Eine solche turbulenzarme oder laminare Verdrängungsströmung ist an und für sich aus der Reinraumtechnik bekannt und unter anderem in CH-A-576 109 ausführlicher beschrieben. Die aufwendige Filtertechnik mit Schleusen, wie sie in der Reinraumtechnik eingestetzt wird, um Schwebestoffe wie Staubpartikel, Mikroorganismen und dergleichen auszufiltern und um unzulässige Luftströmungen zu verhindern, werden jedoch bei Reifekellern für die Herstellung von Weichkäse nicht benötigt. Es hat sich herausgestellt, dass eine turbulenzarme kolbenartige Verdrängungsströmung, welche den gesamten Behandlungsraum von Wand zu Wand einheitlich mit sehr hohen Luftmengen durchsetzt, eine ausgezeichnete Reifung von Käselaiben aus Weichkäse ergibt. Das derart erzeugte gleichmässige Raumklima bewirkt eine gleichmässige Reifung, d.h. eine gleichmässige Gewichts- und Qualitätsentwicklung. Diese mit den Pfeilen 8 bezeichnete klimatisierte Primärluft wird einerseits über Zuführleitungen 9 in den Umgebungsklimaraum 1 hineingeblasen und andererseits über Transportleitungen 10 den zweiten Klimaanlagen 3, 3', 3'' zugeführt. Die in den Klimaraum 1 hineingeblasene klimatisierte Primärluft 8 strömt durch den entstehenden Überdruck über einen Auslass 11 nach aussen. Die Klimaanlagen 3, 3', 3'' sind ihrerseits je über eine Zuführleitung 12 und eine Abführleitung 13 mit dem zugehörigen Behandlungsraum 4, 4', 4'' verbunden und bilden somit individuelle Regelkreise für jeden einzelnen Behandlungsraum 4, 4', 4'', um dort je nach Prozessanforderung eine einheitliche Temperatur und Luftfeuchte aufrecht zu erhalten. Jeder Behandlungsraum 4, 4', 4'' weist einen mit der Zuführleitung 12 verbundenen Einlass 14 und einen mit der Abführleitung 13 verbundenen Auslass 15 auf. An der einlassseitigen Stirnwand 18 eines jeweiligen Behandlungsraumes 4, 4', 4'' ist eine zu dieser parallele und ebene luftdurchlässige Verteilerwand 19 vorgesehen, die sich über den gesamten vertikalen Querschnitt des Behandlungsraumes 4, 4', 4'' erstreckt. Zwischen der Stirnwand 18 und der luftdurchlässige Verteilerwand 19 bildet sich somit eine Luftverteilkammer 20, in welche die mit dem Pfeil 21 dargestellte klimatisierte Luft turbulent eingeblasen wird und über die Verteilerwand 19 als mit den Pfeilen 22 bezeichnete, turbulenzarme Verdrängungsströmung in den Behandlungsraum 4, 4', 4'' mit einer relativ geringen Strömungsgeschwindigkeit horizontal hineinströmt. Obwohl im dargestellten Ausführungsbeispiel die Verteilerwand 19 und die Auffangwand 26 als parallele Flächen dargestellt sind, kann jede für sich auch aus verschiedenen, untereinander parallelen Teilwänden bestehen, die zusammen den gesamten vertikalen Querschnitt des Behandlungsraumes 4, 4', 4'' entsprechen. Zunächst wird Aussenluft 5 von der ersten Klimaanlage 2 angesaugt und klimatisiert, d.h. als Primärluft 8 auf eine bestimmte Temperatur und relative Feuchte gebracht. Dadurch wirkt der wärmeisolierte Klimaraum 1 als Puffer zwischen der Aussenumgebung und den innerhalb angeordneten, wärmeisolierten Behandlungsräumen 4, 4', 4''. Somit werden jahreszeitlich bedingte Schwankungen der Temperatur und der relativen Feuchte der Primärluft 8 ausgeglichen. In einer zweiten Stufe wird die so klimatisierte Primärluft 8 über die Transportleitungen 10 den zweiten Klimaanlagen 3, 3', 3'' zugeleitet und dort mit der aus den Behandlungsräumen 4, 4', 4'' abgezogenen Sekundärluft 28 in einem individuellen Regelkreis gemischt und klimatisiert, d.h. auf die richtige Temperatur und relative Feuchte gebracht und über das Umluftsystem als klimatisierte Luft 21 wieder dem jeweiligen Behandlungsraum 4, 4', 4'' zugeführt. Das Befeuchten der Luft geschieht vorzugsweise mit sogenanntem Kaltdampf, der durch Versprühen von Wasser mit einer Düse unter einem Druck von 70 bis 90 bar als Sprühnebel mit der Luft vermischt wird. Dadurch erfolgt eine adiabatische Abkühlung der Luft, weshalb weniger Energie zur Klimatisierung benötigt wird. Für die Behandlung von Käselaiben aus Weichkäse ist erfahrungsgemäss eine Temperatur von 12 bis 13 °C mit einer maximalen Abweichung von +/- 0,1 °C und eine relative Feuchte zwischen 85 und 99 %rF der Luft 21, vorzugsweise von 95 bis 98 %rF mit einer maximalen Abweichung von +/- 2 %rF, einzuhalten. Ferner soll eine Luftgeschwindigkeit im Behandlungsraum 4, 4', 4'' von 5 bis 25 cm/Sek, vorzugsweise etwa 10 bis 15 cm/Sek, herrschen, welche durch die Leistung des Gebläses und durch die Strömungsquerschnitte der Zuführleitung 12, der Abführleitung 13, der Verteilerwand 19 und der Auffangwand 26 bestimmt ist. Beispielsweise werden etwa 360 m3/h Luft pro m2 Ausblasfläche in einen einzelnen Behandlungsraum 4, 4', 4'' hineingeblasen, in welchen je einige Tonnen Weichkäse gelagert sind. Die durch die Verteilerwand 19 und die Auffangwand 26 erzeugte laminare oder turbulenzarme Verdrängungsströmung 22 bewirkt nun, dass ein ausgezeichneter Austausch der Produktfeuchte mit der Luftfeuchte und höchstens eine geringfügige Erwärmung der Sekundärluft 28 um ein paar Zehntel °C stattfindet. Durch die relativ langsame und gleichmässige Verdrängungsströmung ist ausserdem gewährleistet, dass es kein Kondenswasser im Behandlungsraum 4, 4', 4'' gibt, so dass der Reifeprozess der Käselaibe im Behandlungsraum 4, 4', 4'' - im Gegensatz zu der herkömmlichen Klimatisierung mit einer teilweise um ein Vielfaches grösseren Strömungsgeschwindigkeit der Luft, bei welcher grössere Temperaturunterschiede auftreten und es somit zu lokaler Kondensbildung führen kann - kaum merklich beeinflusst wird. Bei der oben beschriebenen Klimatisierung der einzelnen Behandlungsräume 4, 4', 4'' hat es sich ergeben, dass weniger Energie durch die Klimaanlagen für den Reifeprozess erforderlich ist. Ferner läuft der Reifeprozess schneller ab und gibt es weniger Schwund der Käselaibe. Auch kann festgestellt werden, dass bis zu 25 % weniger Impfstoff in der Form von Schimmelkulturen gebraucht wird. Durch die Gleichmässigkeit des Klimas in den Behandlungsräumen 4, 4', 4'' wird eine hohe und gleichmässige Produktequalität erreicht. Zu diesem Zweck können zusätzlich die Wände und die Decken der Behandlungsräume 4, 4', 4'', die Verteilerwand 19 und die Auffangwand 26 gereinigt werden, bevor neue Käselaibe aufgestapelt und zur Reife gebracht werden.
