本发明涉及一种无蔗糖糕点修饰剂(无糖烘焙甜味改良剂),属烘焙制品技术领域,为解决烘焙制品含糖量过高给人们带来肥胖、龋齿、胆结石、高血脂、高血压、糖尿病等疾病的危害而研制,本发明由多元糖醇为主要原料、辅以三聚甘油单硬脂酸脂、阿斯巴甜、维多糖组成,其重量配比范围是:木糖醇1%~70%、山梨糖醇0~70%、蔗糖脂肪酸酯0~1%、三聚甘油单硬脂酸酯0~2.0%、单硬脂酸甘油酯0~1%、维多糖0~0.5%、阿斯巴甜0~0.10%、面粉或精制(低DE值)麦芽糊精2%~18%;用如下加工工艺制成:原材料检验→过筛(80目以上)→称量→预混→一级混拌→二级混拌(10~15分钟)→称重包装→成品;本发明为非蔗糖甜味料、不是口腔微生物的适宜作用底物,具有适合于糖尿病人、肥胖人群食用和保护牙齿、增高钙的吸收率及储存率的有益效果。

技术领域:本发明涉及一种无蔗糖糕点修饰剂(无糖烘焙甜味改良剂),属烘焙制品技术领域。
背景技术:蔗糖是甜味之王,为食品工业的大宗原料之一。除提供纯正怡人的甜味刺激及16.7kJ/g的高热量外,还给食品配料系统提供适宜的粘度、质构和体积,并有一定的高渗抗菌特性;然而,蔗糖摄入量过多被认为是一个重要的不健康因子;不管是发达国家,还是发展中国家,在其提出的“国民健康指南”中,无一例外地劝告国民限制对蔗糖的摄入,现代消费者对食品中的蔗糖含量甚为敏感,但又向往那愉快的,纯正的甜味刺激,而无法适应单纯的低糖或无糖食品;在现今的国内外同类产品中,蔗糖可谓让人感到“口欲、健康难两全”;烘焙制品含糖量过高给人们带来肥胖、龋齿、胆结实、高血脂、高血压、糖尿病等疾病,不少人因此望糖生畏,避而远之。
发明内容:为解决烘焙制品含糖量过高给人们带来肥胖、龋齿、胆结石、高血脂、高血压、糖尿病等疾病的危害而研制,无蔗糖糕点修饰剂(无糖烘焙甜味改良剂)以多元糖醇代替蔗糖为主要原料、辅以三聚甘油单硬脂酸脂、阿斯巴甜、维多糖和面粉或精制(低DE值)麦芽糊精组成,成分的重量配比范围是:木糖醇1%~70%、山梨糖醇0~70%、蔗糖脂肪酸酯0~1%、三聚甘油单硬脂酸酯0~2.0%、单硬脂酸甘油酯0~1%、维多糖0~0.5%、阿斯巴甜0~0.10%、面粉或精制(低DE值)麦芽糊精2%~18%;用如下加工工艺制成:原材料检验→过筛(80目以上)→称量→预混→一级混拌→二级混拌(10~15分钟)→称重包装→成品。
本发明的有益效果、优点和特点:
(1)无蔗糖糕点修饰剂主要是以木糖醇、食品乳化剂等为主要原料,其特点在于:非蔗糖甜味料,在人体的代谢途径与胰岛素无关,既解决了糖尿病人难品甜味之苦,又不会引起血液葡萄糖与胰岛素水平大幅度的波动,适合于糖尿病人、肥胖人群食用;
(2)不是口腔微生物(特别是突变链球菌)的适宜作用底物,不会像蔗糖一样被大多口腔微生物所发酵,不会引起牙齿龋变,有利于保护儿童的牙齿健康;
(3)低热量、甜度适宜、口感清爽,适合于肥胖人群食用;
(4)因木糖醇与乳糖同样具有增强对钙质吸收的作用,可使钙的吸收率和储存率增高。
具体实施方式:
按重量配比,取木糖醇63%、山梨糖醇20%、蔗糖脂肪酸酯0.5%、三聚甘油单硬脂酸脂0.1%、单硬脂酸甘油酯0.5%、维多糖0.02%、阿斯巴甜0.02%、面粉或精制(低DE值)麦芽糊精15.86%;用如下加工工艺制成:原材料检验→过筛(80目以上)→称量→预混→一级混拌→二级混拌(10~15分钟)→称重包装→成品。

1、一种无蔗糖糕点修饰剂,其特征在于:由木糖醇63%、山梨糖醇20%、蔗糖脂肪酸酯0.5%、三聚甘油单硬脂酸脂0.1%、单硬脂酸甘油酯0.5%、维多糖0.02%、阿斯巴甜0.02%和面粉或精制麦芽糊精15.86%组成。
