Zersetzung von oxydationsempfindlichen Stoffen, z.3. von Vitamin A, Carotinoide^,insbesondere ß-Carotin, Fetten und Oelen »
mit einem Gehalt an ungesättigten, oxydierbaren ?e*Gtsäureestern,

ist heute allgemein üblich.
Die am häufigsten verwendeten Antioxydantien sind Tocopherole,
wie α- und 7-Tocopherol, und verwandte Verbindungen.,

z.B. Propylgallat, Octylgallat, Decylgallat, Dodecylgallat, o-Aethoxy^jS^-trimethyl-lia-dihydro-chinolin, sowie Mischungen

W Oft werden Antioxydantien zusammen mit synergistisch
wirkenden Substanzen verwendet. Als solche sind geeignet: Adrenalin, Noradrenalin, Betain, Serotonin, Cholin, Kreatin,
Kreatinin, Hydroxy-tyramin, Butylamin, Hexylamin, Octylamin,
Decylamin, Dodecylamin, Tetradecylamin, Octadecylamin, Triisooctylamin,
Di-isopropylamin, Triamylamin, Tributylamin, Diamylamin, Dicyclohexylamin-Fettsäuresalze, Dialkylamine mit
mindestens 10 Kohlenstoffatomen in mindestens einer Alkylgruppe,
wie z.B. Colamin

Glucose, Saccharose, Stärke, Alanin, Gelatine und Casein, Polyphosphate, Gephalin, Lecithine und verschiedene Phosphatide,
Sorbit, Saccharose, Polysaccharide, Gummi- und Harzarten,
Destillationsrückstände von Gewürzölen, Dialkylphosphonate, z.B. tert.Butyl-, Isopropyl-, Methyl-, sek. Butyl-, Isobutyl-, 2-Methyl-4-pentyl-,
2-Aethylhexyl-, 2,6-Dimethylheptyl-phosphonate,
Zink-dialkyl-dithiophosphat, Zink-dibutyldithiocarbamat, Bleichromat,Eisenoxyd,
2-Hydroxy-4-n~octoxy-benzophenon und andere.
Durch Kombination von Antioxydantien mit einzelnen der
vorstehend genannten Synergisten wurde zum Teil eine beträchtliche
Wirkungssteigerung erzielt. Es wurde nun im Hahmen der
vorliegenden Erfindung festgestellt, dass durch eine Kombination eines Antioxydans mit zwei spezifisch vorstehend genannten
Synergisten/eine Wirkung erreicht wird, die beträchtlich über die der bisher bekannten antioxydativ wirksamen Mischungen
hinausgeht. Dieser Befund ist deshalb besonders überraschend, 1IiOeIiCh «it Colaein und/od«r ein·« Salz davon eit einer höheren

berücksichtigt werden, dass die erfindungsgemäss vorgeschlagene
Kombination nur eine der ausserordentlich grossen theoretischen
Kombinationsmöglichkeiten darstellt.

Als Antioxidantien eignen· sich die üblicherweise für
• diesen Zweck verwendeten Substanzen, insbesondere die eingangs
spezifisch genannten Verbindungen. Ueberraschenderweise wurde
festgestellt, dass eine besonders starke synergistische Wirkung
^ bei Tocopherolen erzielt wird, was im Hinblick auf die physiologische
Unbedenklichkeit dieser Stoffe von auässerordentliehier
Bedeutung ist. In dieser1 Hinsicht sind besonders et- und -y-T'o-3l
von Bedeutung;.·

Was die Mengenverhältnisse im erfindungsgemäss vorgeschlagenen antioxydativen Gemisch betrifft, so hat sich eine
Menge von etwa 0,1 bis 50, insbesondere etwa 1 bis 10 Gew.Teile Colamin oder Colaminsalz und etwa 0,5 bis 100 , insbesondere
etwa 1 bis 10 Gew. Teile Ascorbinsäureester auf 1 Gew. Teil
Antioxydans bewährt. Die Menge der zu verwendenden antioxydativen Mischung gemäss der Erfindung hängt weitgehend vom zu
stabilisierenden Substrat ab. Während bei Oelen und Fetten im allgemeinen Mengen zwischen 0,01 und 0,1 Gew.% ausreichen, sind
bei Vitamin Α-Präparaten Mengen zwischen 0,5 und jir Gew.% angezeigt.
Wie vorstehend angegeben eignet sich die erfindungsgemässe
Antioxydantienmischung zur Stabilisierung von Fetten und Oelen mit einem Gehalt an ungesättigten oxydierbaren Fettsäureestern '
sowie von ätherischen Oelen und gewissen Aromastoffen. Viele
Nahrungsmittel enthalten solche oxydationsempfindliche Stoffe nur als Bestandteile, oft nur in geringen Konzentrationen.
Solche Lebensmittel sind ihrem Wesen nach hydrophil und werden im englischen Sprachgebrauch als "water-based foods" bezeichnet.
Beispiele derartiger Lebensmittel sind z.B. Gemüse, insbesondere in zerkleinerter Form, Pflanzenmehle und Verarbeitungsprodukte
daraus, Fleischwaren etc. Für derartige Fälle ist die gute
Dispergierbarkeit der erflndungsgemässen Antioxydantienmischung in wässrigem Milieu von Vorteil. Die Dispergierbarkeit ist besonders
ausgeprägt, wenn jnan Colamin und den Ascorbinsäureester
In etwa stöchiometrischeri . Mengen einsetzt.

2 g Ascorbylpalmitat, 3 3 Natriumascorbat, 0,5 g a-Tocopherol,
0,6 g Colamin und 1 g Dextrin werden in 20 ml Wasser bei 500C dispergiert. Die erhaltene Emulsion wird in 10 kg
Wurstbrät für Dauerwürste eingemischt. Die daraus hergestellten Würste sind gleich gut haltbar, wie solche, deren Masse die
doppelte Menge Ascorbylpalmitat, jedoch kein Colamin und a-Tocopherol
enthält.
1*5 g Vitamin A-Palmitat, 1,5 g Sonnenblumenöl, 50 mg
a-Tocopherol, 250 mg Ascorbylpalmitat, 250 mg Colaminpalmitat,
200 mg Polyoxyäthylen(2)-oleyläther (HLB-Wert 4,9) und 0,3 mg ^ Kupferoleat werden auf 6O0C erwärmt und homogen vermischt.
Diese Mischung wird bei 45°C an der Luft gelagert. Nach einer
Lagerdauer von 600 Stunden beträgt die Vitamin A-Retention 96%.
Ohne Colamin enthält die Mischung kein Vitamin A mehr, ohne Ascorbylpalmitat nur noch etwa
1,5 g Vitamin A-Palmitat, 1,5 £HSonii*nblunienö*l, 50 mg

γ-Tocopherol, 250 mg Ascorbylstearat und 250 mg Colaminpalmitat
werden auf 60°C erwärmt und homogen vermischt. Diese Mischung wird bei 45°C an der Luft gelagert und der Gehalt nach 600
Stunden bestimmt. Die Vitamin Α-Retention beträgt 95$· Ohne
Colaminpalmitat enthält die Mischung kein Vitamin A mehr, ohne Ascorbylstearat nur etwa 10$.

butyliertes Hydroxyanisol, 250 mg Ascorbylpalmitat, 50 ng Colamin, 200 mg Polyäthylenglykol(2)-oleyläther und 0,3 mg
Kupferoleat werden auf 60°C erwärmt und homogen vermischt. Diese Mischung wird bei 45°C an der Luft gelagert. Nach 400
Stunden wird der Vitamin A-Gehalt bestimmt. Die Retention beträgt 94#. Ohne Colamin enthält die Mischung kein Vitamin A
mehr, ohne Ascorbylpalmitat nur noch etwa 10$.
0*25 g Vitamin A-Palmitat, 2,5 g Sonnenblumenöl, 10 mg 6-Aethoxy-2,2,4-tr imethyl-l,2-dihydro-chinolin, 50 mg Ascorbylpalmitat,
10 mg Colamin, 200 mg Polyoxyäthylen(2)-oleyläther und 0,3 mg Kupferoleat werden unter Erwärmen auf 60°C vermischt
und homogen verrieben. Diese Mischung wird bei 45°C an der Luft gelagert und der Gehalt nach 600 Stunden bestimmt. Die Retention
beträgt 97%. Ohne Colamin beträgt die Retention nur 10$, ohne
Ascorbylpalmitat nur 80$.
50 mg ß-Carotin, 10 mg a-Tocopherol, 10 mg Asoorbylpalmitat
und 5 rag Colaminpalmitat werden unter Erwärmen auf
80°C in 100 g Sonnenblumenöl gelöst. Nach einer Lagerung von W 750 Stunden bei 45°C an der Luft wird der Gehalt an ß-Carotin
gemessen; die Retention beträgt 66%. Ohne Colaminpalmitat beträgt
die Retention nur 33#>
ohne Ascorbylpalmitat nur 50#.
1 kg Safloröl mit einem natürlichen Gehakt an Tocopherolen von etwa 400 mg/kg (davon etwa 220 mg a-Tooopherol)
wird mit 100 mg a-Tocopherylamin, 200 mg Asoorbyllaurat und
20 mg Colaminpalmitat versetzt. Das stabilisierte OeI wird bei Raumtemperatur im Tageslicht offen gelagert. Die Zeitdauer bis
zur Erreichung einer Peroxydzahl von 10 ist 3*6 s»al länger als
diejenige für ein OeI ohne Zusatz von Tooopherylamin, Ascorbyllaurat
und Colaminpalmitat, während ohne Zusatz voin Äsoorbyllaurat
der Protektionsfaktor nur 3,3 beträgt! ohne Colaminpalmitat
beträgt er sogar nur 3#1·

100 g Sonnenblumenöl, 5 mg <x-Tocopherol, 10 mg Ascorbyllaurat
und 1 mg Colamin werden offen und am Licht gelagert. Das stabilisierte Sonnenblumenöl hält gemäss den in Beispiel 6
genannten Kriterien 2 mal langer als nicht-stabilisiertes OeI.
Ohne Ascorbyllaurat hält das OeI nur 1,7 mal länger, ohne
Colamin 1,8 mal.
1 kg Schweineschmalz wird mit 50 mg -γ-Tocopherol, 100 mg
Ascorbyllaurat und 10 mg Colamin stabilisiert. Die Haltbarkeit. des stabilisierten Schmalzes übertrifft diejenige des niohtstabilisierten
Produktes nach den Kriterien gemäss Beispiel 6 um das 10-fache. Ohne Ascorbyllaurat übertrifft die Haltbarkeit
das nicht-stabilisierte Produkt nur 1,5 mal, ohne Colamin nur
3 mal.
100 g Orangenöl werden mit 2,5 mg butyliertem Hydroxyanisol,
2,5 mg butyliertem Hydroxytoluol, 10 mg Ascorbylpalmi-
tat und 5 mg Colaminpalmitat versetzt und die Zusätze durch
Erwärmen des OeIs unter Luftausschluss in Lösung'gebracht.
Das stabilisierte Orangenöl enthält nach 10-tägiger Lagerung

in einer offenen Schale noch keine sensorisch wahrnehmbaren Oxydationsprodukte, während ein Kontrollmuster ohne Zusatz der
antioxydativen Mischung bereits nach J5 Tagen sensorisch deutlich
wahrnehmbar oxydiert ist.

0,6 g Vitamin A-Palmitat, 1 mg DL-cc-Tocopherol,
50 mg Colaminpalmitat und 100 mg Äscorbylpalmitat werden homogen vermischt. Die Mischung wird bei 45°C an der Luft
gelagert und der Gehalt an Vitamin A nach 500 Stunden bestimmt. Die Vitamin Α-Retention betragt 95 #.
Wenn eine oder zwei Komponenten der Stabilisatormischung weggelassen werden, ist nach dieser Zeit kein Vitamin A
mehr vorhanden.

Claims (25)
1. Antioxydative Mischung enthaltend ein Antioxydans, Colamin und/oder ein Salz davon mit einer Höheren Fettsäure
und einen Ester der Ascorbinsäure mit einer höheren Fettsäure.
2. Mischung nach Anspruch 1, dadurch gekennzeichnet, dass sie als Antioxydans ein Tocopherol, 6-Aethoxy-2,2,4-trimethyl-l,2-dihydro~chinolin,
butyliertes Hydroxytoluol, butyliertes
Hydroxyanisol, ein Gallat und/oder Nordihydroguajaretsäure
enthält.
5- Mischung nach Anspruch 2, dadurch gekennzeichnet,
dass sie α- und/oder 7-Tocopherol enthält.
4. Mischung nach Anspruch 1, dadurch gekennzeichnet,
dass sie Colaminpalmitat enthält.
5. Mischung nach Anspruch 1, dadurch gekennzeichnet, dass sie α- und/oder 7-Tocopherol, Colaminpalmitat und Asoorbyl·
palmitat enthält.

7· Verwendung nach Anspruch 6, dadurch gekennzeichnet, dass die antioxydative Mischung als Antioxydans ein Tocopherol,
6-Aethoxy-2,2,4-trimethyl-l,2-dihydro-chinolin, butyliertes
Hydroxytoluol, butyliertes Hydroxyanisol, ein Gallat und/oder Hordihydrogujaretsäure enthält.
8. Verwendung nach Anspruch 7, dadurch gekennzeichnet, dass die antioxydative Mischung α- und/oder γ-Tocopherol enthält.
9· Verwendung nach Anspruch 6, dadurch gekennzeichnet, dass die antioxydative Mischung Colaminpalmitat enthält.
10. Verwendung nach Anspruch 6, dadurch gekennzeichnet, ' dass die antioxydative Mischung α- und/oder γ-Tocopherol,
Colaminpalmitat und Ascorbylpalmitat enthält.

11· Verfahren zur Stabilisierung oxydationsempfindlicher Stoffe, dadurch gekennzeichnet, dass man ein antioxydatives
Gemisch enthaltend ein Antioxydans, Colamin und/oder ein Salz davon mit einer höheren Fettsäure und einen Ester der Ascorbinsäure
mit einer höheren Fettsäure zusetzt.
12. Verfahren nach Anspruch 11, dadurch gekennzeichnet,
dass man ein Gemisch verwendet, das als Antioxydans ein Tocopherol,
o-Aethoxy^ia^-trimethyl-l^-dihydro-chinolin, butyliertes
Hydroxytoluol, butyliertes Hydroxyanisol, ein Gallat
und/oder Nordihydroguajaretsäure enthält.
13· Verfahren nach Anspruch 12, dadurch gekennzeichnet, dass man ein Gemisch verwendet, das als Antioxydans α- und/oder
7-Tocopherol enthält.
14. Verfahren nach Anspruch 11, dadurch gekennzeichnet, dass man ein Gemisch verwendet, das Colarainpalmitat enthält.
15. Verfahren nach Anspruch H, dadurch gekennzeichnet,
dass man ein Gemisch verwendet, welches α- und/oder 7-Tocopherol, Colaminpalmitat und Ascorbylpalmitat enthält.
16. Verfahren nach einem der Ansprüche 11 bis 15» dadurch
gekennzeichnet, dass man ein Präparat enthaltend Vitamin A und/oder ein Derivat davon stabilisiert.

17. Produkte mit einem Gehalt an oxydationsempfindlichen
Stoffen, dadurch gekennzeichnet, dass sie zur Stabilisierung ein Antioxydans, Colamin und/oder ein Salz davon mit einer
höheren Fettsäure und einen Ester der Ascorbinsäure mit einer höheren Fettsäure enthalten.
18. Produkte gemäss Anspruch 17, dadurch gekennzeichnet,
dass sie als Antioxydans ein Tocopherol, 6~Aethoxy-2,2,4-trimethyl-l,2-dihydro-chinolin,
butyliertes Hydroxytoluol, butyl'iertes Hydroxyanisol, ein Gallat und/oder Nordihydrogujaretsäure
enthalten.
19. Produkte gemäss Anspruoh 18, dadurch gekennzeichnet, dass sie als Antioxydans α- und/oder 7-Tocopherol enthalten.
20. Produkte gemäss Anspruch 17, dadurch gekennzeichnet, dass sie Colaminpalmitat enthalten.
21. Produkte gemäss Anspruch 17, dadurch gekennzeichnet,
dass sie α- und/oder 7-Tocopherol, Colaminpalmitat und Ascorbylpalmitat
enthalten.

11 bis 15.
