einen Mahlvorgang und hat dann seine gewünschte Mahlfeinheit,
die durch den Abstand zwischen den Mahlwerkzeugen einstellbar
ist, erreicht. Die erreichbare Mahlfeinheit ist durch das
gewählte Mahlprinzip vorgegeben. Walzen- und Steinmühlen er
reichen die höchsten Mahlfeinheiten bei trockenen und nicht
ölhaltigen Ausgangsmaterialien. So werden insbesondere zum
Mahlen von Kaffee Steinmühlen eingesetzt. Für die Qualität
"Türkisch fein" ist hierbei eine Mahlfeinheit von Partikeln
mit der Größe von ca. 120 Mikrometer erforderlich. Diese Fein
heitsqualität wird vor allem in Griechenland, Jugoslawien, der
Türkei und in arabischen Ländern gefordert. Beim Aufbrühen des
gemahlenen Kaffees mit Wasser wird das Aroma um so mehr er
schlossen, je kleiner die erreichte Partikelgröße ist. Die
Grenzen der Feinheit der Vermahlung von Kaffee mittels Stein

Mahlgutes durch den gleichzeitigen Luftdurchsatz relativ ge
ring ist. Nachteilig ist, daß die Verteilung der Partikelgröße
breit gestreut ist, d. h. daß kein besonders homogenes Mahl
produkt entsteht. Bei der Mahlvorrichtung nach der Erfindung
hingegen wird mittels des Flügelrades ein radialer Luftstrom
mit hoher Strömungsgeschwindigkeit erzeugt. Das durch den
zentralen Ansaugkanal des Flügelrades durch den Luft- und/oder
Gasstrom aus einem entsprechenden Vorratsbehälter mitangesaug
te Mahlgut wird durch den Luftstrom auf eine hohe Geschwindig
keit gebracht und anschließend durch das Flügelrad zusätzlich
beschleunigt und radial nach außen gegen die Mahlfläche des
zylindrischen Gehäuses geschleudert. Das Mahlgut wandert an
schließend mit Hilfe des rotierenden Luftstromes, welcher
aufgrund seiner hohen Geschwindigkeit als Arbeitswerkzeug
wirkt, spiralförmig an der Mahlfläche des zylindrischen Gehäu
ses nach oben und wird dabei zerrieben. Anschließend gelangt
das durch den Aufprall auf der Mahlfläche vorzerkleinerte und
dann durch die Reibung entlang der Mahlfläche fein vermahlene
Mahlgut zum Siebeinsatz im zylindrischen Gehäuse und durch

absinken. In einer weiteren vorteilhaften Ausgestaltung kann
in einem vom Flügelrad entfernten Bereich des Ansaugkanals
eine oder mehrere Öffnungen zum Wiederansaugen von nicht genü
gend fein vermahlenem, noch im zylindrischen Körper verbliebe
nen Mahlgut vorgesehen sein. Die Größe der Partikel des Mahl
produkts wird durch die Öffnungen des verwendeten Siebeinsat
zes bestimmt. Nur genügend kleine Partikel gelangen mit einem
Teil des Luft- oder Gasstromes in den Sammelraum. Zu grobe
Partikel werden vom rotierenden Luftstrom weiter über den
Siebeinsatz transportiert und durch die Öffnungen im Ansaugka
nal wieder angesaugt und erneut durch das Flügelrad gegen die
Mahlfläche geschleudert und anschließend durch Reibung an

Partikel so lange in der Mahlvorrichtung bleiben, bis sie die
erforderliche Feinheit erreicht haben und den zylindrischen
Körper über den Siebeinsatz, der zweckmäßigerweise auswechsel
bar angeordnet sein kann, verlassen können. Mittels eines
Drehschiebers können die Öffnungen im Ansaugkanal kontinuier
lich geöffnet oder geschlossen werden. Bei geschlossenen Öff
nungen des Ansaugkanals erhöht sich der Druck im zylindrischen
Gehäuse und unterstützt die Aussiebung der feinen Teile durch
die Siebwandung in den Sammelraum für das Mahlgut. Der in den
Sammelraum gelangende Anteil des Luft- und/oder Gasstromes
kann ebenfalls über ein verschließbares Rohr wahlweise in den
Ansaugkanal rückführbar sein. Über das Rückführungsrohr ge
langt somit die Luft oder das Gas wieder in das zylindrische
Gehäuse und damit in den Mahlkreislauf und wird vom Flügelrad
wieder auf Arbeitsgeschwindigkeit beschleunigt. Eine solcher
maßen ausgebildete Mahlvorrichtung arbeitet also mit einem
geschlossenen Luft- bzw. Gasstrom-Mahlkreislauf. Dies bedeu
tet, daß auch nur eine geringe Oxydation der Mahlpartikel mit
Luftsauerstoff stattfindet, was beim Vermahlen von Lebensmit
teln zu einem unerwünschten Aromaverlust führen kann. Die
Erwärmung der Vorrichtung ist durch die Luft/Gas-Zirkulation
nur gering und beträgt ca. 30 bis 50°C. Die Gleichförmigkeit
des Mahlprodukts ist durch die Feinheit des Siebeinsatzes
beeinflußbar und jederzeit reproduzierbar. Die erreichbare
Mahlfeinheit liegt bei einer Partikelgröße von 50 bis 60 Mi
krometern verglichen mit 200 bis 300 Mikrometern bei herkömm
lichen Prallmühlen und ca. 120 Mikrometern bei Steinmühlen.
Die Beschaffenheit der Mahlfläche und ihre Länge bestimmen
neben der Ausgestaltung des Flügelrades, d. h. der Ganghöhe
der erzeugten Luftstromspirale, im wesentlichen die erreich
bare Feinheit des Mahlprodukts. Die Mahlfläche kann aus Stein
bestehen oder aber auch eine geriffelte Stahllauffläche sein.
Um eine höhere Verweildauer der Partikel auf der Mahlfläche zu
erzielen, können auch zusätzlich senkrechte Verzahnungen und
Vertiefungen vorgesehen sein. Für ein besonders hartes Mahlgut
kann die Mahlfläche auch mit Diamanten beschichtet sein. Mit
der Mahlvorrichtung können auch gleichzeitig verschiedene
Feinheitsgrade des Mahlprodukts erzielt werden, wenn konzen
trisch zu dem mindestens einen Wandungsabschnitt mit einem

Vermahlen von Lebensmitteln den Vorteil hat, daß das Mahl
produkt nur zu einem äußerst geringen Teil eine aromaschädi
gende Oxydation erfährt.
