Abstract
本发明公开了一种完全包被型鱼油微胶囊,包括芯材与壁材,所述芯材由重量比为1:4~10的鱼油和淀粉混合;所述壁材为高熔点油脂;芯材与壁材的重量比为1~4:1。同时,本发明还公开了上述完全包被型鱼油微胶囊的制备方法。本发明公开的鱼油微胶囊不含乳化剂且成本低,在高温、氧气、光照环境中稳定,因为没有使用鱼油先加水和乳化剂做成乳液再喷雾干燥的工艺,避免水分蒸干时在微胶囊表面壁材遗留气孔;本发明制备方法采用高熔点油脂融化后均匀喷涂于鱼油颗粒,冷却后凝固成壳,使鱼油隔绝空气、光,避免氧化,能够在食品、医药、养殖等行业中广泛应用。
Description
技术领域
本发明属于添加剂制作的技术领域,主要涉及一种以鱼油为主要原料的完全包被型鱼油微胶囊及其制备方法。
背景技术
鱼油富含人体所必需的ω-3多不饱和脂肪酸EPA和DHA,在防治心血管疾病、提高视力、帮助婴幼儿智力发育等方面具有重要作用,但鱼油在常温下呈液态,有鱼腥味,所含的不饱和脂肪酸遇高温、氧气、光照环境中极易氧化变质,做成微胶囊一定程度掩盖减弱了这些缺点。通常将鱼油作为芯材,糖类、蛋白质等作为壁材配合乳化剂做成乳液,高压均质后喷雾干燥,壁材包裹芯材形成微胶囊,不仅能耗高增加成本,同时内部水分蒸发过程一般会在微胶囊表面形成气孔通道,从而使得抗氧化效果不尽人意。
例如授权公开号CN107484985B的一种自乳化鱼油微胶囊专利,以鱼油为芯材,以OSA淀粉酯和麦芽糊精为壁材混合乳化均质后喷雾干燥得到微胶囊粉末,其工艺较为复杂、能耗高,并且包被不完全。另外传统的微胶囊制备工艺都需要添加乳化剂,而乳化剂的摄入对生物体会产生潜在的危害(食品乳化剂联合PEs长期低剂量暴露对雄性生殖功能的影响,高海涛等,2017)。
发明内容
发明目的:本发明的目的在于针对现有技术的不足,提供一种完全包被型鱼油微胶囊。
本发明的另一目的在于提供上述完全包被型鱼油微胶囊的制备方法。
技术方案:为了达到上述发明目的,本发明具体是这样来实现的:一种完全包被型鱼油微胶囊,包括芯材与壁材,所述芯材由重量比为1:4~10的鱼油和淀粉混合;所述壁材为高熔点油脂;芯材与壁材的重量比为1~4:1。
其中,所述淀粉为玉米淀粉、木薯淀粉中一种或多种。
其中,所述高熔点油脂的熔点在60℃以上。
制备完全包被型鱼油微胶囊的方法,包括以下步骤:
(1)将鱼油逐步加入干燥淀粉,边加边搅拌,使得鱼油被淀粉充分吸附,鱼油和淀粉重量比为1:4~10;
(2)吸附鱼油的淀粉作为芯材进入流化床后,用加热熔化的高熔点油脂作为壁材进行喷涂,芯材:壁材重量比1~4:1,;
(3)喷涂后的微胶囊经流化床吹入冷风冷却后即得产品。
有益效果:本发明与传统技术相比,具有以下优点:
(1)本发明公开的鱼油微胶囊不需要乳化工艺,而是采用固体小颗粒吸附的方法,用淀粉颗粒吸附鱼油作为胶囊内核,然后外层喷涂高熔点油脂作为胶囊外壳,过程中不需要水,不含乳化剂且成本低,在高温、氧气、光照环境中稳定,因为没有使用鱼油先加水和乳化剂做成乳液再喷雾干燥的工艺,避免水分蒸干时在微胶囊表面壁材遗留气孔;
(2)本发明公开的鱼油微胶囊颗粒均匀,流动性好,不仅可以有效保护鱼油DHA和EPA氧化,同时也消除鱼腥味;
(3)本发明制备方法采用高熔点油脂融化后均匀喷涂于鱼油颗粒,冷却后凝固成壳,使鱼油隔绝空气、光,避免氧化,能够在食品、医药、养殖等行业中广泛应用。
具体实施方式
实施例1:
将鱼油逐步加入干燥淀粉,边加边搅拌,使得鱼油被淀粉充分吸附,鱼油和淀粉重量比为1:4;吸附鱼油的淀粉作为芯材进入流化床后,用加热熔化的高熔点油脂作为壁材进行喷涂,芯材:壁材重量比1:1,;喷涂后的微胶囊经流化床吹入冷风冷却后即得产品。
所得鱼油微胶囊,粒径均匀,在50℃、普通日光照射、敞开存放条件下贮存4个月后,鱼油微胶囊中EPA和DHA的保留率仍有98.5%左右,相比较于普通喷雾干燥产品保留率90.2%,提高了8.3%,有效达到了鱼油的抗氧化效果,并且感官上鱼腥味也大大降低。
实施例2:
将鱼油逐步加入干燥淀粉,边加边搅拌,使得鱼油被淀粉充分吸附,鱼油和淀粉重量比为1:6;吸附鱼油的淀粉作为芯材进入流化床后,用加热熔化的高熔点油脂作为壁材进行喷涂,芯材:壁材重量比2:1,;喷涂后的微胶囊经流化床吹入冷风冷却后即得产品。
所得鱼油微胶囊,粒径均匀,在55℃、普通日光照射、敞开存放条件下贮存4个月后,鱼油微胶囊中EPA和DHA的保留率仍有97.3%左右,相比较于普通喷雾干燥产品保留率89.6%,提高了7.7%,有效达到了鱼油的抗氧化效果,并且感官上鱼腥味也大大降低。
实施例3:
将鱼油逐步加入干燥淀粉,边加边搅拌,使得鱼油被淀粉充分吸附,鱼油和淀粉重量比为1:7;吸附鱼油的淀粉作为芯材进入流化床后,用加热熔化的高熔点油脂作为壁材进行喷涂,芯材:壁材重量比2:1,;喷涂后的微胶囊经流化床吹入冷风冷却后即得产品。
所得鱼油微胶囊,粒径均匀,在60℃、普通日光照射、开放条件下贮存4个月后,鱼油微胶囊中EPA和DHA的保留率仍有95.5%左右,相比较于普通喷雾干燥产品保留率83.2%,提高了12.3%,有效达到了鱼油的抗氧化效果,并且感官上鱼腥味也大大降低。
实施例4:
将鱼油逐步加入干燥淀粉,边加边搅拌,使得鱼油被淀粉充分吸附,鱼油和淀粉重量比为1:8;吸附鱼油的淀粉作为芯材进入流化床后,用加热熔化的高熔点油脂作为壁材进行喷涂,芯材:壁材重量比3:1,;喷涂后的微胶囊经流化床吹入冷风冷却后即得产品。
所得鱼油微胶囊,粒径均匀,在60℃、普通日光照射、开放条件下贮存4个月后,鱼油微胶囊中EPA和DHA的保留率仍有92.4%左右,相比较于普通喷雾干燥产品保留率83.2%,提高了9.2%,有效达到了鱼油的抗氧化效果,并且感官上鱼腥味也大大降低。
实施例5:

Claims (4)
1.一种完全包被型鱼油微胶囊,其特征在于,包括芯材与壁材,所述芯材由重量比为1:4~10的鱼油和淀粉混合;所述壁材为高熔点油脂;芯材与壁材的重量比为1~4:1。
2.根据权利要求1所述的完全包被型鱼油微胶囊,其特征在于,所述淀粉为玉米淀粉、木薯淀粉中一种或多种。
3.根据权利要求1所述的完全包被型鱼油微胶囊,其特征在于,所述高熔点油脂的熔点在60℃以上。
4.制备权利要求1~3任一所述完全包被型鱼油微胶囊的方法,其特征在于,包括以下步骤:
(1)将鱼油逐步加入干燥淀粉,边加边搅拌,使得鱼油被淀粉充分吸附,鱼油和淀粉重量比为1:4~10;
(2)吸附鱼油的淀粉作为芯材进入流化床后,用加热熔化的高熔点油脂作为壁材进行喷涂,芯材:壁材重量比1~4:1;
(3)喷涂后的微胶囊经流化床吹入冷风冷却后即得产品。
