Abstract

本发明解决上述技术问题的技术方案如下:一种参多糖甜婺金花红茶,其由以下重量百分数的各原料组成:人参多糖粉10-40%;葛根膳食纤维素粉5-25%;食用菌多糖粉0.5-5%;淼甜婺金花红茶粉40-70%;脱乙酰基甲壳素粉2-10%;微晶纤维素粉0.5-2.5%。
在上述技术方案的基础上,本发明还可以做如下具体选择。
具体的,淼甜婺金花红茶粉由淼甜婺金花红茶粉碎而成,淼甜婺金花红茶通过以下方法制得:由掌叶覆盆子甜叶、木姜叶柯叶和山茶树茶叶分别先按凉晒、萎凋、杀青、揉捻、固态发酵和低温干燥的发酵茶加工工艺初加工成初发酵毛茶,然后按照1:1:1-3的重量比例充分混合后复合发酵,再汽蒸、紧压、低温发花、低温干燥,即得,低温干燥的温度控制在26-30℃,低温发花的温度控制在16-22℃。
具体的,所述食用菌多糖粉以猴头菇、香菇和杏鲍菇中的一种或多种为原料提取得到。
在上述技术方案的基础上,本发明还提供了制备上述参多糖甜婺金花茶的方法,其包括如下步骤:
步骤A:将淼甜婺金花红茶发花发酵茶原料进行开片、切块、粉碎和过筛,制成淼甜婺金花红茶粉,备用;
步骤B:将人参多糖粉、葛根膳食纤维素粉和食用菌多糖粉按照其重量百分数进行称量并混合,再添加相应量的脱乙酰基甲壳素粉并混合均匀,即得多糖复合粉备用;
步骤C:称取相应重量百分数的步骤A的淼甜婺金花红茶粉并与步骤B得到的相应量的多糖复合粉混合,最后添加相应重量百分数的微晶纤维素粉后,充分混合,搅拌条件下在相对湿度65%,温度22-24℃下,处理3-7天,然后进行干燥,升温至42℃并保持,开启除湿设备,直至相对湿度降低至13%以下,即得所述参多糖甜婺金花红茶原料产品。

本发明采用的人参多糖粉由人参提取而来,人参多糖是研究较早的多糖类生物活性成分,其生物活性在对免疫功能的调节影响以及由此产生的免疫性抗肿瘤活性等方面则有凸出表现。人参多糖为淡黄色至黄褐色粉末,可溶于热水。具有增强免疫力,促进造血,降血糖,抗利尿,抗衰老,抗血栓,抗菌,抗炎,抗肿瘤等功能。对于女性而言,人参还具有补血补气、调节经期、美容养颜等诸多功效。

本发明采用的食用菌多糖粉,优选提取自猴头菇、香菇和杏鲍菇。在国际上,食用菌多糖被称为称为“生物反应调节物”,简称“BRM”,经研究表明,多糖具有生物反应调节物的特征,可做为免疫增强剂和免疫激活剂,这些活性多糖具有一个的结构,即主链由β-D(1-73)连接的葡萄糖基组成,沿主链随机分布着同β-D(1-73)边接的葡萄糖基呈梳状结构,生物的大小随多糖的精细结构和构象不同而变化。食用菌多糖是一种特殊的生物活性物质,是一种生物反应增强剂和调节剂,它能增强体液免疫和细胞免疫功能。食用菌多糖的抗病毒作用机制可能在于其提高感染细胞免疫力,增强细胞膜的稳定性,抑制细胞病变,促进细胞修复等功能。同时,食用菌多糖还具有抗逆转录病毒活性。因此,食用菌多糖是一种有待开发的抗流感的保健食品。
本发明采用的脱乙酰基甲壳素又称壳聚糖,其为天然多糖甲壳素脱除部分乙酰基的产物,具有生物降解性、生物相容性、无毒性、抑菌、抗癌、降脂、增强免疫等多种生理功能,广泛应用于食品添加剂、纺织、农业、环保、美容保健、化妆品、抗菌剂、医用纤维、医用敷料、人造组织材料、药物缓释材料、基因转导载体、生物医用领域、医用可吸收材料、组织工程载体材料、医疗以及药物开发等众多领域和其他日用化学工业。
本发明采用的微晶纤维素(mcc)系用纯棉纤维经水解制得的粉末,纯含纤维素为97.0%~102.0%。是能自由流动的结晶粉末(非纤维状的微粒子)。不溶于水、稀释的酸和多数的有机溶剂,微溶于20%的碱溶液。在辅料方面用途广泛,可直接用于干粉压片,广泛用作药物赋形剂、流动性助剂、填充物、崩解剂、抗粘剂、吸附剂等。
本发明采用的淼甜婺金花茶由掌叶覆盆子甜叶、木姜叶柯甜叶(简称甜茶)和山茶树茶叶为原料制成,其制备方法为,将掌叶覆盆子甜叶、木姜叶柯甜叶和山茶科茶叶分别发酵毛茶,该加工工艺为现有技术,包括凉晒、萎凋、杀青、揉捻、发酵和低温干燥步骤,其工艺参数可参考现有制茶技术选择;然后将掌叶覆盆子甜叶、木姜叶柯甜叶和山茶科茶叶初加工成的发酵毛茶,然后按照1:1:1-3的重量比例充分混合后复合发酵,再汽蒸、紧压、低温发花和低温干燥,得成品,其为发酵淼甜婺红茶且为砖块状。
关于掌叶覆盆子甜叶茶,覆盆子中药名是中国古代东晋时期道家道医葛洪命名,由古籍书《抱朴子》文献记载所证实。覆盆子是常用的传统中药,属于我国卫生健康委公布的药食资源,2021年2月23日国家卫生健康委行政部门对覆盆子甜叶为食品原料终止审查;传统中医证实:覆盆子性平、无毒、味甘、酸,入肝、肾、膀胱经;具有生津止渴、护肝明目、益肾固精、收敛止泻作用。适用治疗肾虚、尿频遗尿、糖尿病,女性内分泌失调、子宫寒冷、阴湿带下症状。
掌叶覆盆子叶茶经相关科研团队基础研究或相关科研证实:覆盆子甜茶含有甜茶素(rubusoside)、茶多酚、黄酮类化合物甜茶苷等多种生理活性成分,具有抑菌、抗炎、抗过敏功能;具有调节内分泌、降血糖、降血脂,调理人体免疫功能等功效作用。
木姜叶柯的嫩叶有甜味,居民用其叶作茶叶代品,通称甜茶,其作为一种长期被人们广泛使用的别样茶,在2017年通过了国家卫计委的审批可以作为新资源食品使用。中国农业科学院都市农业研究所等权威科研单位的研究表明,甜茶富含二氢查耳酮,主要是根皮苷、三叶苷、根皮素等,甜茶及其二氢查耳酮具有许多健康益处,例如抗氧化、抗炎、抑菌、心脏保护、保肝、抗糖尿病和抗癌作用,这些作用与调节不同的分子靶标和信号传导途径有关。此外,甜茶及其二氢查耳酮成分还展现出了心脏保护、保肝、神经保护和抗肥胖等健康益处。研究表明,甜茶二氢查耳酮可改善心血管疾病的危险因素,如高血压、高血脂、高尿酸、动脉粥样硬化等,且无明显副作用。另外根皮素和根皮苷在不同的化学性肝损伤动物模型中均发挥了积极作用,并可改善肝脏组织病理学病变和肝功能指标。在动物模型中,根皮苷可以缓解神经炎症,改善认知缺陷以及增加记忆存储。此外,根皮苷还有抗肥胖的潜力,可以改善饮食诱导肥胖,其作用机制包括提高棕色脂肪组织的生热作用和降低胰岛素抵抗。
山茶树茶叶是山茶科山茶属植物的叶子制成的茶叶,本发明中优选使用武陵山脉区域、恩施地区富硒地带的制利川红茶的茶树品种。利川红茶叶富含硒;利川红茶色泽乌润,内质清芳并带有蜜糖香味,上品茶更蕴含着兰花香,馥郁持久的特点;茶汤色红艳明亮、滋味鲜醇酣厚、香气清香特久,叶底(泡过的茶渣)红亮。利川红茶具有抗疲劳、清热消暑、利尿、解毒杀菌、稳定血糖等诸多功效。
冠突散囊菌俗称“金花”,属于散囊菌目发菌科散囊菌属的一种真菌,由子囊果和菌丝组成,营养要求低,可在马铃薯葡萄糖琼脂培养基、孟加拉红培养基生长,适应性强,能利用多种氮源、碳源,是茯砖茶发酵过程中的优势菌种,其从茶叶中获取营养物质,通过自身代谢,产生多种酶催化茶叶中各种物质发生转化,形成了茯砖茶特有的色、香、味品质,故其是评价茯砖茶品质的重要指标。茯砖茶真正的“金花”也是“冠突散囊菌”,在存期久远茶品中可能出现。制成的茶品在外冷内热、外干内湿的前提下,茶品内果实较多或鲜叶较粗老而茶叶渗出物浓稠情况下,且得有“冠突散囊菌”存在于茶原料内;或在制成品后摊晾过程遇有此类微生物附着,还得在短期内形成最初的微小群落,才能在以后的储藏过程中逐步生长。
与现有技术相比,本发明的有益效果是:
本发明提供的参多糖甜婺金花红茶原料产品中首次将植物多糖(人参多糖、食用菌多糖等)与动物多糖(壳聚糖)配合,其中动物多糖具有一定的黏膜修复作用并促进植物多糖吸收,能够保证该原料产品中的有效多糖成分更易被人体吸收,从而起到增强免疫、膳食营养的效果。利用掌叶覆盆子、木姜叶柯叶和山茶树叶三元复合发酵,发酵后茶多糖和多酚含量比同等质量的任一种单一组分的发酵茶更高,能够保证生产时金花更快更好的产生,金花茶的品质更高,冠状散囊菌菌落更密,发展更好。多种植物多糖成分与金花茶混合,强化冠状散囊菌的成长条件,促使其再次生长,提升有效成分含量。
本发明的参多糖淼甜婺金花红茶是通过各种有效成份配合,以生津、清热、抗炎、抗敏,调理气血平衡,护理肺、肝、肾、心脑血管等功能,增强人的免疫代谢营养,促进人体胃肠道、血液代谢排毒功能,达到预防、辅助医疗、康复女性慢性疾病的目的。因此,本发明是在历史实践证明传统中医药食药两用茶通过现代生命科学和营养学理论,科学论证传统中医药有效抗炎、抗敏有效成分机理,使参多糖、葛根膳食纤维素、茶多酚、茶多糖、甜茶素等有益有效可测定成分结合成为分子团,使其形成具有免疫营养、促进代谢排毒功能以及防疫、等必然功能作用的新产品。参多糖淼甜婺金花红茶产品可供给人体机体免疫营养、促进能量排毒代谢,改善人体营养平衡,能起到重要特殊膳食的饮食疗作用。
具体实施方式
以下具体实施例对本发明的原理和特征进行描述,所举实例只用于解释本发明,并非用于限定本发明的范围。
以下实施例中用到的淼甜婺金花红茶均由以下方法制备得到:由掌叶覆盆子甜叶、木姜叶柯叶和山茶树茶叶分别先按凉晒、萎凋、杀青、揉捻、固态发酵和低温干燥的发酵茶工艺初加工成毛茶,然后按照1:1:3的重量比例充分混合后,再汽蒸、紧压、低温发花和干燥,即得。其中,掌叶覆盆子叶和木姜叶柯均可使用湖北咸宁地区通山地区采集的产品,山茶树茶叶优选适江华苦茶的叶子。初发酵毛茶制备时萎凋温度在22-26℃,9-12h完成,充分揉捻,保证茶叶细胞组织破坏率达到75%以上,固态发酵时室温控制在27℃左右,空气相对湿度保持在85%以上,发酵时间控制在4h左右,低温干燥的温度控制在26-30℃,干燥至茶叶含水率在5%以下,汽蒸时温度在100-102度左右,时间25s左右,紧压的最大压力在80吨左右,低温发花的温度控制在16-22℃,时间控制在5-8天,烘干后砖片的含水量控制在13%以下。

2.根据权利要求1所述的一种参多糖甜婺金花红茶,其特征在于,淼甜婺金花红茶粉由淼甜婺金花红茶粉碎而成,淼甜婺金花红茶通过以下方法制得:由掌叶覆盆子甜叶、木姜叶柯叶和山茶科茶树茶叶分别先按凉晒、萎凋、杀青、揉捻、固态发酵和低温干燥的发酵茶加工工艺初加工成初发酵毛茶,然后按照1:1:1-3的重量比例充分混合后复合发酵,再汽蒸、紧压、低温发花、低温干燥,即得,低温干燥的温度控制在26-30℃,低温发花的温度控制在16-22℃。
3.根据权利要求1所述的一种参多糖甜婺金花红茶,其特征在于,所述食用菌多糖粉以猴头菇、香菇和杏鲍菇中的一种或多种为原料提取得到。
4.一种权利要求1或2所述参多糖甜婺金花红茶的制备方法,其特征在于,包括如下步骤:
步骤A:将淼甜婺金花红茶发花发酵茶原料进行开片、切块、粉碎和过筛,制成淼甜婺金花红茶粉,备用;
步骤B:将人参多糖粉、葛根膳食纤维素粉和食用菌多糖粉按照其重量百分数进行称量并混合,再添加相应量的脱乙酰基甲壳素粉并混合均匀,得多糖复合粉备用;
步骤C:称取相应重量百分数的步骤A的淼甜婺金花红茶粉并与步骤B得到的多糖复合粉混合,最后添加相应重量百分数的微晶纤维素粉后,充分混合,搅拌条件下在相对湿度65%、温度22-24℃下,处理3-7天,然后升温至42℃并保持,开启除湿设备进行干燥,直至相对湿度降低至13%以下,即得所述参多糖甜婺金花红茶原料产品。
