Definitions
- the present invention relates to a wolf with a screw conveyor and a Cutting set which consists of a first downstream of the screw conveyor Pre-cutter, another second downstream of the first pre-cutter Pre-cutter, one downstream of the second pre-cutter at a fixed distance Perforated disc and a driven knife, which is between the second pre-cutter and the perforated disc is arranged, the cutting set is firmly clamped in the screw housing by means of a locking nut.
- Such wolves for cutting meat are from the prior art known. With these wolves it is particularly important that the game between the Knife and the perforated disc on one side and between the knife and the second pre-cutter on the other side is as low as possible, so that an optimal Cutting result is achieved. In the past, these gaps have widened the wear of the knife constantly increases during the cutting process, so that the cutting result got worse over time. You also have to in the case of wolves according to the prior art, the cutting sets are exchanged, each whether fresh meat or frozen meat should be processed.
- the knife is resilient against a pressure element Perforated disc pressed. Furthermore, the second pre-cutter is replaced by another Pressure element resiliently pressed against the knife.
- the pressure elements are coil springs and the contact pressure is exerted on the respective component is preferably in each case differently.
- the contact pressure with which the knife against the Perforated disc is pressed greater than the contact pressure with which the second Pre-cutter is pressed against the knife.
- the present invention also relates to a wolf with a Screw conveyor and a cutting set consisting of a first of the screw conveyor downstream pre-cutter, one downstream of the first pre-cutter second pre-cutter, one to the first pre-cutter at a fixed distance downstream perforated disc and a driven knife, which is arranged between the second pre-cutter and perforated disc, the Cutting set is clamped in the worm housing by means of a locking nut, the distance between the first pre-cutter and perforated disc is greater than or equal to is the axial extension of the knife and the second pre-cutter, the knife the drive shaft and the second pre-cutter axially displaceable are stored, and that a pressure element resiliently against the second pre-cutter resiliently presses the knife and the knife against the perforated disc.
- the pressure element is preferably a helical spring.
- the wolf according to the invention ensures that even at progressive wear the distance between perforated disc and knife as well between the knife and the second pre-cutter remains constant. It is also possible both fresh and frozen meat without retooling with the same cutting set to process because of the constant, preset cutting pressure Cutting tools are guided exactly.
- the cutting pressure results from the Characteristic curve of the printing elements and the properties of the material to be processed Product. Furthermore, there is no increased wear of the cutting set excessive tightening of the cutting set by the locking nut.
- the wolf according to the invention is particularly suitable for chopping fresh and / or frozen meat.
- FIGS . 1-9 The invention is illustrated below with reference to FIGS . 1-9 . These representations are only examples and do not limit the general idea of the invention.

- Figure 9 shows a further embodiment of the spacer.
- Figure 1 shows an assembly drawing of the wolf according to the invention.
- the wolf has a conveyor screw 9, shown in part, with which the uncrushed meat is transported to the cutting set of the wolf.
- the cutting set consists of a first pre-cutter 3, a second pre-cutter 4, a knife 6 and a perforated disk 7.
- the first pre-cutter 3 is arranged directly after the screw conveyor 9.
- the perforated disk 7 is arranged at a fixed distance from the first pre-cutter 3.
- the fixed distance between the first pre-cutter 3 and the perforated disc 7 is realized in the present example by the spacer 5.
- the second pre-cutter 4 and the knife 6 are arranged between the first pre-cutter 3 and the perforated disk 7.
- the second pre-cutter 4 is slidably mounted in the housing.
- the spacer 5 also represents the guide for the second pre-cutter 4.
- the knife 6 is arranged downstream of the second pre-cutter 4.
- the distance between the first pre-cutter 3 and the perforated disk 7 is greater than or equal to the axial extent of the knife 6 and the second pre-cutter 4.
- the knife 6 is displaceable on the drive shaft 11, but is non-rotatably mounted on the latter.
- the cutting set is clamped by the locking nut 10 via the support cross 8 in the worm housing of the wolf.
- the distance between the perforated disc 7 and the first pre-cutter 3 is independent of the degree to which the lock nut 10 is tightened.
- the inner diameter of the second pre-cutter 4 is larger than the diameter the drive shaft 11, so that there is a first annular gap 12 between the pre-cutter 4 and the drive shaft 11 results.
- the inside diameter of the first pre-cutter 3 is partially larger than the inner diameter of the pre-cutter 4, so that a second annular gap 13 between the first pre-cutter 3 and the drive shaft 11 arises.
- the coil springs 1 and 2 are arranged in these annular gaps 12, 13, where coil spring 1 between knife 6 and screw conveyor 9 and Coil spring 2 between the first pre-cutter 3 and the second Pre-cutter 4 acts. This arrangement has the advantage that the Coil springs are not in the immediate product stream.
- the knife 6 and Pre-cutter 4 is always automatically adjusted so that the cutting result is about remains constant for a long period of time.
- FIG. 2 shows an embodiment of the spacer 5, which, however, is not installed in the wolf according to FIG. 1.
- the spacer 5 is arranged between the first pre-cutter 3 and the perforated disk 7.
- the spacer 5 consists of a ring 15 and six webs 16.
- the ring 15 is mounted in a recess in the first pre-cutter 3, while the perforated disk 7 is supported on the webs 16.
- the webs 16 also serve as a guide for the axial displacement of the second pre-cutter 4.
- Figure 3 shows the pre-cutter 4.
- the bore 17 receives the drive shaft 11.
- the meat is pressed through the six holes 18 and pre-cut.
- the pre-cutter 4 has six notches 19 which accommodate the webs 16 of the spacer 5.
- FIG. 4 shows the first pre-cutter 3.
- the meat is pressed through the bores 20 and pre-cut in the process.
- the holes 20 have the same diameter as the holes 18 and are aligned with them.
- the pre-cutter 3 has a recess 21 which receives the spacer 5.
- the circular ring 22 serves as an abutment for the coil spring 2.
- FIG. 5 shows a further embodiment of the wolf according to the invention, which differs from the embodiment of the wolf according to FIG. 1 in that it only has a helical spring 2 as a pressure element.
- This coil spring 2 presses the pre-cutter 4 against the knife 6.
- This knife 6 in turn is pressed against the perforated disk 7 by the pressure of the coil spring.
- This embodiment ensures that the distance between the knife and the perforated disc on the one hand and between the knife and the pre-cutter 4 on the other hand remains constant even when the cutting set is worn.
- This embodiment of the wolf according to the invention is particularly simple to manufacture, assemble and maintain.
- FIG. 6 shows a further embodiment of the first pre-cutter 3.
- this pre-cutter 3 has bores 24. These bores 24 receive bolts 25 (cf. FIG. 8) which are fastened to the second pre-cutter 4.
- the holes 24 serve the bolts 25 as an axial guide.
- FIG. 7 shows a further embodiment of the pre-cutter 4, which has bores 23. These holes have a thread in the middle into which the bolts 25 can be screwed. The person skilled in the art recognizes that the bolts 25 can be screwed into the thread of the bore 23 from two sides.
- FIG. 8 shows an assembly drawing of the wolf according to the invention, which essentially corresponds to the wolf according to FIG. 1 .
- bolts 25 are screwed into the bores 23 of the second pre-cutter 4. These bolts 25 are received by bores 24 in the first pre-cutter 3.
- the bores 24 are dimensioned so that the bolts 25 have only a slight play in the bores 24 and the bores 24 thus serve as an axial bearing for the bolts 25 and thus for the second pre-cutter 4.
- FIG. 9 shows a further embodiment of the spacer 5.
- This spacer corresponds to the spacers in FIGS. 1, 5, 8.
- the spacer 5 has an opening through which cartilage and the like can be separated from the meat mass.
- the spacer can be made of plastic or steel.
