Claims (8)

1. Gærmutant, hvor gærmutanten er Candida utilis 36D61 (accessionsnummer: FERM BP-11103).
2. Fremgangsmåde til fremstilling af et gærekstrakt fra gærmutanten ifølge krav 1, hvor gærekstraktet indeholder L-glutaminsyre i en mængde på 20 vægtprocent eller mere omdannet til en mængde af et natriumsalt deraf.
3. Fremgangsmåden ifølge krav 2, hvor gærekstraktet yderligere indeholder 5'-guanylsyre og 5'-inosinsyre eller 5'-adenylsyre i en total mængde på 3 vægtprocent eller mere.
4. Fremgangsmåde til fremstilling af en gær, der akkumulerer fri glutaminsyre og glutamin i en total mængde på 10 % eller mere og ribonukleinsyre (RNA) i en mængde på 5 % eller mere, baseret på en vægt afen tør celle, ved (a) at anvende et mutageniserende middel og (b) at vælge en streng i stand til at vokse på et synetisk medium indeholdende ethylbromopyruvat og 2-oxoglutarsyre i en koncentration ved hvilken moderstrengen dertil ikke kan vokse.
5. Fremgangsmåden ifølge krav 4, hvor gærmutanten er til at fremstille et gærekstrakt indeholdende glutaminsyre der udviser en stærk smag.
6. Fremgangsmåden ifølge et hvilket som helst af kravene 4 eller 5, hvor det mutageniserende middel vælges fra gruppen bestående af ultraviolette stråler, røntgenstråler, salpetersyrling, nitrosoguanidin og ethylmethansulfonat.
7. Fremgangsmåden ifølge et hvilket som helst af kravene 4 til 6, hvor gæren er en Candida utilis-gær.
8. Fremgangsmåden ifølge et hvilket som helst af kravene 4 til 7, hvor mutageniserings-behandlingen gentages.
