1,193,027. Preserving sausage meat. F. HOFFMANN-LA ROCHE & CO. A.G. 24 Oct., 1968 [27 Oct., 1967], No. 50522/68. Heading A2D. [Also in Divisions A5, C2 and C5] An antioxidant composition comprising (a) an antioxidant, (b) colamine or a C 10 to C 20 fatty acid salt thereof and (c) a C 10 to C 20 fatty acid ester of ascorbic acid, may be added to foodstuffs. For each part by weight of component (a) there may be from 0.1 to 50 parts by weight of component (b) and 0.5 to 100 parts by weight of component (c). In an example the antioxidant is alpha tocopherol, which, together with colamine and ascorbyl palmitate, is used to stabilize sausage meat; sodium ascorbate and dextrin are also present.
