Claims (9)

  1. Verfahren zur automatischen Herstellung von kalibrierten Fleischstücken, vor allem aus durchwachsenem Speckfleisch ausgehend von mindestens einer Scheibe Fleisch (v), in einer Maschine, die ein System (5-6) besitzt, das in der Lage ist, mehrere Scheibenschnitte in zwei orthogonalen Ebenen vorzunehmen, um die Fleischwürfel zu bilden, gekennzeichnet durch folgende Einzelschritte:
    - mindestens eine Scheibe Fleisch (v) wird in eine Einfassung (1) gelegt, die in Verbindung mit einer Preßvorrichtung (2, 2a) und Schiebevorrichtungen (4, 4a) (8, 8a) einen geschlossenen und variablen Raum umgrenzt;
    - die Scheibe wird unter der Einwirkung der Preßvorrichtung (2a) flachgehalten;
    - der Druck der Preßvorrichtung (2, 2a) wird zurückgenommen, um die Scheibe Fleisch (v) freizugeben; es bleibt jedoch ein Andruck bestehen, der eine Verschieben ermöglicht;
    - mit dem Schieber (4, 4a) wird die Scheibe (v) zu dem System (5-6) geführt, das in der Lage ist, mehrere Scheibenschnitte in zwei orthogonalen Ebenen vorzunehmen, um die kalibrierten Fleischwürfel bzw. - stücke zu bilden.
  2. Vorrichtungen zur Umsetzung des Verfahrens nach Anspruch 1 in Form einer Maschine mit einem System (5-6), das in der Lage ist, mehrere Scheibenschnitte in zwei orthogonalen Ebenen vorzunehmen, um die Fleischwürfel zu bilden, gekennzeichnet durch folgende Bauteile:
    - eine Einfassung (1) für die Aufnahme der Scheibe Fleisch (v), die einen geschlossenen und variablen Raum umgrenzt, und zwar einerseits in Verbindung mit Schiebern (4, 4a) und (8, 8a), wobei das Bauteil (8, 8a) geeignet ist, die Scheibe Fleisch (v) in die Einfassung (1) zu führen, während das Bauteil (4, 4a) geeignet ist, für die lineare Verschiebung der Fleischscheibe (v) in Richtung des Schneidsystems (5-6) zu sorgen, und andererseits in Verbindung mit einer Preßvorrichtung (2, 2a), die von Vorrichtungen (3) abhängig ist, welche die auf die Scheibe (v) ausgeübte Druckkraft variabel gestalten können, dergestalt, daß zuerst eine Andruckkraft ausgeübt wird, um die Scheibe Fleisch (v) zusammenzudrücken, und daß die besagte Scheibe dann flachgehalten wird, wobei im Zusammenspiel mit dem Schieber (4, 4a) eine lineare Verschiebung möglich ist.
  3. Vorrichtungen nach Anspruch 2, dadurch gekennzeichnet, daß die Preßvorrichtung (2) durch einen Andruckblock (2a) gebildet wird, der nahezu den gesamten Rauminhalt der Einfassung (1) ausfüllt, wobei der besagte Block (2a) an ein Zylindersystem (3) gekoppelt ist, das so ausgelegt ist, daß einerseits das Volumen der Einfassung (1) variiert und andererseits der Block (2a) einer verstellbaren Druckkraft ausgesetzt werden kann.
  4. Vorrichtungen nach einem der Ansprüche 2 und 3, dadurch gekennzeichnet, daß der Schieber (4, 4a) durch einen Rakelblock (4a) gebildet wird, der etwa die Breite der Einfassung (1) einnimmt, wobei der besagte Block (4a) an ein Zylindersystem (4b) gekoppelt ist.
  5. Vorrichtungen nach einem der Ansprüche 2, 3 und 4, dadurch gekennzeichnet, daß eine der Seiten der Einfassung (1) senkrecht zu denjenigen, die mit dem Schieber (4, 4a) und dem Schneidsystem (5-6) zusammenwirken, offen ist, um im Zusammenspiel mit dem Schieber (8, 8a) die Fleischscheibe (v) aufzunehmen, wobei der Schieber die besagte Seite verschließt, nachdem die Scheibe in die Einfassung (1) eingeschoben wurde, um das geschlossene Volumen der besagten Einfassung (1) zu bilden.
  6. Vorrichtungen nach einem der Ansprüche 2 - 5, dadurch gekennzeichnet, daß das Schneidsystem (5-6) im Zusammenspiel eine erste Einheit (5) mit mehreren senkrechten Messern (5a) aufweist, die so ausgelegt ist, daß die Scheibe Fleisch (v) in dem Maße, in dem sie sich vorwärtsbewegt, nach mehreren parallelen Linien zugeschnitten wird, und eine zweite Einheit (6), die einen zweiten Schnitt in orthogonaler Ebene bewerkstelligt, um die kalibrierten Fleischstücke zu erzielen.
  7. Vorrichtungen nach einem der Ansprüche 4 und 6, dadurch gekennzeichnet, daß der Rakelblock (4a) für das Verschieben der Fleischscheibe (v) in Richtung Schneidsystem (5-6) auf der Vorderseite mehrere senkrechte Schlitz aufweist, die zahlenmäßig den Messern (5a) der ersten Einheit (5) entsprechen.
  8. Vorrichtungen nach Anspruch 5, dadurch gekennzeichnet, daß der Schieber (8, 8a) gleitend auf einem Teil der Maschine angebracht ist, das seitlich zur Einfassung (1) angeordnet ist und mit einem System für die Zufuhr von Fleischscheiben (v) in Verbindung steht.
  9. Vorrichtungen nach einem der Ansprüche 2 und 6, dadurch gekennzeichnet, daß die Maschine auf Höhe des Schneidsystems (5-6) Vorkehrungen zur Aufnahme der kalibrierten Fleischstücke aufweist.
