Abstract
本发明公开了一种饮料用沙示香精及其制备方法,属于饮料生产技术领域,所述香精由丙二醇、冬青油、柳酸乙酯、苯甲酸甲酯、苯甲酸乙酯、乙酸乙酯、丁酸乙酯、乳酸乙酯、乙酰丙酸乙酯、乙酸橙花酯、甜橙油、柠檬油、柠檬醛、芳樟醇、壬醛、甲基环戊烯醇酮、2‑乙酰基吡嗪、2,3‑二甲基吡嗪、乙基麦芽酚、麦芽酚、呋喃酮、香兰素、乙基香兰素、胡椒醛、大茴香醛、大茴香醇、乙位突厥酮、甲位突厥酮、突厥烯酮、糠醛和5‑甲基糠醛组成。配方以特征香气为主题香,搭配焦香、焦甜、糖香,底味组合微量的果香、柑橘、香草、发酵香味的原料,最终制备的香精的香气纯正、舒适、逼真,并且口感天然、自然、回味绵长。

技术领域
本发明属于饮料生产技术领域,具体涉及一种饮料用沙示香精及其制备方法。
背景技术
沙示是以植物Sarsaparilla(墨西哥菝葜)为主要调味的原料,因此得名。墨西哥菝葜,自古便被视为生药、中药,药用价值很高,功效颇多,其驱风、发汗、利尿、解毒、净血等功效,被墨西哥人视为消热解暑的佳品,因此最初的“沙示”是墨西哥当地用于消热解暑的一种自然草本汁。沙示为深褐色、味甜、不含咖啡因,色泽相近于可乐,但口味截然不同。
19世纪初,“沙示”走进中国,一般只有上层社会的人才能享受。到了19世纪70年代,“沙示”才大众化,才渐渐走进大街小巷。引进国内后,沙示成分中的洋植物提取物,换成了气味相似却更香、功效更好、岭南人都十分熟悉的植物-梅叶冬青。
冬青油是天然精油的一种。主要由冬青树的叶经水蒸汽馏而得。冬青树产于加拿大和中国云南等地。冬青油的主要成分为柳酸甲酯(水杨酸甲酯),含量高达99%以上。用于医药及调合皂用香精和牙膏香精。蒸馏甜桦的树皮而得的甜桦油,成分基本上与冬青油一致,在商品中常混称“天然冬青油”。此外,合成的柳酸甲酯也常称为“冬青油”。
柳酸甲酯,是一种有机化合物,化学式为C8H8O3,是一种无色透明液体,有强烈的冬青油香气。天然品存在于冬青油、桦木油、绿茶籽油、丁香油、檞树油、晚香玉油、小当药油、茶油、依兰依兰油等精油中及樱桃、苹果、草莓的果汁中。微溶于水,溶于乙醇、乙醚、氯仿、乙酸等通用有机溶剂中。露置空气中易变色。
由于柳酸甲酯在合成及存放过程中,会分解及生产杂质,严重影响产品口感,为了得到口感良好的产品,需对其进行精制处理。
发明内容
本发明通过对冬青油进行精制处理,提高冬青油的口感,并且以此提供一种饮料用沙示香精及其制备方法。
本发明的目的可以通过以下技术方案实现:
一种饮料用沙示香精,由以下质量百分比原料组成:
冬青油 1.7%;柳酸乙酯 0.15%;苯甲酸甲酯 0.005%;苯甲酸乙酯 0.002%;乙酸乙酯 0.01%;丁酸乙酯 0.01%;乳酸乙酯 0.015%;乙酰丙酸乙酯 0.05%;乙酸橙花酯 0.002%;甜橙油 0.0004%;柠檬油 0.0006%;柠檬醛 0.0002%;芳樟醇 0.001%;壬醛 0.0002%;甲基环戊烯醇酮 0.3%;2-乙酰基吡嗪 0.05%;2,3-二甲基吡嗪 0.006%;乙基麦芽酚 1.8%;麦芽酚 0.5%;呋喃酮 0.3%;香兰素 0.005%;乙基香兰素 0.005%;胡椒醛 0.01%;大茴香醛0.0004%;大茴香醇 0.0002%;乙位突厥酮 0.018%;甲位突厥酮 0.01%;突厥烯酮 0.005%;糠醛 0.08%;5-甲基糠醛 0.05%;丙二醇 94.914%。
本发明在设计上述饮料用沙示香精的配方时,通过GC-MC(气相色谱-质谱联用分析方法)对植物Sarsaparilla(墨西哥菝葜)进行顶空分析,提供沙示香味的香气分类主要是:特征香、果香、柑橘香、焦香、焦甜香、糖香、香草香以及发酵味,针对本发明的配方,其中各香气的来源如下:
特征香料:冬青油,柳酸乙酯,苯甲酸甲酯,苯甲酸乙酯;
果香原料:乙酸乙酯,丁酸乙酯,乳酸乙酯,乙酰丙酸乙酯,乙酸橙花酯;
柑橘香料:甜橙油,柠檬油,柠檬醛,芳樟醇,壬醛;
焦香原料:甲基环戊烯醇酮,2-乙酰基吡嗪,2,3-二甲基吡嗪;
焦甜原料:乙基麦芽酚,麦芽酚,呋喃酮;
香草原料:香兰素,乙基香兰素,胡椒醛,大茴香醛,大茴香醇;
糖香原料:甲位突厥酮,乙位突厥酮,突厥烯酮;
发酵味原料:糠醛,5-甲基糠醛。
进一步地,所述冬青油由以下步骤精制而成:
取冬青油,向中加入0.1-0.5wt%的碳酸氢钠溶液,混合搅拌2-3h,油水分离,取油状物,利用刮膜式分子蒸馏器进行油状物的蒸馏处理,向刮膜式分子蒸馏器的进料口中加入油状物,开启泵,调节真空度达到0.1Pa,设定蒸馏温度212-215℃,调节刮膜转速为220-230r/min,进料速率控制为45-50滴/min,对油状物进行一级分子蒸馏,得到一级重组分和一级轻组分,一级重组分进行二级分子蒸馏,蒸馏温度215-220℃,调节刮膜转速为230-240r/min,进料速率控制为40-45滴/min,得到二级重组分和二级轻组分,二级重组分即为精制后的冬青油。
进一步地,所述冬青油、0.1-0.5wt%的碳酸氢钠溶液的用量比为50g:100mL。
进一步地,所述饮料用沙示香精的制备方法,包括以下步骤:
按质量百分比称取上述原料,向丙二醇中搅拌加入冬青油、柳酸乙酯、苯甲酸甲酯、苯甲酸乙酯、乙酸乙酯、丁酸乙酯、乳酸乙酯、乙酰丙酸乙酯、乙酸橙花酯、甜橙油、柠檬油、柠檬醛、芳樟醇、壬醛、甲基环戊烯醇酮、2-乙酰基吡嗪、2,3-二甲基吡嗪、乙基麦芽酚、麦芽酚、呋喃酮、香兰素、乙基香兰素、胡椒醛、大茴香醛、大茴香醇、乙位突厥酮、甲位突厥酮、突厥烯酮、糠醛和5-甲基糠醛,充分搅拌4-5h后,静置1-2h,得到饮料用沙示香精。
本发明的有益效果:
本发明提供了一种饮料用沙示香精的配方,本发明中配方以特征香气为主题香,搭配焦香、焦甜、糖香,底味组合微量的果香、柑橘、香草、发酵香味的原料,最终制备的香精的香气纯正、舒适、逼真,并且口感天然、自然、回味绵长,食用后口腔内无残留杂味,清新自然。
本发明针对上述配方中的冬青油进行了精制处理,本发明首先利用弱碱去除冬青油中柳酸甲酯分解产生的柳酸及水溶杂质,然后利用二级分子蒸馏技术处理冬青油,本发明严格控制了相关技术参数,最终得到口感纯正的冬青油产品。

其中,刮膜式分子蒸馏器包括加热器、分离柱、冷凝器、集液器、泵、温度控制器、液位计等结构。其中,加热器用于将样品加热到蒸发温度,使其蒸发进入分离柱;分离柱用于分离样品中不同的成分;冷凝器用于将蒸发的样品冷却后变成液体,分离柱内较轻组分被冷凝收集;集液器用于收集分离出来的不同成分;泵用于提供真空环境,帮助样品蒸发进入分离柱;温度控制器用于控制温度;液位计用于监测液位。
实施例1
精制冬青油:
取50g的冬青油,向中加入100mL的0.1wt%的碳酸氢钠溶液,混合搅拌2h,油水分离,取油状物,利用刮膜式分子蒸馏器进行油状物的蒸馏处理,本发明采用二级分子蒸馏技术处理油状物,首先,向刮膜式分子蒸馏器的进料口中加入油状物,开启泵,调节真空度达到0.1Pa,设定蒸馏温度212℃,调节刮膜转速为220r/min,进料速率控制为45滴/min,对油状物进行一级分子蒸馏,得到一级重组分和一级轻组分,一级重组分进行二级分子蒸馏,蒸馏温度215℃,调节刮膜转速为230r/min,进料速率控制为40滴/min,得到二级重组分和二级轻组分,二级重组分即为精制后的冬青油。
实施例2
精制冬青油:
取50g的冬青油,向中加入100mL的0.4wt%的碳酸氢钠溶液,混合搅拌3h,油水分离,取油状物,利用刮膜式分子蒸馏器进行油状物的蒸馏处理,本发明采用二级分子蒸馏技术处理油状物,首先,向刮膜式分子蒸馏器的进料口中加入油状物,开启泵,调节真空度达到0.1Pa,设定蒸馏温度214℃,调节刮膜转速为230r/min,进料速率控制为50滴/min,对油状物进行一级分子蒸馏,得到一级重组分和一级轻组分,一级重组分进行二级分子蒸馏,蒸馏温度218℃,调节刮膜转速为240r/min,进料速率控制为45滴/min,得到二级重组分和二级轻组分,二级重组分即为精制后的冬青油。
实施例3
精制冬青油:
取50g的冬青油,向中加入100mL的0.5wt%的碳酸氢钠溶液,混合搅拌3h,油水分离,取油状物,利用刮膜式分子蒸馏器进行油状物的蒸馏处理,本发明采用二级分子蒸馏技术处理油状物,首先,向刮膜式分子蒸馏器的进料口中加入油状物,开启泵,调节真空度达到0.1Pa,设定蒸馏温度215℃,调节刮膜转速为230r/min,进料速率控制为50滴/min,对油状物进行一级分子蒸馏,得到一级重组分和一级轻组分,一级重组分进行二级分子蒸馏,蒸馏温度220℃,调节刮膜转速为240r/min,进料速率控制为45滴/min,得到二级重组分和二级轻组分,二级重组分即为精制后的冬青油。
实施例4
制备饮料用沙示香精:
首先,饮料用沙示香精由以下质量百分比原料组成:
