Description
La présente invention se rapporte à la conception d’un module industriel capable de produire d une part un filon continu de pâte de manioc et d’autre part de le diviser en unités régulières en vue de la production en quantité industrielle des bâtons de manioc standardisés avec des rendements optimisés.The present invention relates to the design of an industrial module capable of producing, on the one hand, a continuous vein of cassava paste and, on the other hand, of dividing it into regular units with a view to the production in industrial quantities of standardized cassava sticks. with optimized yields.
Les tubercules de manioc après leur réception, sont pesés et épluchés. Les épluchures représentent environ 22% de la masse totale de la matière première. Le manioc épluché est coupé en morceau plus ou moins gros et ensuite trempé dans de l’eau. L’eau de trempage doit être tiède autour de 45°C. La fermentation se fait en anaérobie et par conséquent, il faut couvrir le contenant après l’immersion totale des morceaux de manioc. Au bout de 72 heures, le manioc se fermente. On le sort de l’eau et l’on procède au défibrage. Les fibres représentent environ 7% de la masse totale de la matière première et 8,5% de la masse de manioc épluché. Le manioc fermenté et défibré est ensuite essoré et prêt pour être broyé. Le broyage permet d’obtenir une pâte homogène et fine. Avec la pâte résultant du broyage, nous pouvons maintenant procéder au mélange des différents ingrédients dont le sel, l’eau pour avoir une pâte ayant les caractéristiques organoleptiques et rhéologiques désirés. Des petites boules de pâte manioc de masse hétérogène sont prélevées par l’agent producteur et étalés à la main sur les feuilles de manioc pour être attaché, puis cuit au feu. Cette technique de production ancienne et artisanale n’a jamais évolué jusqu’à nos jours. Les rendements de production sont de l’ordre de 150 bâtons de manioc par jour de travail par personne avec des conséquences sur le plan sanitaire notamment la colonne vertébrale qui se voûte et accuse des douleurs et courbatures lombaires. A long terme, le producteur abandonne la production des bâtons de manioc à cause de sa pénibilité et sa rentabilité financière dérisoire. En revanche, avec le module industriel que nous avons inventé, la pâte de manioc bien préparée tel que nous venons de le décrire, est introduite dans la trémie de notre machine et à la sortie de celleci nous avons des unités régulière de filon de pâte de manioc que l’agent de production récupère et pose sur les feuilles de manioc pour être par la suite attaché. La production des bâtons de manioc se fait donc en série et est produit en grande quantité avec des rendements optimisés avoisinant au minimum 500 bâtons de manioc par heure. La pâte de manioc est pressée par la vis d’Archimède contre le couvercle monté à l’extrémité du fourreau et celleci sort sous forme de filon par le tube circulaire du couvercle de diamètre plus petit. Ce filon atterrit directement sur la bande transporteuse installé juste en dessous de la moitié inférieure du fourreau et le filon est convoyé ou transporté vers la diviseuse. La diviseuse est une poulie rotative sur laquelle est fixée une lame de coupe. La circonférence de cette poulie rotative correspond exactement à la longueur du bâton de manioc que nous voulons produire. Le filon de la pâte de manioc qui est mis en mouvement avec la bande transporteuse vient effleurer la partie inférieure de la poulie qui se met instantanément en mouvement de rotation. La poulie est montée sur un support qui est fixé au sol. Au terme d’une rotation complète de la poulie, le filon de la pâte de manioc est coupé avec la lame fixé sur la poulie pour donner une unité de filon de pâte de manioc. Et comme le système est continu, nous auront la production en série des unités régulières de filon de pâte de manioc. Ces unités régulières de pâte de manioc sont récupérées à l’extrémité de la bande transporteuse par un opérateur qui les dépose manuellement sur les feuilles de bâton de manioc préalablement disposé sur un support installé à l’extrémité de la bande transporteuse. Ensuite, les bâtons de manioc sont attachés puis cuit au feu.
