Definitions

  • the present relates to a device for treating honey, more particularly crystallized honey stored in a cylindrical barrel, prior to its final packaging.
  • honey extracted from the hives in the hive frames is always in the liquid state; this allows it to be extracted by mechanical devices such as those described, for example, in patents FR-A-85 09 906, FR-A-86 18 429 and FR-A-87 16 566. These devices use the centrifugal force to allow honey to be removed from the alveoli of the frames in which the bees previously stored it. It is then decanted and purified by various means until it is stored or potted.
  • honeys notably acacia or heather honeys and certain honeydew (fir) all honeys crystallize in a more or less long time depending on the glucose / water ratio.
  • heated honeys tend to brown and also to recrystallize in an anarchic or coarse manner, unflattering to the eye, especially when this recrystallization occurs when the honey is stored in so-called "linear" packages.
  • This is, in fact, a natural phenomenon that does not affect the quality of honey, but it is often not perceived as such by consumers, especially since they do not have always specialist salespeople able to explain it to them.
  • the object of the present invention is to develop a device for the treatment of honey, more particularly crystallized honey stored in a barrel, in particular cylindrical, which can make it possible to offer the consumer a honey whose manufacture does not involve any heating operation and which can be kept cool, which considerably improves conservation and makes consumption more pleasant.
  • Another object of the invention is to give honey a pasty structure, therefore spreadable, which can be made durable by a particularly simple subsequent treatment.
  • the invention relates to a device characterized in that it is constituted by a vertical shaft driven in rotation by a geared motor at one of its ends or upper end and carrying at its opposite end or lower end, an assembly scraping and kneading likely to come into engagement with the honey stored in the barrel to transform its crystallized structure into a pasty structure, this scraping and kneading assembly being constituted by an endless screw centered integrally on the vertical shaft and cooperating with scraper paddles mounted perpendicularly on the latter and provided with teeth on their lower part.
  • the aforementioned device therefore makes it possible to make pasty, or "to skin” without any rise in temperature and only by mechanical means, a honey crystallized inside the barrels, as is the case for 90% of the batches of honey sold and therefore transported.
  • the honey in fact retains its crystallization which therefore reconstitutes identically after being put in pots.
  • a conventional homogenizing device capable of breaking the grain.
  • the essential element of the device according to the invention corresponds to the scraping and kneading assembly which is driven at a speed of the order of 50 revolutions per minute, and in fact has a double action of wear or scraping of the crystallized surface of the honey, and kneading of the honey thus treated.
  • the number of scraper paddles is of course not limitative of the invention; however, it has been observed that particularly satisfactory results are obtained by mounting, equidistant around the vertical shaft, three scraper paddles inclined downward in the direction of rotation of the latter in order to increase their efficiency during scraping.
  • the scraper pallets are equipped at their outer end opposite the vertical shaft, with flexible linings, in particular in Teflon (registered trademark), capable of being applied against the walls of the barrel. It is necessary that these linings are sufficiently elastic to provide guidance and to take into account the deformations of certain drums which are particularly damaged during transport.
  • the main role of the worm is, in addition to ensuring more vigorous mixing of the treated honey, to allow the device to sink into the honey as the treatment progresses; to facilitate this movement, the lower end of the worm is preferably provided with fine teeth.
  • this depression can be achieved by any means including manual without departing from the scope of the invention; it is however particularly advantageous to design a device whose implementation can be fully automated.
  • the geared motor carrying the vertical shaft rests on a support mounted to slide on a vertical mast in order to move downward under the effect of its own weight to allow the set of scraping and mixing to automatically sink into the barrel as the honey is processed.
  • the support preferably cooperates with a winch mounted integrally on the mast.
  • the device according to the invention comprises specific extracting members.
  • these extractor members are constituted by an extractor tube immersed in the treated honey and cooperating with an Archimedes screw movable in rotation at its internal part and with an evacuation tube opening on its periphery to automatically transfer the treated honey of pasty structure into pots or a receiving tank.
  • the Archimedes screw is driven at low speed by a motor with two directions of rotation.
  • the invention also provides for being able to operate the extractor members automatically as the honey is treated by the scraper and kneading assembly.
  • the assembly constituted by the motor, the extractor tube, the Archimedes screw and the evacuation tube is mounted integrally on the support. so as to automatically sink into the barrel as the honey is butchered.
  • the device according to the invention is schematically constituted by a bracket 1, mounted on wheels 21 shown schematically, comprising a mast 2 along which can slide a horizontal support 3.
  • a winch 4 fixed to the mast 2 allows to control the movement of the support 3.
  • the support 3 carries a high-power gearmotor 5 which controls the rotation according to arrow A of a vertical shaft 8 of stainless steel, the lower end of which carries a scraper and kneading assembly which will be described in more detail detail of the rest of this talk.
  • the above-mentioned device is intended for the treatment of honey stored in a barrel 8 with the aim of mechanically transforming its crystallized structure into a pasty structure allowing it to be potted.
  • the barrel 8 of cylindrical shape is placed on the bracket 1, in line with the scraping and kneading assembly 7 and, to ensure its maintenance in position, is fixed to the mast 2 by means of a strap 20.
  • the scraping and kneading assembly 7 is constituted, on the one hand, by an endless screw 9 centered integrally on the vertical shaft 6 and the lower part 10 of which is provided with fine toothing and , on the other hand, by three scraper paddles 11 mounted equidistant around the shaft 6 and defining a rotary assembly whose diameter corresponds to that of the barrel 8.
  • the pallets 11 are mounted inclined downward in the direction A of rotation of the vertical shaft 6 and are provided at their lower part with a toothing 12 allowing to wear the surface of the crystallized honey to be treated shown dotted on the figure in order to "cut it up” and give it a pasty structure.
  • Flexible linings 13 mounted at the outer end of the scraper paddles 11 are applied against the inner walls of the barrel 8 and allow the rotation of the scraping and kneading assembly 7 to be guided.
  • the assembly 7 is represented above the surface of the honey to be treated; of course, it sinks and enters the honey as the treatment progresses; the role of the worm 9 is to allow this depression while promoting the mixing of the honey treated by the teeth 12 of the scraper paddles 11 in order to give it a more pasty structure.
  • this depression along arrow B of the scraping and kneading assembly 7 in the barrel 8 as the honey is processed is automatic; it also causes the support 3 to move downwards by sliding along the mast 2.
  • the support 3 also carries an extractor tube 14 whose lower end 15 plunges into the barrel 8 slightly above the pallets 11, and which comprises, at its internal part, an Archimedes screw 16 driven in slow rotation by a two-way motor 17; an evacuation tube 18 opens at the upper periphery of the extractor tube 14.
  • the assembly constituted by the motor 17, the extractor tube 14, the Archimedes screw 16 and the evacuation tube 18, mounted on the support 3, is automatically inserted into the barrel 8 as and when treatment of honey by the scraping and kneading assembly 7; the entire processing is therefore completely automatic.
