Abstract

En la presente descripción se describen composiciones de postre congelado que contienen alulosa y jarabes y/o sólidos bajos en azúcar, junto con el uso de alulosa y jarabes y/o sólidos bajos en azúcar en composiciones de postre congelado. Beneficiosamente, las composiciones descritas en la presente descripción reducen los azúcares añadidos y/o el contenido calórico de un postre congelado al mismo tiempo que superan las limitaciones de formulación de productos de postre congelado bajos o reducidos en azúcar, que incluyen igualar la dureza, textura y/o dulzor de sus contrapartes de azúcar total.
