据全国第三次营养调查,中国妇女严重缺铁、钙、维生素A和维生素B2,普遍缺乏维生素B6,维生素C锌和硒。中青年妇女不缺维生素D。并指出中国人不缺维生素B12、维生素K、泛酸、烟酸、磷、铜、氯、镁、钾、钠、铭、锰等。营养缺乏的原因是中国膳食结构不合理和人群营养知识的缺乏。女人是一个特殊生理特征的群体,尤在经期、孕期、哺乳期,其体内脂肪酸和其它营养水平下降,体内自由基清除能力减弱,机体免疫力下降,导致各种疾病的侵扰,机体衰老速度加快。为防止这些问题的出现,延缓机体衰老,可行的办法就是补充体内的所缺失的营养。
由卫生部、国家科委等11个部门联合制定《中国营养改善行动计划》中强调指出:“食品工业生产和加工部门要适应广大消费者需求,发展具有优势的营养强化食品和粮食加工品。”
饼干是深受人们欢迎的食品之一。传统的饼干具有一般食品所具备的营养和感觉功能,但它缺乏生理调节功能。食品营养学界证实,在食品中增补某些缺少或特需的营养成份来改变我国人民营养状况是可行的。专利“高能饼干及其生产方法”(专利号:95113953.3,公开号:1152416,公开日:1997.06.25)由板栗、鲜牛骨粉、芝麻、大豆、核桃仁、莲子、枸杞子、五味子、红枣、姜、龟板、小米、黄米、山楂、百合、土豆粉组成并烘干粉碎加入牛骨髓、蜂蜜、盐,再模压制成。这种饼干能量比一般食品提高5~10倍,具有食量少能量高的特点。它养气血,平衡新陈代谢、增强机体活力,强化精、气、神、壮骨强身、防癌治病的优点。
这种饼干虽然有上述益处,明显区别于传统饼干,但它却存在以下缺失:
1、从组分和重量比上看,它的成本较高,成为普及性的食品有一定困难;大量的杂粮、干果、牛骨、龟板等原料的介入,已基本改变传统饼干的口味,适应这种口味尚需一定时期过程。
2、从自然原料中获得的营养来补充身体能量需求是可行的,但它存在的不易克服的营养成分及含量不确定性,是不能作为缺乏营养人群的营养补充食品。
发明内容
本发明的目的就是要提供一种女士功能营养组合饼干,在保持传统口味的基础上,使组分间协同组合,依照“木桶原则”来补充女士缺乏和特需的营养素,来提高女士的机体活力,增强抵御疾病、延缓衰老、美白皮肤、调节生理的功能,并使其价格控制在能够普及的水平上。
为实现上述目的,本发明的技术方案是这样的:
女士功能营养组合饼干,主要由标准粉、磷脂、奶粉、碳酸氢铵、精盐、植物油、小苏打、柠檬酸组成,它还包括木糖醇、超氧化物歧化酶(SOD)、功能营养素。各组分重量比为(以制成饼干每100g为基数):标准粉70~80g、磷脂0.6-0.8g、奶粉1.0-2.0g、碳酸氢铵0.3-0.5g、精盐0.1-0.3g、植物油5~8g、小苏打0.4-0.6g、柠檬酸1.1-1.5mg、木糖醇10~20g、超氧化物歧化酶(SOD)20-40mg,功能营养素780.63mg。其中功能营养素是由二十二碳六烯酸(DHA)300mg、维生素E 10mg、维生素C 50mg、维生素A 300μg、叶酸200μg、B-胡萝卜素100μg、维生素B1 1mg、维生素B2 1mg、维生素B6 1mg、钙400mg、铁12mg、锌5mg、硒30μg组成。经面粉调制—滚轧—成型—烘烤—冷却—包装而成产品。每50g为一小包装,每人每日两包即可补充女士所缺少和特需的营养素。
功能营养素中各组分是以第三次全国营养调查为依据,以补缺为原则。中国女士不缺的营养素可以从日常膳食中满足需求,不能再另外添加补充。缺乏的营养素一定要补,不然会造成营养贫乏,导致各种疾病的侵扰,严重的会导致死亡。但在配方中不能单补一种营养素,以免干扰其它维生素及矿物质的吸收和代谢。本发明所补充的营养素强调有效成分的科学协同组合,注重营养平衡。
本发明配方中的二十二碳六烯酸(DHA)是中国妇女体内所缺乏的重要营养物质。DHA不仅有利于女士大脑的健康、预防老年痴呆和心血管疾病、维持视觉功能,还能够对癌细胞起到明显的抑制作用。由于DHA是高度不饱合脂肪酸,很容易酸败,必须添加抗氧化剂如维生素E来阻止DHA的酸败。
本发明通过超氧化物歧化酶(SOD)—酶类自由基清除剂来延缓女士机体衰老,提高机体免疫力,并增强对疾病的抵抗力。由于SOD有效成分在加工过程中易被破坏,特别强化抗氧化物维生素E、维生素B2和锌的含量,以保持SOD的较高活性。
本发明配方中维生素C、维生素E和B-胡萝卜素被称为“三剑客”,它们搭配补充在清除自由基、美白皮肤、增强免疫力等方面效果十分显著;钙和铁的协同可使皮下细胞增多,增加毛细血管内血液的压强,在满足机体对钙需求的同时,还能使女士皮肤红润健康;维生素A、维生素B6、叶酸、与锌的联合介入可使女士皮肤光滑且有弹性;维生素B1、维生素B2、维生素B6是按1∶1∶1的比例科学组合且缺一不可,能保证最佳吸收和利用状态,从而保证免疫细胞正常的吞噬能力,增强机体的抗病能力。
木糖醇是一种最常见的多元糖醇,是一种无味的白色结晶粉末状物质,甜度与蔗糖一样,能量值仅11.7-12.1kj/g,比蔗糖低。由于它是所有糖醇甜味剂中吸热值最大的一种,食用时会感到一种凉爽愉快的口感特性。
通过上述技术方案,本发明具有如下益处:
1、本发明基本保持了传统配方、口味和制法,虽然内部添加了女士必须补充和特需的营养素,其成本提高幅度并不大,可以成为普及型功能营养食品。
2、本发明添加各种营养素组成,其间配伍具有协同关系,使其能发挥更大作用,对女士身体有延缓衰老、抵御疾病、增强免疫力、提高女士机体活力、美白皮肤、调节生理的功能。
具体实施方式
实施例:
备料:标准粉7.5kg、磷脂70g、奶粉150g、碳酸氢铵40g、精盐11.724g、植物油0.6kg、小苏打48g,柠檬酸0.113g、木糖醇1.5kg、超氧化物歧化酶(SOD)2g、功能营养素78.063g,果味香精粉末0.1g。其中功能营养素各组分备料是:二十碳六烯酸(DHA)30g、维生素E 1g、维生素C 5g、维生素A 0.03g、叶酸0.02g、B-胡萝卜素0.01g、维生素B1 0.1g、维生素B2 0.1g、维生素B6 0.1g、钙40g、铁1.2g、锌0.5g、硒0.003g。合计78.063g。经面粉调制—滚轧—成型—烘烤—冷却—包装而成产品。每50g为一小包装,每人每日两包即可补充女士所缺少和特需的营养素。
Claims (3)
1、一种女士功能营养组合饼干,主要由标准粉、磷脂、奶粉、碳酸氢铵、精盐、植物油、小苏打、柠檬酸组成,其特征在于:它还包括木糖醇、超氧化物歧化酶(SOD)、功能营养素。
2、根据权利要求1所述的女士功能营养组合饼干,其特征在于:所述的各组分重量比为(以制成饼干每100g为基数):标准粉70~80g、磷脂0.6-0.8g、奶粉1.0-2.0g、碳酸氢铵0.3-0.5g、精盐0.1-0.3g、植物油5~8g、小苏打0.4-0.6g、柠檬酸1.1-1.5mg、木糖醇10~20g、超氧化物歧化酶(SOD)20-40mg,功能营养素780.63mg。
3、根据权利要求1或者2所述的女士功能营养组合饼干,其特征在于:按制成饼干每100g为基数,所述的功能营养素是由二十二碳六烯酸(DHA)300mg、维生素E 10mg、维生素C 50mg、维生素A 300μg、叶酸200μg、B-胡萝卜素100μg、维生素B1 1mg、维生素B2 1mg、维生素B6 1mg、钙400mg、铁12mg、锌5mg、硒30μg组成。
