentages étant exprimés en poids par rapport au produit fini .
7. Procédé selon la revendication 6, caractérisé en ce que ledit amidon résistant est un amidon ayant une teneur en amylose supérieure ou égale à 50%.
8. Procédé selon l'une quelconque des revendications 6 et 7, caractérisé en ce que ledit agent améliorant consiste en des maltodextrines branchées .
9. Produit de cuisson enrichi en fibres comprenant de la farine, caractérisé en ce qu'il comprend de 4 à 20% en poids d'un mélange d'au moins une fibre végétale et d'au moins un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées et les pyrodextrines, ces pourcentages étant exprimés en poids par rapport au produit fini.
10. Produit de cuisson selon la revendication 9 caractérisé en ce qu'il comprend de 1 à 8% d'une fibre de pois et de 3 à 8% de maltodextrines branchées, ces pourcentages étant exprimés en poids par rapport au produit fini.
11. Produit de cuisson enrichi en fibres comprenant de la farine, caractérisé en ce qu'il comprend de 4 à 20% en poids d'un mélange de gomme de guar et/ou de xanthane et d'au moins un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées et les pyrodextrines, ces pourcentages étant exprimés en poids par rapport au produit fini.
