甜茶悬钩子,学名Rubus Suavissmus S,Lee,英文名Sweet tea,是蔷薇科悬钩子属植物的一个新品种,被现代植物学专家学者定名为甜茶。甜茶含有丰富的营养物质及人体所必需的微量元素,首先,甜茶富含18种氨基酸,每100克干品所含氨基酸总量高达13535毫克左右,特别是甜茶中富含4178毫克人体必须的、人体不能生成只能从食物中吸收的8种氨基酸,其中赖氨酸含量高达830毫克,远高于大麦、高梁、玉米等主要食物,接近鸡蛋。其次,甜茶的各种微量元素含量也较高,主要有钙0.84%、锌170mg/kg、锗5.5μg/kg、硒0.13mg/kg,及钾、镁、铁、钠、锶、锂等多种元素,但不含砷、铝等有毒物质,也不含会产生头晕、心跳加速、心悸、焦虑易怒、心理不适、干扰睡眠、肌肉震颤等副作用的咖啡因;并且甜茶中所含的锗、硒等,均优于一般绿茶和苦丁茶。除上述所含微量元素外,甜茶还富含维生素C、B1、B2、E、尼克酸、叶酸,超氧化物岐化酶,鲜甜茶成熟叶中维生素C的含量高达115mg/100g;特别是还富含最具价值4.1%的生物类黄酮、18.04%的甜茶多酚和5%的甜茶素。而科学研究证实,甜茶中所含的赖氨酸在人体有重要的生理功能,它是合成大脑神经再生性细胞和核蛋白以及血红蛋白等重要蛋白质的必需氨基酸,赖氨酸有健身补脑、延年益寿、利于优生、增加运动力耐力之功效,能有效促进孩子生长发育长高、智力更发达;硒能消除对人体有害的自由基,改变致癌物质的代谢方向,减少人体细胞和细胞膜成分的氧化损伤,提高机体抵抗能力,从而能够延缓人的寿命;锗能增强红细胞的带氧能力,从而保证机体的供氧量,有利于新陈代谢的进行;甜茶多酚有明显抗氧化、抗突然变异、防癌、降低胆固醇、降低血液中低密度脂蛋白、抑制血压上升、抑制血糖上升、抑制血小板凝集、抗菌、抗食物过敏、改善肠胃微生物环境、消臭的作用,是目前发现最理想的纯天然抗氧化剂,用途十分的广泛;生物类黄酮能强化微血管、抗氧化、降血压,是防治心脑血管疾病和防癌抗癌的佳品;甜茶素——甜茶悬钩子甙(Rubusoside),是一种斯替维醇(Steviol)和葡萄糖结合而成的二萜甙的低热量高甜味物质,从甜茶中提取的甜茶素是甜味植物中口感最佳的,甜味的纯正程度接近白糖,它的甜度相当蔗糖的300倍;每公斤干甜茶叶的甜度相当于15公斤蔗糖的甜度。因此,甜茶不但具有抗衰老、美容、抗过敏,减肥降血脂、降血压、降低血糖,滋肝补肾、清热解毒、消炎,生津润肺、止咳利咽的作用,能防治胃酸过多、健胃祛滞、开胃助消化,抑制和延缓血管硬化、防治冠心病,防治热咳、咽喉炎、口腔炎、声音嘶哑等症,还具有提高人体免疫力、防癌抗癌之功效,更是目前世界上天然的无毒、高甜度、低热能和具有保健功能最全最好的甜味植物。但一般不将甜茶叶直接用于食品饮料加工,故目前市场上很少见有以甜茶为原料制作的代糖产品销售。
(三)发明内容:
本发明将公开一种采用纯天然保健的甜味植物——甜茶叶为原料制造,且水溶性好,口感清甜的活性甜茶糖;本发明还将公开这种活性甜茶糖的制造方法。
本发明所述的活性甜茶糖的制造方法,其步骤如下:
1)鲜叶采摘:采摘的甜茶叶最好为不带叶柄、颜色较绿的健康成熟叶;根据历史经验及采用化学分析,对甜茶叶的测试结果表明,每年六、七、八、九月产的甜茶叶甜茶素含量最高,而各个生长阶段的甜茶叶又以成熟叶中的甜茶素含量最高,因此制造甜茶糖的原料以采摘六、七、八、九四个月产的、颜色较绿的健康成熟甜茶叶为宜;且由于叶柄中的甜茶素含量很低、口感差,而纤维素含量高不利于加工成超微细粉,所以采摘时不能带叶柄;
2)茶叶烫青:为了在去除甜茶叶中的青臭味的同时,仍然能够使成品活性甜茶糖保持外表的嫩绿色及丰富的内含物,应将甜茶叶置于热水中烫煮,使甜茶叶受热均匀,避免了因高温而破坏局部茶叶的颜色和维生素C等内含物;将甜茶叶烫青的时间一般为30~40秒,热水的温度为95~100℃;
3)将经过烫煮的甜茶叶迅速进行降温,以便能够更好的保持成品甜茶糖嫩绿色的外表及丰富的内含物;一般是将烫青后的甜茶叶迅速置于常温的冷水中浸泡5~8分钟使其降温;常温的冷水一般为0℃~25℃;
4)由于经过烫青、冷水降温处理过的甜茶叶上含有较多的外源水分,这样会影响到后面的制造工序及成品的质量,应将甜茶叶进行脱水处理,其脱水程度为甜茶叶干爽即可;脱水处理可以采用任意的脱水方法,例如离心脱水或其它脱水方法;
5)脱水后的甜茶叶应及时干燥处理;甜茶叶的干燥处理温度为120℃~130℃,并将甜茶叶干燥至其含水量小于8%;在此工序中还可以根据需要,在干燥处理之前对甜茶叶进行切段,甜茶叶的切段宽度为0.5~1cm;并且还可将干燥后的茶叶进行精挑细选,剔除其中所含的杂质;但降温处理后的甜茶叶最好在30分钟内进行干燥,否则甜茶叶将会发生改变;
6)揉碎:将甜茶叶揉碎,筛去甜茶叶中的植物纤维部分;纤维素含量高的甜茶叶不利于加工成超微细粉,而叶脉中的甜茶素含量很低、口感差,所以要筛去叶脉等甜茶中所含的植物纤维部份;
7)粉碎:将甜茶叶粉碎成超微细粉末;在进行粉碎处理时,可先将筛分好的甜茶纯叶片用粉碎机粉碎成60~80目甜茶叶粉末;再将其用气流超细粉碎机在气流撞击下粉碎成1~10微米左右的甜茶叶超微细粉末;当然也可以采用其它的粉碎处理方法,将甜茶叶粉碎成1~10微米的甜茶叶超微细粉末;
8)将粉碎后的甜茶叶粉末成型、包装,得到活性甜茶糖。
本发明所述的活性甜茶糖是以纯天然的甜茶叶为原料,经过采摘——烫青——降温——脱水——干燥——揉碎——粉碎等工序,最后成型、包装得到成品,所得的活性甜茶糖不但具有甜茶叶的众多的保健功能,还是热量低、甜度高、口感醇正的甜味剂。本发明活性甜茶糖为纯天然绿色产品,无任何添加剂,也无毒副作用,水溶性好,食用时无草腥异味、无异常叶渣感、颜色翠绿,口感极佳,可广泛用于饮料、咖啡、牛奶、烹调,也可用于糖果、饼类、糕点等食品加工,是肥胖症、糖尿病、心脑血管患者及不宜食用蔗糖的人们理想的代糖食品。
(四)具体实施方式:
实施例一:
先采摘不带叶柄、颜色较绿的健康成熟甜茶叶,然后将采摘好的甜茶叶放入其内热水的温度为100℃的专用锅里烫煮30秒钟,以去除甜茶叶的青臭味,为了更好的保持成品甜茶糖的嫩绿色及丰富的内含物,再将经过汤煮捞起的甜茶叶立即放进25℃冷水中浸泡5分钟;由于经过开水烫青、冷水降温处理后的甜茶叶上含有较多的外源水分,而这些水分会影响到后面的加工工序及产品的质量,所以必须将甜茶叶进行脱水处理,此时,应将降温处理过的甜茶进行离心脱水,脱水程度以甜茶叶干爽为宜,脱水后的甜茶叶可先进行切段,切成0.5cm宽度的长条;然后用茶叶烘干机在120℃的温度下将切段后的甜茶叶烘至足干,使其含水量小于8%,从降温处理完毕到进入烘干程序,整个过程应在30分钟内完成,即降温处理后的甜茶叶在30分钟内进行烘干,再将烘干后的茶叶进行精挑细选,选去其中的杂质;因甜茶叶叶脉中的甜茶素含量很低、口感较差,而且纤维素含量高不利用加工成超微细粉,所以还需将甜茶叶揉碎,并筛去叶脉等植物纤维部分;然后再利用粉碎机将揉碎后的甜茶叶粉碎,先将筛分好的甜茶纯叶片用传统的粉碎机粉碎成60目甜茶叶粉末,再将60目甜茶叶粉末用气流超细粉碎机在气流撞击下粉碎成1微米左右的甜茶叶超微细粉末,最后将1微米左右的甜茶叶超微细粉末用食品造料机制成12目左右的甜茶糖,最后经过包装即得到成品活性甜茶糖。
实施例二:
先采摘不带叶柄、颜色较绿的健康成熟甜茶叶,然后将采摘好的甜茶叶放入其内热水的温度为95℃的专用锅里烫煮40秒钟,以去除甜茶叶的青臭味,为了更好的保持成品甜茶糖的嫩绿色及丰富的内含物,再将经过汤煮捞起的甜茶叶立即放进0℃冷水中浸泡8分钟;由于经过开水烫青、冷水降温处理后的甜茶叶上含有较多的外源水分,而这些水分会影响到后面的加工工序及产品的质量,所以必须将甜茶叶进行脱水处理,此时,应将降温处理过的甜茶进行离心脱水,脱水程度以甜茶叶干爽为宜,将脱水后的甜茶叶马上用茶叶烘干机在130℃的温度下将甜茶叶烘至足干,使其含水量小于8%;从降温处理完毕到进入烘干程序,整个过程应在30分钟内完成,即降温处理后的甜茶叶在30分钟内进行烘干,因甜茶叶叶脉中的甜茶素含量很低、口感较差,而且纤维素含量高不利用加工成超微细粉,所以还需将甜茶叶揉碎,并筛去叶脉等植物纤维部分;然后再利用粉碎机将揉碎后的甜茶叶粉碎,先将筛分好的甜茶纯叶片用传统的粉碎机粉碎成80目甜茶叶粉末,再将80目甜茶叶粉末用气流超细粉碎机在气流撞击下粉碎成10微米左右的甜茶叶超微细粉末,最后将1微米左右的甜茶叶超微细粉末用食品造料机制成12目左右的甜茶糖,最后经过包装即得到成品活性甜茶糖。
Claims (10)
1、一种活性甜茶糖的制造方法,其步骤如下:
1)鲜叶采摘;
2)茶叶烫青:将甜茶叶置于热水中烫煮;
3)将烫煮后的甜茶叶降温;
4)将甜茶叶进行脱水处理,去除经过烫青、降温处理过后留在甜茶叶上的外源水分;
5)脱水后的甜茶叶及时进行干燥处理;
6)揉碎:将甜茶叶揉碎,筛去茶叶中的植物纤维部分;
7)粉碎:将甜茶叶粉碎成超微细粉末;
8)将粉碎后的甜茶叶粉末成型、包装,得到活性甜茶糖。
2、根据权利要求1所述的活性甜茶糖的制造方法,其特征在于:步骤5)中,所述脱水后的甜茶叶先进行切段处理,再进行干燥处理。
3、根据权利要求1或2所述的活性甜茶糖的制造方法,其特征在于:从降温处理完毕到进入烘干程序,整个过程应在30分钟内完成,即降温处理后的甜茶叶在30分钟内进行烘干。
4、根据权利要求1或2所述的活性甜茶糖的制造方法,其特征在于:所述步骤1)中,采摘的甜茶叶为不带叶柄、颜色较绿的健康成熟叶。
5、根据权利要求1或2所述的活性甜茶糖的制造方法,其特征在于:所述步骤2)中,甜茶叶烫青的时间为30~40秒,热水的温度为95~100℃。
6、根据权利要求1或2所述的活性甜茶糖的制造方法,其特征在于:所述步骤3)中,甜茶叶降温为将烫煮后的甜茶叶置于常温的冷水中浸泡5~8分钟使得降温。
7、根据权利要求1或2所述的活性甜茶糖的制造方法,其特征在于:所述步骤5)中,甜茶叶的切段宽度为0.5~1cm。
8、根据权利要求1或2所述的活性甜茶糖的制造方法,其特征在于:所述步骤5)中,甜茶叶的干燥处理温度为120℃~130℃,甜茶叶干燥程度为其含水量小于8%。
9、根据权利要求1或2所述的活性甜茶糖的制造方法,其特征在于:所述步骤7)中,将甜茶叶粉碎成1~10微米的超微细粉末。
10、权利要求1~9中任何一项所述的制造方法制成的活性甜茶糖。
