- the present invention relates to the use of a sweetner composition having a natural sweetness and therefore being excellent in its quality, which comprises N-[N-(3,3-dimethylbutyl)-L- ⁇ -aspartyl]-L-phenylalanine 1-methyl ester (hereinafter, abbreviated as "DMB-APM”) which is a sweetener having a high level of sweetness, together with Aspartame (hereinafter, abbreviated as "APM”) which is an amino acid-based sweetener, and optionally Acesulfame K (hereinafter, abbreviated as "AceK”).

- the sweetener is extremely weak in early taste (which means that a sweetener when put in the mouth tastes sweet as early as sucrose), whereas it is extremely strong in later taste (which means that a sweetener tastes sweet later than sucrose). Further, it has a strong astrigent taste. Accordingly, the sweetness characteristics of DMB-APM are not so well-balanced as those of sucrose. Meanwhile, APM is weak in early taste though not so weak as DMB-APM, whereas it is strong in later taste though not so strong as DMB-APM. Accordingly, in case sucrose is defined as having a natural sweetness, both of DMB-APM and APM have such strange sweetness characteristics that their early taste is weak and their later taste is strong.

Claims (8)
- Utilisation comme édulcorant d'une composition contenant de l'ester 1-méthylique de N-[N-(3,3-diméthylbutyl)-L-α-aspartyl]-L-phénylalanine et de l'aspartame, dans laquelle la quantité de l'ester 1-méthylique de N-[N-(3,3-diméthylbutyl)-L-α-aspartyl]-L-phénylalanine est entre 0,1 % en poids et 35 % en poids sur la base de la quantité totale de l'ester 1-méthylique de N-[N-(3,3-diméthylbutyl)-L-α-aspartyl]-L-phénylalanine et de l'aspartame.
- Utilisation selon la revendication 1, dans laquelle la quantité de l'ester 1-méthylique de N-[N-(3,3-diméthylbutyl)-L-α-aspartyl]-L-phénylalanine est entre 0,3 % en poids et 3 % en poids sur la base de la quantité totale de l'ester 1-méthylique de N-[N-(3,3-diméthylbutyl)-L-α-aspartyl]-L-phénylalanine et de l'aspartame.
- Utilisation selon la revendication 1, dans laquelle la composition contient de l'ester 1-méthylique de N-[N-(3,3-diméthylbutyl)-L-α-aspartyl]-L-phénylalanine, de l'aspartame et de l'acésulfame K, dans laquelle la quantité de l'acésulfame K est entre 0,5 % en poids et 85 % en poids sur la base de la quantité totale des trois édulcorants.
- Utilisation selon l'une quelconque des revendications 1, 2 ou 3, dans laquelle l'utilisation est comme édulcorant pour une boisson.
- Utilisation selon la revendication 4, dans laquelle la boisson est une boisson gazeuse.
- Utilisation d'aspartame dans une composition d'édulcorant contenant de l'ester 1-méthylique de N-[N-(3,3-diméthylbutyl)-L-α-aspartyl]-L-phénylalanine (DMB-APM), pour améliorer les propriétés édulcorantes du DMB-APM.
- Utilisation selon la revendication 6, dans laquelle l'amélioration des propriétés édulcorantes du DMB-APM comprend une amplification du goût tôt, un affaiblissement du goût tard et un affaiblissement du goût astringent.
- Procédé pour préparer une composition comme définie dans l'une quelconque des revendications 1 à 3, comprenant assembler l'ester 1-méthylique de N-[N-(3,3-diméthylbutyl)-L-α-aspartyl]-L-phénylalanine et l'aspartame et facultativement l'acésulfame K dans le rapport ou les quantités nécessaires pour obtenir ladite composition.
