Abstract

Es werden ein Reinigungssystem und ein Verfahren zur Reinigung eines Ofens zur Wärmebehandlung von Lebensmitteln angegeben, wobei im Innenraum (14) eines nach außen dichtend verschließbaren Ofens zumindest eine Aufnahme (52) zum Einsatz einer Reinigungsmittelkartusche (56) und gegebenenfalls zusätzlich einer Klarspülkartusche (62) vorgesehen ist, wobei die Reinigungsmittelkartusche (56) bzw. die Klarspülkartusche (62) auf gezielte Weise während eines Reinigungszyklus aktiviert wird, um darin enthaltenes Reinigungsmittel bzw. Klarspülmittel dabei weitgehend rückstandsfrei freizusetzen, so daß nach der Beendigung eines Reinigungszyklus der Innenraum (14) des Ofens auf jeden Fall vollständig gereinigt ist. Durch die Verwendung einer Reinigungsmittelkartusche (56) bzw. einer Klarspülmittelkartusche (62) für jeden Reinigungszyklus ist eine genaue Dosierung gewährleistet und ein vereinfachter und kostengünstiger Aufbau des Ofens ermöglicht (Fig. 1).
