Claims (35)
- Concentré de lait de consommation pasteurisé à ultra-haute température (UHT), destiné à être mélangé avec de l'eau pour fournir une boisson lactée reconstituée qui a le goût du lait frais comprenant un concentré de lait de consommation pasteurisé à ultra-haute température (UHT) qui est produit en injectant directement de la vapeur dans un mélange de lait de consommation condensé, ledit concentré ayant une teneur en matières solides de lait écrémé d'au moins 29,9 % en poids et contenant des stabilisateurs d'hexamétaphosphate de sodium et de carraghénane en quantités efficaces pour fournir(a) une stabilité de conservation étendue d'au moins 60 jours sans granulation et/ou séparation des matières solides du lait,(b) des matières solides du lait qui ne se séparent pas au moment de la dilution avec de l'eau, et(c) au moment de la dilution avec de l'eau, qui fournit un produit buvable qui a les caractéristiques et le goût du lait frais ordinaire.
- Concentré de lait UHT selon la revendication 1, qui est dilué avec de l'eau en un rapport de l'eau sur le concentré de 3 : 1 à 4 : 1.
- Concentré de lait UHT selon soit la revendication 1 soit la revendication 2, dans lequel ladite stabilité est obtenue à une température de réfrigération inférieure à 45 °F (7,22 °C).
- Concentré de lait UHT selon l'une quelconque des revendications précédentes, dans lequel ladite stabilité est atteinte grâce à un conditionnement aseptique dudit concentré aux fins de stockage.

- Concentré de lait UHT selon l'une quelconque des revendications précédentes, ayant un pH dans la fourchette de 6 à 8.
- Concentré de lait UHT selon l'une quelconque des revendications précédentes, dans lequel ladite teneur en matières solides de lait écrémé est d'au moins 35 % en poids.
- Concentré de lait UHT selon l'une quelconque des revendications précédentes, dans lequel ladite teneur en matières solides de lait écrémé (MSLE) est en une quantité permettant de produire un produit buvable ayant une teneur en MSLE d'au moins 8,25 % en poids.
- Concentré de lait UHT selon l'une quelconque des revendications précédentes, dans lequel ladite teneur en matières solides de lait écrémé (MSLE) va de 35 % à 36,5 % en poids.
- Concentré de lait UHT selon l'une quelconque des revendications précédentes, dans lequel ledit concentré de lait UHT inclut un lait écrémé condensé ayant une teneur en matières solides de lait écrémé qui va de 35 % à 36,5 % en poids, ledit lait écrémé étant dans la fourchette de 87 % à 90 % en poids, une teneur en crème étant dans la fourchette de 8,5 % à 10,5 % en poids, et une teneur en stabilisateurs étant inférieure à 1 % en poids.
- Conditionnement pour un concentré de lait de consommation pasteurisé à ultra-haute température (UHT), destiné à être mélangé à de l'eau pour fournir une boisson lactée reconstituée qui a le goût du lait frais, comprenant un réservoir contenant un concentré de lait de consommation pasteurisé à ultra-haute température (UHT) selon l'une quelconque des revendications précédentes, ledit réservoir étant destiné à verser le concentré de lait UHT pour qu'il se mélange avec de l'eau pour former le produit buvable.
- Conditionnement selon la revendication 11, dans lequel ledit réservoir de concentré de lait présente une configuration structurelle efficace pour un placement dans un distributeur de liquide incluant une busette de vidange permettant de mélanger ledit concentré de lait ultrapasteurisé avec de l'eau pour distribuer ladite boisson lactée liquide reconstituée.
- Conditionnement tel que défini dans la revendication 11, dans lequel ledit réservoir a une configuration structurelle efficace pour une utilisation avec un distributeur qui inclut un mélangeur permettant de mélanger ledit concentré de lait ultrapasteurisé avec de l'eau pour former une boisson lactée liquide reconstituée qui a le goût du lait frais.
- Conditionnement selon l'une quelconque des revendications 11 à 13, dans lequel ledit réservoir pour ledit concentré de lait UHT a une capacité pouvant atteindre 300 gallons (1 135,621) aux fins de stockage et de transport.
- Conditionnement selon l'une quelconque des revendications 11 à 13, dans lequel la capacité dudit réservoir s'échelonne entre une pinte (0,473 1) et un quart (1,1371) aux fins d'une dilution avec de l'eau en des rapports de volume de 3 : 1 à 4 : 1 pour fournir le produit buvable.
- Conditionnement aseptique pour un concentré de lait de consommation pasteurisé à ultra-haute température (UHT), destiné à être mélangé avec de l'eau pour fournir une boisson lactée reconstituée qui a le goût du lait frais, comprenant un réservoir contenant, dans des conditions aseptiques, un concentré de lait de consommation pasteurisé à ultra-haute température (UHT), tel que revendiqué dans l'une quelconque des revendications 1 à 10, ledit réservoir permettant de verser le concentré de lait UHT afin de le mélanger avec de l'eau pour former le produit buvable.
- Conditionnement aseptique pour le concentré de lait UHT selon la revendication 16, ayant une busette configurée pour distribuer le concentré de lait UHT avec de l'eau en un rapport de l'eau sur le concentré de 3 : 1 à 4 : 1.
- Distributeur de boisson permettant de verser un concentré de lait de consommation pasteurisé à ultra-haute température (UHT) et de le mélanger avec de l'eau pour fournir une boisson lactée reconstituée qui a le goût du lait frais, comprenant un réservoir contenant un concentré de lait de consommation pasteurisé à ultra-haute température (UHT), tel que revendiqué dans l'une quelconque des revendications 1 à 10, ledit réservoir permettant de verser le concentré de lait UHT afin de le mélanger avec de l'eau, et un distributeur ayant une source d'eau et un mélangeur permettant de mélanger l'eau avec le concentré de lait UHT provenant dudit réservoir pour former et verser le produit buvable qui a les caractéristiques et le goût du lait frais ordinaire.
- Distributeur de boisson selon la revendication 18, dans lequel ledit mélangeur est configuré pour distribuer le concentré de lait UHT avec de l'eau en un rapport de l'eau sur le concentré de 3 : 1 à 4 : 1.
- Procédé de fabrication d'un concentré de lait de consommation pasteurisé à ultra-haute température (UHT) permettant de le mélanger avec de l'eau pour fournir une boisson lactée reconstituée qui a le goût du lait frais, comprenant la fourniture d'un mélange de lait de consommation condensé contenant des stabilisateurs d'hexamétaphosphate de sodium et de carraghénane et d'un concentré de lait de consommation pasteurisé ayant une quantité de matières solides de lait écrémé suffisante pour produire le concentré de lait UHT ayant une teneur en matières solides de lait écrémé d'au moins 29,9 % en poids lorsque ledit concentré de lait UHT est reconstitué avec de l'eau, lesdits stabilisateurs étant présents en quantités efficaces pour former une dispersion stable desdites matières solides du lait, en orientant un flux continu dudit mélange de lait de consommation condensé stabilisé vers un contact direct avec de la vapeur, en injectant de la vapeur directement dans ledit flux de mélange de lait de consommation condensé à une température efficace de pasteurisation ultra-haute pendant un laps de temps suffisant pour former ledit concentré de lait UHT ayant une teneur en matières solides de lait écrémé d'au moins 29,9 % en poids avec(a) une stabilité de conservation étendue d'au moins 60 jours sans granulation et/ou séparation des matières solides du lait,(b) les matières solides du lait qui ne se séparent pas au moment de la dilution avec l'eau, et(c) au moment de la dilution, qui fournit un produit buvable qui a le goût du lait frais.
- Procédé selon la revendication 20, dans lequel l'étape de fourniture d'un mélange de lait de consommation condensé comprend la fourniture d'un concentré de lait de consommation pasteurisé ayant une quantité de matières solides de lait écrémé suffisante pour produire ledit concentré de lait UHT ayant une teneur en matières solides de lait écrémé d'au moins 29,9 % en poids, lorsque ledit concentré de lait UHT est reconstitué avec de l'eau, le mélange d'une quantité suffisante de crème avec ledit concentré de lait de consommation pasteurisé pour fournir un mélange liquide condensé ayant une quantité suffisante de teneur en matières grasses efficace pour former une boisson lactée reconstituée ayant une teneur en matières grasses qui va de moins de 0,21 % jusqu'à 3,25 % en poids de ladite boisson lactée lorsque ledit concentré de lait UHT est reconstitué avec de l'eau, et le mélange d'une quantité efficace de stabilisateurs avec ledit mélange liquide condensé pour former une dispersion stable desdites matières solides du lait et des matières grasses dans ledit mélange liquide condensé.
- Procédé selon soit la revendication 20 soit la revendication 21, dans lequel ladite étape d'orientation de flux continu inclut le chauffage dudit mélange de lait de consommation condensé en contact direct avec ladite vapeur injectée à une température dans la fourchette de 288 °F (142,22 °C) à 294 °F (145,56 °C) pendant un laps de temps suffisant pour produire ledit concentré de lait UHT.
- Procédé selon soit la revendication 20 soit la revendication 21, dans lequel ladite étape d'orientation du flux continu inclut un premier chauffage dudit mélange de lait de consommation condensé jusqu'à une première température de 180 °F (82,22 °C) pendant un laps de temps qui va de 30 à 36 secondes, puis une orientation du mélange de lait de consommation condensé vers un contact direct avec ladite vapeur injectée à une température de 290 °F (143,33 °C) jusqu'à 294 °F (145,56 °C) pendant un laps de temps de 2 à 5 secondes pour former ledit concentré de lait UHT.
- Procédé selon l'une quelconque des revendications 20 à 23, dans lequel la viscosité du mélange de lait de consommation condensé est dans la fourchette de 300 à 400 centipoises (3 à 4 Pa) de 40 ° à 45 °F (4,44 à 7,22 °C), et la viscosité du concentré de lait UHT est dans la fourchette de 1 000 à 1 500 centipoises (10 à 15 Pa) de 40 ° à 45 °F (4,44 à 7,22 °C).
- Procédé selon l'une quelconque des revendications 21 à 25, dans lequel lesdits stabilisateurs sont efficaces pour maintenir un pH préalablement choisi dudit mélange de lait de consommation condensé dans la fourchette de 6 à 8.
- Procédé selon l'une quelconque des revendications 20 à 25, dans lequel lesdits stabilisateurs se trouvent en une quantité suffisante pour produire ledit mélange de lait de consommation condensé ayant une teneur en stabilisateurs inférieure à 1,0 % en poids.
- Procédé selon l'une quelconque des revendications 20 à 26, incluant en outre les étapes d'homogénéisation dudit concentré de lait UHT, puis de conditionnement dudit concentré de lait UHT homogénéisé aux fins d'un mélange ultérieur avec de l'eau pour former ladite boisson lactée reconstituée.
- Procédé selon la revendication 27, dans lequel ladite étape de conditionnement inclut l'étape de refroidissement dudit concentré de lait UHT et le placement dudit concentré de lait UHT dans un distributeur de boisson liquide grâce à un moyen de remplissage de conditionnement.
- Procédé selon la revendication 27, dans lequel ladite étape de conditionnement inclut le placement dudit concentré de lait UHT dans un conditionnement ayant une busette de vidange permettant de mélanger ledit concentré de lait UHT avec de l'eau pour former ladite boisson lactée reconstituée.
- Procédé selon la revendication 27, dans lequel ladite étape de conditionnement inclut l'étape de refroidissement dudit concentré de lait UHT jusqu'à une température de 80 °F (26,67 °C) jusqu'à 90 °F (32,22 °C), et de placement dudit concentré de lait dans un réservoir aseptique.
- Procédé selon la revendication 27, dans lequel ladite étape de conditionnement inclut le placement de jusqu'à 300 gallons (1 135,62 1) dudit concentré de lait UHT dans un réservoir aseptique.
- Procédé selon la revendication 27, dans lequel ladite étape de conditionnement inclut le placement dudit concentré de lait UHT dans un réservoir aux fins d'une reconstitution ultérieure avec de l'eau en un rapport en volume de mélange de l'eau sur le concentré de lait dans la fourchette de 3 : 1 à 4 : 1.
- Procédé selon l'une quelconque des revendications 20 à 32, dans lequel ledit mélange de lait de consommation condensé inclut une quantité suffisante de crème pour fournir une teneur en matières grasses suffisante et efficace pour former une boisson lactée reconstituée ayant une teneur en matières grasses qui va de moins de 0,21 % jusqu'à 3,25 % en poids de ladite boisson lactée, lorsque ledit concentré de lait UHT est reconstitué avec de l'eau.
- Procédé selon l'une quelconque des revendications 20 à 33, dans lequel ledit concentré de lait de consommation pasteurisé inclut une teneur en matières solides de lait écrémé en une quantité d'au moins 35 % en poids.
- Procédé selon l'une quelconque des revendications 20 à 33, dans lequel ladite boisson lactée reconstituée inclut une teneur en matières grasses de lait dans la fourchette qui va de moins de 0,21 % à 3,25 % en poids et une teneur en matières solides de lait écrémé d'au moins 8,25 % en poids.
