Claims (12)

1. Mælkesyrebakterie, som indleveret under Lactobacillus brevis DSM 22721, eller et lysat deraf, til brug som et tilsætningsmiddel i fødevarer, hvor mælkesyrebakterien er heteolaktisk, og hvor mælkesyrebakteriet eller dens lysat inhiberer væksten af mindst en svampeorganisme.
2. Mælkesyrebakterie ifølge krav 1, hvor mælkesyrebakterie er kendetegnet ved, at det kan testes ifølge de følgende trin: a) etablering af et substrat, b) etablering af et præparat, som omfatter de mælkesyrebakterier, der skal undersøges, c) præparatet, der omfatter mælkesyrebakterierne, tilsættes til lysatet, eventuelt efterfulgt af et fermenteringstrin, d) produktet ifølge trin c) samples i prøveholdere, hvorved der dannes testprøver, e) et forudbestemt antal svamesporer tilsættes til mindst en testprøve, f) inkubation af den i trin e) opnåede testprøve udføres over en forudbestemt periode ved en forudbstemt temperatur, g) detektering, eventuelt efterfulgt af evaluering af svampevækst.
3. Mælkesyrebakterie ifølge krav 1 eller 2, hvor mælkesyrebakterien er en levende mælkesyrebakterie.
4. Mælkesyrebakterie eller et lysat deraf ifølge mindst et af de foregående krav, hvor svampeorganismen er valgt fra gruppen, der omfatter slægten Penicillium, fortrinsvis Penicillium commune eller Penicillium roqueforti, slægten Aspergillus og slægten Alternaria, fortrinsvis Al-ternaria alternata, Penicillium expansum, Penicillium citrinum, Penicillium digitatum, Penicillium italicum, Scopulariopsis breviacaulis, Aspergillus flavus, Aspergillus parasiticus, Botrytis cinerea, Rhizopus sp., Mucor sp., Eurotium herbariorum, Geotrichum candidum, Cladosporium herbarum, Fusarium sambucinum, Phytophora infestans og Sclerotinia scerotiorum.
5. Anvendelse af mælkesyrebakterier eller et lysat deraf ifølge mindst et af kravene 1 til 4 til fremstilling af en fødevaresammensætning, et dyrefoder eller en farmaceutisk eller kosmetisk sammensætning, hvor mælkesyrebakterierne, fortrinsvis levende mælkesyrebakterier, eller et lysat deraf, tilsættes til fødevaren, dyrefoderet eller den farmaceutiske eller kosmetiske sammensætning.
6. Fødevaresammensætning, dyrefoder eller farmaceutisk eller kosmetisk sammensætning, der omfatter mælkesyrebakterierne eller lysater deraf ifølge mindst et af kravene 1 til 4 i fødevaren, dyrefoderet eller den farmaceutiske eller kosmetiske sammensætning.
7. Fødevaresammensætning, dyrefoder eller farmaceutisk eller kosmetisk sammensætning ifølge det foregående krav, hvor fødevaresammensætningen, dyrefoderet, den farmaceutiske eller kosmetiske sammensætning indeholder 102 til 1015, fortrinsvis 106 eller 108 til 1012 *, især 108 til 1O10 mælkesyrebakterieceller eller lysater deraf pr. 100 g sammensætning.
8. Fødevaresammensætning, dyrefoder eller farmaceutisk eller kosmetisk sammensætning ifølge krav 6 eller 7, hvor mælkesyrebakterierne er til stede i en koncentration på 0.0001% til 0.01% fortrinsvis 0.001%.
9. Fødevaresammensætning ifølge mindst et af kravene 6 til 8, hvor fødevaresammensætningen er et kødprodukt eller et mejeriprodukt, fortrinsvis yoghurt, mælk, ost, fløde og/eller ostemasse.
10. Fremgangsmåde til konservering affødevarer, dyrefoder eller en farmaceutisk eller kosmetisk sammensætning, hvor mælkesyrebakterierne eller lysaterne deraf ifølge mindst et af kravene 1 til 4 tilsættes til fødervarerne, dyrefoderet eller den farmaceutiske eller kosmetiske sammensætning.
11. Fremgangsmåde ifølge det foregående krav, hvor der pr. 100 g fødevare, dyrefoder eller farmaceutisk eller kosmetisk sammensætning tilsættes 102 til 1015, fortrinsvis 106 eller 108 til 1012, især 108 til 101° mælkesyrebakterieceller eller lysater deraf.
12. Fremgangsmåde ifølge krav 10 eller 11, hvor mælkesyrebakterierne tilsættes i en koncentration på 0.0001% til 0.01% fortrinsvis 0.001%.
