- climacteric fruit is used to indicate a fruit the ripening of which comprises a step characterized by the appearance of a breathing peak (climacteric peak) and by an increase in the production of ethylene (C 2 H 4 ).
- climacteric fruit are bananas, apples, pears, peaches, plums, nectarines, tomatoes.
- bananas arrive on distribution markets a long time after they have been picked. Bananas are picked from the tree while still unripe and are transported by transport means such as ships (banana-boats), cars or containers, toward the countries of the distribution markets. In the transport means, the unripe bananas are kept in a refrigerator and when they are unloaded they are transferred to other refrigeration cells from which they are removed in relation to market demand, when they have to be made to ripen. Their ripening is caused by creating, in ripening cells, suitable conditions of temperature, degree of relative humidity, and, especially, providing them with a suitable quantity of ethylene to trigger their ripening process.

About a day and a half, two days, after the opening of the bag, the fruit reaches complete ripening and exhibits organoleptic qualities comparable to those of fruit ripened in the ripening cells.
- the ripening of the fruit according to the present invention can be activated at any time, by opening the bag that contains them, about two, three days after packaging.
- the method of packaging and the package according to the invention exhibits several advantages. They simplify the distribution cycle of the fruit, they reduce its costs and they make it more flexible. In fact, they allow the usual ripening cells as well as the refrigeration cells to be eliminated, if the fruit is packaged immediately after being unloaded from the transport means. Moreover, they allow the consumer to keep the fruit without particular precautions up to the end of the storage period (about two, three months) and, especially, they allow the fruit to be consumed at the time that is felt most appropriate.

- the composition of the modified atmosphere remains substantially constant. During this period of time, starting with about the second, third day after packaging, the banana can be made to ripen at any time by opening the bag 3 and leaving it under environmental conditions for a day and a half, two days.

Claims (10)
- Procédé d'emballage de fruit exotique (2) comprenant les étapes suivantes :a) insérer au moins un fruit non mûr (2) dans un sac (3) d'un matériau approprié ;b) remplir ledit sac (3) avec une atmosphère modifiée ; etc) sceller hermétiquement ledit sac (3) ;d) ledit matériau est un film d'une matière plastique choisie parmi le polyéthylène basse densité (LDPE), le polyéthylène (PE), le polyéthylène haute densité (HDPE), le polypropylène (PP), le polypropylène orienté (OPP), le poly(chlorure de vinyle) (PVC), le polystyrène orienté (OPS), le poly(téréphtalate d'éthylène) (PET), le poly(acétate de vinyle) (EVA), et le poly(alcool vinylique) (EVOH) ayant une épaisseur dans la plage de 20 à 50 microns, ete) ladite atmosphère modifiée comprend de l'oxygène en une quantité dans la plage de 2% à 20% en volume, du dioxyde de carbone en une quantité dans la plage de 6% à 13% en volume, de l'éthylène en une quantité dans la plage de 0,1% à 1,5% en volume, le reste étant de l'azote (N2).
- Procédé selon la revendication 1, caractérisé en ce que ledit oxygène est dans la plage de 2% à 6% en volume.
- Procédé selon la revendication 4, caractérisé en ce que l'oxygène est égal à 2% en volume, le dioxyde de carbone est égal à 8% en volume et l'éthylène est égal à 0,1%.
- Procédé selon l'une quelconque des revendications précédentes 1 à 3, caractérisé en ce que ledit sac est formé d'un film de LDPE ayant une perméabilité à l'oxygène égale à 6800 cm3/m2 en 24 h à 1 atm, au dioxyde de carbone égale à 25 000 cm3/m2 en 24 h à 1 atm, à l'éthylène égale à 22 000 cm3/m2 en 24 h à 1 atm et à la vapeur d'eau égale à 10 g/m2 en 24 h.
- Procédé selon la revendication 4, caractérisé en ce que ledit film est un film de LDPE de 35 microns d'épaisseur.
- Emballage (1) pour fruit exotique (2) comprenant au moins un sac (3) d'un matériau approprié, contenant au moins un fruit non mûr (2), rempli d'une atmosphère modifiée et scellé hermétiquement, caractérisé en ce que ledit matériau est un film d'une matière plastique choisie parmi le polyéthylène basse densité (LDPE), le polyéthylène (PE), le polyéthylène haute densité (HDPE), le polypropylène (PP), le polypropylène orienté (OPP), le poly(chlorure de vinyle) (PVC), le polystyrène orienté (OPS), le poly(téréphtalate d'éthylène) (PET), le poly(acétate de vinyle) (EVA), et le poly(alcool vinylique) (EVOH) ayant une épaisseur dans la plage de 20 à 50 microns, et ladite atmosphère comprend de l'oxygène en une quantité dans la plage de 2% à 20% en volume, du dioxyde de carbone en une quantité dans la plage de 6% à 13% en volume, de l'éthylène en une quantité dans la plage de 0,1% à 1,5% en volume, le reste étant de l'azote.
- Emballage (1) selon la revendication 6, caractérisé en ce que ledit oxygène est dans la plage de 2% à 6% en volume.
- Emballage (1) selon la revendication 6, caractérisé en ce que l'oxygène est égal à 2% en volume, le dioxyde de carbone est égal à 8% en volume, l'éthylène est égal à 0,1%.
- Emballage (1) selon l'une quelconque des revendications précédentes 6 à 8, caractérisé en ce que ledit sac (3) est formé d'un film de LDPE ayant une perméabilité à l'oxygène égale à 6800 cm3/m2 en 24 h à 1 atm, au dioxyde de carbone égale à 25 000 cm3/m2 en 24 h à 1 atm, à l'éthylène égale à 22 000 cm3/m2 en 24 h à 1 atm et à la vapeur d'eau égale à 10 g/m2 en 24 h.
- Emballage (1) selon la revendication 9, caractérisé en ce que ledit film est un film de LDPE de 35 microns d'épaisseur.
