Abstract
本发明公开了一种三七花中胰蛋白酶抑制剂的处理方法,将新鲜的三七花,用清水冲洗干净;之后将其放入含维生素C、L‑半胱氨酸盐酸盐及硫酸锌混合溶液的包装袋中,让液体浸没三七花,然后进行密封包装;将包装好的三七花置于超高压容器中进行超高压处理;将经过超高压处理后的包装袋中的液体过滤掉,即可进入下道工序。本发明以维生素C、L‑半胱氨酸盐酸盐及硫酸铜协同超高压处理三七花,是将钝化胰蛋白酶抑制剂活性与护绿技术有效组合,既能有效保护原料的天然绿色,又可破坏三七花中的抗营养因子——胰蛋白酶抑制剂,使三七花的颜色和营养成分保持良好,为其直接食用或后续加工打下良好的基础。

技术领域
本发明涉及一种三七花中胰蛋白酶抑制剂的处理方法,属于食品营养领域。
背景技术
三七花化学成分以人参皂苷Rb3、人参皂苷Rb1等二醇型皂苷为主,是三七全株中皂苷含量最高部位,是三七茎叶含量的5~10倍,具有清凉、平肝、潜阳、降压之效。 三七花多年来一直深受消费者的喜爱,其降血压,降血脂的功效超越了三七主根;三七花是泡茶和生产茶叶饮品的好原料,长期服用对于疾病治疗和养生保健都颇有神益。
但是,三七花中含有较多的抗营养因子—— 胰蛋白酶抑制剂,当胰蛋白酶抑制剂进入人体后,可以迅速与小肠内的胰蛋白酶和胰凝乳蛋白酶发生反应,形成稳定的复合物而使后者失去活性,从而导致人体对蛋白质的消化率降低。迄今,现在技术中没有三七花中蛋白酶抑制剂处理方法的报道。
虽然三七花的食用价值早已为民间所证实,但如果不对其中的抗营养因子——胰蛋白酶抑制剂处理掉,会影响人体对蛋白质的消化吸收。本发明以维生素C、L- 半胱氨酸盐酸盐及硫酸锌协同超高压处理三七花,是将钝化胰蛋白酶抑制剂活性与护绿技术有效组合,既能有效保护原料的绿色,同时又钝化了三七花中的胰蛋白酶抑制剂,提高了其食用价值,为其直接食用或后续加工打下良好的基础。
发明内容
本发明的目的在于提供一种三七花中抗营养因子—— 胰蛋白酶抑制剂的处理方法,该方法是将新鲜的三七花,用清水冲洗干净后沥干水分;之后将其放入含质量百分比0.3%~0.5%的Vc、0.002%~0.004%的L - 半胱氨酸盐酸盐、0.006%~0.01%的硫酸锌水溶液的包装袋中,以液体刚刚浸没三七花为宜,然后进行密封包装;将包装好的三七花置于400~600MPa下进行超高压处理8~20分钟;然后开袋滤去液体,即可。
本发明方法的具体操作步骤如下:
(1)选料、清洗:选新鲜的三七花,用流动清水洗涤干净,沥干水分后备用;
(2)配复合液:复合液的组成物及质量百分比为0.3%~0.5%的Vc、0.002%~0.004%的L - 半胱氨酸盐酸盐、0.006%~0.01%的硫酸锌,其余为水。目的在于:1)协同超高压处理钝化三七花中胰蛋白酶抑制剂的活性;2)保护三七花的绿色;

(4)超高压处理:将密封包装好的三七花置于400~600MPa下进行超高压处理8~20分钟,然后开袋滤去液体,即可。
本发明的有益效果是:以维生素C、L- 半胱氨酸盐酸盐及硫酸锌协同超高压处理三七花,是将钝化胰蛋白酶抑制剂活性与护绿技术有效组合,既能有效保护原料的天然绿色,同时还使得三七花中的抗营养因子—— 胰蛋白酶抑制剂被钝化,提高了其食用价值,为其直接食用或后续加工打下良好的基础。

下面给出本发明具体的实施例对本发明作进一步说明,但本发明的保护范围不限于所述内容,本实施例中方法如无特殊说明的均按常规方法操作,所用试剂如无特殊说明的采用常规试剂或按常规方法配置的试剂。
实施例1
(1)选料、清洗:选新鲜的三七花,用流动清水洗涤干净,沥干水分后备用;
(2)配复合液:复合液的组成物及质量百分比为0.3%的Vc、0.004%的L - 半胱氨酸盐酸盐、0.006%的硫酸锌,其余为水。目的在于:1)协同超高压处理钝化三七花中胰蛋白酶抑制剂的活性;2)保护三七花的绿色;
(3)装袋包装:将用流动清水洗涤干净后的三七花装入包装袋中,之后注入复合液,以复合液刚刚浸没三七花为宜,然后进行密封包装;
(4)超高压处理:将密封包装好的三七花置于400MPa下进行超高压处理20分钟,然后开袋滤去液体,即可。

(3)装袋包装:将用流动清水洗涤干净后的三七花装入包装袋中,然后注入复合液,以复合液刚刚浸没三七花为宜,然后进行密封包装;
(4)超高压处理:将密封包装好的三七花置于600MPa下进行超高压处理8分钟,然后开袋滤去液体,即可。
实施例3
(1)选料、清洗:选新鲜的三七花,用流动清水洗涤干净,沥干水分后备用;
(2)配复合液:复合液的组成物及质量百分比为0.4%的Vc、0.003%的L - 半胱氨酸盐酸盐、0.008%的硫酸锌,其余为水。目的在于:1)协同超高压处理钝化三七花中胰蛋白酶抑制剂的活性;2)保护三七花的绿色;
(3)装袋包装:将用流动清水洗涤干净后的三七花装入包装袋中,然后注入复合液,以复合液刚刚浸没三七花为宜,然后进行密封包装;
(4)超高压处理:将密封包装好的三七花置于500MPa下进行超高压处理14分钟,然后开袋滤去液体,即可。
对处理前后三七花中胰蛋白酶抑制剂活性进行分析检测,结果见表1:

结果显示:所用处理技术使得三七花中胰蛋白酶抑制剂的活性全部为零。

1.一种三七花中胰蛋白酶抑制剂的处理方法,其特征在于:将新鲜的三七花,用清水冲洗干净后沥干水分;之后将其放入含质量百分比0.3%~0.5%的维生素C、质量百分比0.002%~0.004%的L- 半胱氨酸盐酸盐、质量百分比0.006%~0.01%的硫酸锌水溶液的包装袋中,让液体浸没三七花,然后进行密封包装;将包装好的三七花置于400~600MPa下进行超高压处理8~20分钟,然后开袋滤去液体,即可。
