Abstract
PRODUCTOS DE EMULSIÓN DE CARNE, MÉTODOS PARA FABRICARLOS Y ALIMENTOS PARA MASCOTAS QUE CONTIENEN DICHOS PRODUCTOS RESUMEN – OBJETO Y FINALIDAD DE LA INVENCIÓN Se fabrican productos de emulsión de carne con más del 15 % de harina de carne. Estos productos de emulsión de carne se obtienen de una masa que contiene una o más harinas de carne, humectantes, tales como glicerol, en donde la masa tiene un bajo contenido de humedad, tal como, aproximadamente 32 % o menos. Preferentemente, una o más de las harinas de carne son el único ingrediente cárnico en la masa. La masa se emulsiona a una temperatura superior a 100 °C y a una presión de 0,27 MPa a 3,44 Mpa (de 2,7 bar a 34,4 bar) y luego se cuaja en un intercambiador de calor, tal como un intercambiador de calor formado por una primera placa y una segunda placa que forman un pasaje entre ellas. La emulsión de carne cuajada se puede redimensionar para formar trozos cortados en dados del producto de emulsión de carne.
