背景技术
随着人们生活水平的提高,生活节奏加快,生活压力增大,当前越来越多的人处于亚健康状态,患糖尿病、高血压以及冠心病等疾病的人数越来越多。尤其是糖尿病的患病人数,一直处于持续增加的状态。国际糖尿病联盟最新发布的全球糖尿病地图显示,目前全球糖尿病患病率约为9.1%,患者人数已达4.64亿,仅我国糖尿病人数就高达1.164亿。随着糖尿病患病率的持续上升及年轻化趋势越来越严重,人们对糖尿病的防治越来越重视。
当前,应对糖尿病的主要方法以西医化学合成药物治疗为主。然而,化学合成药物往往存在治疗效果差、人体毒副作用大、易产生药物依赖性等弊端。由于这些弊端的存在,长期使用化学合成药物治疗糖尿病,不仅无法达到根治的目的,还严重拖垮了患者的家庭,使患者家庭承受了巨大的经济负担。近年来,随着中医治本的观念越来越深入人心,特俗医学用途的中医药配方食品也越来越受到人们的青睐。现有的糖尿病友好型特医食品存在配料复杂、添加剂多、效果差和副作用多等弊端,为此,本发明提出一种糖尿病友好型特医食品及其制备方法,以解决现有产品的不足之处。
发明内容
为了解决化学合成药物存在的治疗效果差、人体毒副作用大、易产生药物依赖性以及现有糖尿病友好型特医食品存在的效果差、添加剂多、营养单一、技术复杂等诸多弊端,本发明提供了一种配料简单、无化学添加剂、效果显著、营养全面的糖尿病友好型特医食品及其制备方法。以高直链淀粉和分离蛋白为主要原料,利用二者食用后不产生胰岛素抗性和血糖波动的特点,研制一种糖尿病及潜在糖尿病人群均可食用的营养丰富的糖尿病友好型食品。本发明,对于推动大米行业的产业升级和实现大豆行业的高值化利用具有重要意义。
具体地,本发明的技术方案如下所述:
一种糖尿病友好型特医食品包括如下质量比成分:高直链淀粉180-380份,蛋白120-180份,全脂乳粉120-180份,罗汉果提取物20-30份,甜叶菊提取物0.01-0.05份,复合维生素0.1-1份,复合矿物质元素0.1-1份,苦瓜提取物0.1–0.3份,天然淀粉衍生物0.15–0.45份。
本发明所述高直链淀粉为采用温水抽提法分离所得的籼稻高直链淀粉,蛋白为大豆分离蛋白,全脂乳粉为牛乳乳粉,罗汉果提取物为罗汉果糖,甜叶菊提取物为甜叶菊糖,苦瓜提取物为苦瓜素,天然淀粉衍生物为β-环糊精。
本发明所述复合维生素包括:维生素A、维生素B1、维生素B2、维生素B6、维生素B12、维生素C、维生素D、维生素E、维生素K、叶酸和生物素中的一种或多种,且添加量复合有关国家标准。
所述复合矿物质元素包括:磷元素、硫元素、氯元素、钙元素、镁元素、钾元素、硒元素、铁元素和氟元素中的一种或多种,且添加量复合有关国家标准。
一种糖尿病友好型特医食品的制备方法,包括以下步骤:
步骤1β-环糊精和苦瓜素混合溶液的制备:按比例称取一定质量的β-环糊精和苦瓜素,β-环糊精和苦瓜素的质量比为1:1,1:1.5和1:2。将称取好的β-环糊精置于具塞锥形瓶中,在40-60摄氏度下水浴加热、持续搅拌10-30分钟的条件下,制备成含量为2%(w/v)的β-环糊精水溶液。将一定质量的苦瓜素粉末加入到β-环糊精水溶液中,充入惰性气体保护,封好瓶口,持续搅拌24小时,操作过程全程避光处理;
步骤2苦瓜素/β-环糊精包合物冻干粉的制备:搅拌结束后,将混合液冷却后放入-20摄氏度冰箱冷冻,混合液冷冻时间为12-36小时,使用冷冻干燥机进行24-72小时冷冻干燥,制得苦瓜素/β-环糊精包合物,备用;

1、工艺简单,配料选材绿色安全,营养全面。主要原料籼稻高直链淀粉和大豆分离蛋白,在食用后均不会引起血糖波动,且具有一定的改善肠道菌群的作用。全脂乳粉可以补充适量的动物脂肪和微量元素,辅料选用的维生素B1、维生素B6、维生素B12、维生素C、维生素D和维生素E等维生素均具有一定降血糖作用。添加了具有降血糖作用的活性物质苦瓜素,并使用β-环糊精为壁材通过包埋技术改善了苦瓜素的不良风味。选用甜菊糖和罗汉果糖等热量低且不会引起血糖波动的原料作为甜味剂,改善了糖尿病友好型特医食品的风味。
2、膳食纤维含量丰富,选用的高直链淀粉为缓释型碳水化合物,GI值和GL值均较低,具有稳定血糖指数和促进肠道消化的作用。大豆分离蛋白适度水解,在保证产品良好的风味的同时,还提高了蛋白的消化吸收率。

9、灭菌:在135摄氏度条件下进行高温蒸汽灭菌,灭菌产品进行无菌储存;
10、检测和封装:检测合格后进行分装,对成品的组成成分和安全性进行检测与评价,检测合格后,视为糖尿病友好型特医食品制备完成。
实施例三:
一种糖尿病友好型特医食品包括如下质量比成分:一种糖尿病友好型特医食品包括如下质量比成分:高直链大米淀粉300份,大豆分离蛋白200份,全脂乳粉200份,罗汉果糖25份,甜叶菊糖0.02份,复合维生素0.2份,复合矿物质元素0.2份,苦瓜素0.1份,β-环糊精0.15份。
所述高直链淀粉为采用温水抽提法分离所得的籼稻高直链淀粉,蛋白为大豆分离蛋白,罗汉果提取物为罗汉果糖,甜菊提取物为甜菊多糖,苦瓜提取物为苦瓜素,天然淀粉衍生物为β-环糊精。所述维生素包括:维生素B1、维生素B6、维生素B12、维生素C、维生素D和维生素E,并按照1.5:0.5:1:1:1:1的质量比复配。
一种糖尿病友好型特医食品的制备方法,包括以下步骤:
1、β-环糊精和苦瓜素混合溶液的制备:按比例称取一定质量的β-环糊精和苦瓜素,β-环糊精和苦瓜素的质量比为1:1.5,将β-环糊精置于具塞锥形瓶中,在50摄氏度下水浴加热、持续搅拌15分钟的条件下制备含量为2%(w/v)的β-环糊精水溶液,将一定质量的苦瓜素粉末加入β-环糊精水溶液中,充入惰性气体保护,封好瓶口,持续搅拌24小时,操作过程全程避光处理;
2、苦瓜素/β-环糊精包合物冻干粉的制备:搅拌结束后,将混合液冷却后放入冰箱,混合液冷冻时间为24小时,使用冷冻干燥机进行48小时冷冻干燥,制得苦瓜素/β-环糊精包合物,消除苦瓜素本身具有的苦味,备用;
3、大豆分离蛋白适度水解:使用适量的蛋白酶在一定的条件下将部分大豆分离蛋白降解为多肽,大豆蛋白水解率为8%,水解完成后进行灭酶处理,并进行喷雾干燥,制备成含多肽的大豆分离蛋白粉,采用超微粉碎仪进行超微粉碎,并过80目筛,备用;
4、超微粉碎全脂乳粉:采用超微粉碎仪对全脂乳粉进行超微粉碎,并过80目筛,备用;
5、超微粉碎全脂乳粉:采用超微粉碎仪对全脂乳粉进行超微粉碎,并过80目筛,备用;
6、混合料A:使用混合设备在一定条件下,将所得籼稻高直链淀粉、大豆蛋白多肽粉和全脂乳粉进行混合,制备成混合料A,备用;
7、混合料B:检测罗汉果糖,甜菊糖,复合维生素,复合矿物质素和苦瓜素/β-环糊精包合物的物性,检测合格后将上述辅料进行混合,制备成混合料B,备用;
8、混料:使用混合设备在一定条件下,将混合料A和混合料B混合均匀;
9、灭菌:在135摄氏度条件下进行高温蒸汽灭菌,灭菌产品进行无菌储存;
10、检测和封装:检测合格后进行分装,对成品的组成成分和安全性进行检测与评价,检测合格后,视为糖尿病友好型特医食品制备完成。
产品评价与检测
本发明制备的糖尿病友好型特医食品以具有法定资质的食品检验机构,出具的产品合格检验报告为依据,并参考相关食品安全国家标准执行。同时依据有关国家标准对糖尿病友好型特医食品中污染物限量、毒素限量和微生物限量进行检测,检测结果显示所制备糖尿病友好型特医食品完全符合国家标准。
感官评价
寻找30位志愿者,对以上三个实施例进行感官评价。感官评价结果显示本发明制备的糖尿病友好型特医食品具有良好的感官特性,粉末细腻均匀无颗粒感,色泽为乳白色或乳黄色,气味呈纯正,无异味,无粘连,产品溶解性好,甜度适中。
升糖指数和升糖负荷检测
实施例一至实施例三的升糖指数(GI)结果,是10位健康志愿者空腹12小时后吃进含有50g碳水化合物的糖尿病友好型特医食品后,2小时内的血糖指数的变化和同组志愿者吃进50g葡萄糖后,2小时内的血糖指数变化结果计算而来的平均值。升糖负荷(GL)结果根据平均GI值计算得出,对照组为某市售糖尿病友好型产品,具体结果如表1所示:

Claims (6)
1.一种糖尿病友好型特医食品,其特征在于:包括如下质量比成分:高直链淀粉180-380份,蛋白120-180份,全脂乳粉120-180份,罗汉果提取物20-30份,甜叶菊提取物0.01-0.05份,复合维生素0.1-1份,复合矿物质元素0.1-1份,苦瓜提取物0.1–0.3份,天然淀粉衍生物0.15–0.45份。
2.根据权利要求1所述的一种糖尿病友好型特医食品,其特征在于:本发明所述高直链淀粉为采用温水抽提法分离所得的籼稻高直链淀粉,蛋白为大豆分离蛋白,全脂乳粉为牛乳乳粉,罗汉果提取物为罗汉果糖,甜叶菊提取物为甜叶菊糖,苦瓜提取物为苦瓜素,天然淀粉衍生物为β-环糊精。
3.根据权利要求1所述的一种糖尿病友好型特医食品,其特征在于:本发明所述复合维生素包括:维生素A、维生素B1、维生素B2、维生素B6、维生素B12、维生素C、维生素D、维生素E、维生素K、叶酸和生物素中的一种或多种,且添加量复合有关国家标准。
4.根据权利要求1所述的一种糖尿病友好型特医食品,其特征在于:所述复合矿物质元素包括:磷元素、硫元素、氯元素、钙元素、镁元素、钾元素、硒元素、铁元素和氟元素中的一种或多种,且添加量复合有关国家标准。
5.根据权利要求1所述的一种糖尿病友好型特医食品的制备方法,其特征在于:步骤1按β-环糊精和苦瓜素的质量比为1:1,1:1.5和1:2的质量比称取β-环糊精和苦瓜素,将称取好的β-环糊精置于具塞锥形瓶中,在40-60摄氏度下水浴加热、持续搅拌10-30分钟的条件下,制备成含量为2%(w/v)的β-环糊精水溶液,苦瓜素粉末加入到β-环糊精水溶液中,充入惰性气体保护,封好瓶口,持续搅拌24小时,操作过程全程避光处理;步骤2将步骤1所得混合液冷却后放入-20摄氏度冰箱冷冻12-36小时,再冷冻干燥24-72小时,制得苦瓜素/β-环糊精包合物;步骤3使用适量的蛋白酶在一定的条件下将部分大豆分离蛋白降解为多肽,大豆分离蛋白水解率为5%-10%,水解完成进行灭酶处理后进行喷雾干燥,制备成含多肽的大豆分离蛋白粉,采用超微粉碎仪进行超微粉碎,并过60-100目筛;步骤4将籼稻高直链淀粉进行超微粉碎,并过60-100目筛;步骤5采用超微粉碎仪对全脂乳粉进行超微粉碎,并过60-100目筛;步骤6使用混合设备在一定条件下,将所得籼稻高直链淀粉、大豆蛋白多肽粉和全脂乳粉进行混合,制备成混合料A;步骤7检测罗汉果糖,甜菊糖,复合维生素,复合矿物质素和苦瓜素/β-环糊精包合物的物性,检测合格后将上述辅料进行混合,制备成混合料B;步骤8使用混合设备在一定条件下,将混合料A和混合料B混合均匀;步骤9在120-140摄氏度条件下进行高温蒸汽灭菌;步骤10检测合格后进行分装,对成品的组成成分和安全性进行检测与评价,检测合格后,视为糖尿病友好型特医食品制备完成。
6.根据权利要求5所述的一种糖尿病友好型特医食品的制备方法,其特征在于:步骤1中,所述的β-环糊精和苦瓜素的质量比为1:1.5,水浴加热温度为50摄氏度加热,搅拌时间为15分钟;步骤2中,所述的混合物液冷冻时间为24小时,冷冻干燥时间为48小时;步骤3中,所述的大豆分离蛋白粉过80目筛;步骤4中,所述的籼稻高直链淀粉过80目筛;发明步骤5中,所述的全脂乳粉过80目筛;步骤9中,所述的灭菌温度为135摄氏度。
