Abstract
本发明涉及一种保健复合食盐及其制备方法,所述复合食盐通过在以食用盐作为主要原料的基础上还添加适合重量配比的花粉、蔬菜粉、茶粉、食用菌粉、动物骨粉、中药粉、面粉、食品添加剂。在上述各组分的协同作用下,制备得到的保健复合食盐不仅具有普通食盐的调味作用,而且还有保健美容养颜和促进营养平衡的作用。该盐降低了钠含量,平衡人体中钠钾离子含量,可降低高血压、心血管疾病的风险,还能补充人体每日必须的硒、锌、钙、铁、锶等营养元素,对于改变人们在日常生活中由于膳食搭配不合理造成的酸性体质能起到一定的中和作用。本发明所述复合食盐适合于一般人群食用和特定人群使用,尤其适合于亚健康人群的日常饮食和生活中清洗杀菌等其他方面,符合现代健康饮食的需求。

技术领域
本发明属于保健食品调味品领域,尤其涉及一种能平衡营养增强消化机能的保健复合食盐及其制备方法。
背景技术
食盐在烹调中起着举足轻重的作用。盐不仅可以调味增鲜,也是维持人体生命不可缺少的部分。盐的摄入量与血压水平呈正比,即人体摄盐量越多则血压水平越高。食盐的主要成分是氯化钠,成人每天大约需要3~5g氯化钠,若摄取过多可造成体内水潴留,血管内压力升高,阻力增大,使心脏负荷加重,久而久之会造成心肾功能异常等疾病。由此可见,限盐,尤其是限钠,有益于身体健康。
随着市场需求的不断扩大,食盐已不仅仅限于加入碘这一种微量元素。食用盐的品种越来越多,食盐家族也越来越大。在普通食盐用中添加附加成份 (如营养强化剂或辅料)从而制成复合成分食盐。因此,市面上相继出现了强化盐(加碘盐、低钠盐、加铁盐、加锌盐、加硒盐)、营养健康盐、味精盐、肠衣盐、药用盐等。所谓营养保健盐,就是在优质食盐中添加人体所需的多种微量元素或者调整其中某些元素的含量。其特点是既能调味,也可调节改善人体的生理机能。
为了降低食盐中钠的含量,常规的方案以加碘食盐为基础,添加一定量的氯化钾(含量约30%),与普通钠盐相比含钠低(氯化钠70%左右),富含钾(氯化钾30%左右),但存在一些问题:氯化钠和氯化钾的化学结构的相同点是都含有氯,但氯化钠有咸味,氯化钾有咸、苦、涩味,添加氯化钾后食盐的味道有差异;钠和钾都是人体的必需物质,缺一不可,钾在体内含量高时就可以形成高血钾,出现肌肉无力和心脏停跳;而钠含量过低会出现低血钠,会出现脱水、无力等电解质紊乱。
各种复合食盐在添加物质的选择有过于单一,营养成分配比不合理,选材不健康,不是纯天然,有些复合食盐用途功能单一。
发明内容
为解决现有技术的不足,本发明的目的之一是提供了一种钠含量符合调味盐行业标准中关于低钠调味盐的要求、同时主要原料可药食共用的保健食盐及保健浴盐;第二个目的是提供该保健食盐的生产制作方法和使用方法。
为实现第一个目的,本发明采用以下技术手段:一种保健复合食盐,包括食盐和添加物质,所述食盐是含碘精盐、无碘精盐、硒盐、铁盐、锌盐、锶盐、海盐、井盐、池盐、岩盐、湖盐、竹盐、矿盐、粗盐中的任意一种或几种的混合物;按重量份数计算,每100份复合食盐包括NaCl 30-95份、添加物质5-70份。特别是食盐的重量含量95%-50%,或者食盐的重量含量5%-49%。
添加物质是花粉、蔬菜粉、茶粉、食用菌粉、动物骨粉、中药粉、面粉、食品添加剂中的任意一种或几种的混合物。
花是玫瑰花、茉莉花、山茶花,荷花,无花果,栀子花,野菊花,金银花,芍药中的任意一种或几种的混合物。优选玫瑰花、茉莉花,野菊花,金银花。
蔬菜是胡萝卜、芹菜、菠菜、西红柿、黄瓜、大蒜、芝麻、枣、山药、竹笋、海带、海藻、浒苔中的任意一种或几种的混合物。优选胡萝卜、芹菜、海藻、浒苔。
茶是绿茶、红茶、花茶、普洱茶中的任意一种或几种的混合物。优选绿茶、红茶。
食用菌是香菇、平菇、茶树菇、灵芝、金针菇、猴头菇、蘑菇中的任意一种或几种的混合物。优选香菇、猴头菇、平菇。
动物骨是鸡骨、猪骨、牛骨、羊骨、鱼骨中的任意一种或几种的混合物。优选鸡骨粉、鱼骨粉。
中药是枸杞、知母、小茴香、益智仁、橘核、杜仲、黄柏、沙苑子、荔枝核、车前子中的任意一种或几种的混合物。优选车前子、枸杞、益智仁。面粉是小麦粉、燕麦粉、大米粉、小米粉、高粱粉、玉米粉、红薯粉、土豆粉中的任意一种或几种的混合物。
食品添加剂是苯甲酸、苯甲酸钠、山梨酸、山梨酸钾、核苷酸、磷酸三钙中的任意一种或几种的混合物。优选核苷酸、磷酸三钙。
制备保健复合食盐的方法一,包括如下步骤:
(1)取花、蔬菜、茶叶、食用菌、动物骨、中药材、面粉、食品添加剂,经分别干燥后粉碎灭菌,得到各原料细粉;将所述各原料细粉中的一种或几种进行充分混合均匀,得到复合粉;
(2)向复合粉中加入5-10倍质量水,充分混合均匀,制得复合粉溶液;
(3)将步骤(2)中复合粉溶液加入所述食用盐中,搅拌条件下进行充分混合均匀,不经蒸发结晶得复合食盐溶液,之后经蒸发、结晶,即得复合食盐。
(4)灭菌,灭菌采用干热灭菌法,将上述混合物置于100-150℃的环境灭菌2-6小时。
另一种制备所述的保健复合食盐的方法,包括如下步骤:
(1)取花、蔬菜、茶叶、食用菌、动物骨、中药材、面粉、食品添加剂,经分别干燥后粉碎灭菌,得到各原料细粉;将各原料细粉中的一种或几种进行充分混合均匀,杀菌得到复合粉;
(2)将复合粉均匀混合于1-10%食用盐中,制备预混样品使用;
(3)启动搅拌机,放入剩余食用盐,将步骤(2)中的预混合样品均匀缓慢地加入搅拌机中,搅拌5-25分钟至均匀状态,即得到保健复合盐。
本发明的有益效果在于①本发明将各种天然材料作为保健食盐的原料,利用其性状与普通食盐相近的特点,以及稳定、易吸收的特性,采用了较大的使用量,一方面有利于各种添加剂功效的充分发挥,另一方面也通过简单的方式实现保健盐的低钠处理。本保健复合食盐中含有丰富的锶.硒,锗,锌等微量元素,对胎儿发育有重要帮助和有利影响。建议孕产妇食用本品,有助健康。用于腌制食品、烧烤烘烤食品、凉拌食品、休闲食品、烹饪调味、配制饮品、配制美容浴盐、配制足浴盐、配制漱口盐、配制面膜、配制洗鼻盐、配制清洗瓜果疏菜盐等等。
②本发明利用各种添加剂的低粒径和良好的溶解性的特性,将精盐经研磨再与添加剂的混合物混合均匀即可,降低了生产成本。
特别采用了优质井盐作为原料.确保区别于海盐被农药残留,重金属,化学污染的可能,是优质环保盐。盐是天然电解质,当人体皮肤接触到保健浴盐会加快新陈代谢,帮助人体提高至少10一15%的吸氧量,有利于提高儿童、孕妇胎儿的健康水平。盐能清洁人体皮肤表面细菌、寄生物,有降解油脂,去除皮肤角质等作用。因此经常洗盐浴的人体皮肤细滑白嫩,少皱纹。但盐对皮肤毛孔深处的废弃代谢物,死坏蛋白质微小结构无法清除。因此在本品中增加了食品级生物酶,天然植物花粉等成分专门清除皮肤毛孔深部死坏物质,大大降低了人体皮肤结疖、痈疽、班痘等症状的出现。建议孕妇一周洗二次玫瑰花盐浴,有利孕妇皮肤的保养。
玫瑰花成份,玫瑰花含有几乎包括植物所有有机成分,例如:玫瑰油、香茅醇、槲皮甙、苦味质、维C、柠檬醇酸、胡萝卜素、西红柿烃等等,极其丰富。这些成分构成了对人体的药用、保健功能.尤其对孕妇有理气解郁、安神养心、保胎顺产的明显作用。
香菇,又称香蕈、冬菇,是世界第二大食用菌,也是我国特产之一。香菇味道鲜美,香气沁人,营养丰富,高蛋白、低脂肪,富含人体必需氨基酸、矿物质、维生素和多糖等营养成分,食用效果显著,享有“植物性顶峰”和“保健食品”的美称。香菇多糖(-1,3葡聚糖)是从香菇中提取的一种多糖类物质,是一种非特异免疫刺激剂,具有抗肿瘤、抗氧化、抗病毒等生理功能,能增强细胞免疫能力, 从而抑制癌细胞的生长,且防治癌症的范围广泛,无任何毒副作用。车前子是我国传统药材之一,始载于《神农本草经》并被列为上品,为车前科植物车前或平车前的干燥成熟种子,性寒,味甘,具有利水通淋、清热明目、祛痰止咳等功效, 被我国食品药品监督管理局列为可用于保健食品的物品。车前子中的化学成分主要包括多糖类、苯乙醇苷类、环烯醚萜类、黄酮类、糖类、甾体、三萜类以及挥发油类。其中,车前子富含非消化性水溶性多糖,且具有多种生理活性,包括免疫调节、抗氧化、肠道益生作用和降低血脂水平等。
浒苔是绿藻门、绿藻纲、石莼目,浒苔属的藻类植物,是一种重要的经济海藻,俗称海青菜、苔菜、苔条,为食用和药用藻类。《本草纲目》记载浒苔可“烧末吹鼻止衄血,汤浸捣敷手背肿痛”;《隐身居饮食谱》记载:“清胆,消瘰疬瘿瘤,泻胀,化痰,治水土不服”。多糖是浒苔的主要活性物质之一,研究表明, 浒苔多糖具有显著的降血糖和血胆固醇、抑制皮肤癌的活性。硒是人体必需的微量元素,具有清除自由基、提高人体免疫能力、抗癌等作用,另外,还可治疗克山病和大骨节病,并用于提高视力和防治肝坏死等疾病。硒多糖具有硒与多糖的双重功效,有独特的生物活性,在抗氧化、抗衰老、抗肿瘤等方面发挥着越来越重要的作用,已成为研究的热点。
枸杞为茄科植物枸杞的成熟果实,具有补肾益精、养肝明目、补血安神、生津止渴及润肺止咳的功效。现代医学研究表明:它含有胡萝卜素、甜菜碱、维生素A、维生素B1、维生素B2、维生素C和钙、磷、铁等。由于枸杞含有大量的营养成分和诸多功效,特别是在增强免疫功能、抗衰老和补肾明目等方面效果确切,成为卫生部第一批公布的药食两用特色农产品。枸杞多糖是枸杞生理活性的主要有效成分,具有降血脂、降血糖、保肝、抗肿瘤和抗衰老等多种生理功能。
猴菇菌为红菇目猴头菌科猴头菌,属担子菌纲,是一种腐生菌,也是一种著名的食用菌。全形似刺猬或猴头,故俗称猴头菇或猴菇。子实体成白色团块状,柔软且肉质。子实体中部和中下部被以圆柱状菌针,子实体初期白色,干后呈浅褐色。孢子球形,光滑无色。一般野生生长在大树的高处,大的可达到数十斤重。在多雨季节比较多见,主要产自东北的大、小兴安岭。猴头是一种木材腐生菌,在自然界中,一般都在八九月份生长。李时珍的《本草纲目》对猴头的药用价值有明确记载。元朝《饮膳正要》中记载,猴头有利于五脏,帮助肠胃消化等功能。
具体实施方式
下面结合实施例对本发明做进一步的说明。
实施例1
一种保健食盐,包括食盐和保健物质,所述保健物质为花粉;按重量份数计算,每100份保健食盐包括竹盐90份、玫瑰花粉5份,茉莉花粉4份,小麦粉1份。此配比可以借助花粉的天然营养物质,长期食用可以达到美容养颜提高抵抗力的效果。
实施例2
一种保健食盐,包括NaCl和保健物质,所述保健物质为花粉;按重量份数计算,每100份保健食盐包括井盐40份、玫瑰花粉15份,茉莉花粉15份,山茶花 15份,荷花10份,燕麦粉5份。此配比可以利用花粉的天然芳香物质,长期用于沐浴或足浴可以达到杀菌消炎,抗皱美肤的效果。
实施例3一种保健食盐,包括食盐和保健物质,所述保健物质为蔬菜粉;按重量份数计算,每100份保健食盐包括富锌食盐70份、胡萝卜粉15份,芹菜粉10份,大米粉5份。此配比可以借助素菜的天然营养物质,长期食用可以达到平衡营养提高抵抗力的效果。
实施例4一种保健食盐,包括食盐和保健物质,所述保健物质为食用菌粉;按重量份数计算,每100份保健食盐包括富硒食盐80份、香菇粉5份,玉米粉5份,金针菇粉5份,浒苔5份。此配比可以借助食用菌的天然营养物质,长期食用可以达到提高抵抗力延缓衰老的效果。

(4)灭菌,所述灭菌采用干热灭菌法,将上述混合物置于100℃的环境灭菌2小时。

(3)将步骤(2)所述复合粉溶液加入所述食用盐中,搅拌条件下进行充分混合均匀,静置20小时之后即得所述复合食盐溶液。
(4)灭菌,将上述混合物置于100℃的环境灭菌2小时。

所述的保健复合食盐的方法,包括如下步骤:(1)取花、蔬菜、茶叶、食用菌、动物骨、中药材、面粉、食品添加剂,经分别干燥后粉碎灭菌,得到各原料细粉;将所述各原料细粉中的一种或几种进行充分混合均匀,得到复合粉;
(2)向所述复合粉中加入10倍质量水,充分混合均匀,制得复合粉溶液;
(3)将步骤(2)所述复合粉溶液加入所述食用盐中,搅拌条件下进行充分混合均匀,静置40小时之后经蒸发、结晶,即得所述复合食盐。
(4)灭菌,所述灭菌采用干热灭菌法,将上述混合物置于150℃的环境灭菌6小时。
制备方法的实施例4
一种制备所述的保健复合食盐的方法,包括如下步骤:
(1)取花、蔬菜、茶叶、食用菌、动物骨、中药材、面粉、食品添加剂,经分别干燥后粉碎灭菌,得到各原料细粉;将所述各原料细粉中的一种或几种进行充分混合均匀,杀菌得到复合粉;
(2)将复合粉均匀混合于20%食用盐中,制备预混样品使用,静置20小时;
(3)启动搅拌机,放入剩余食用盐,将步骤(2)中的预混合样品均匀缓慢地加入搅拌机中,搅拌5分钟至均匀状态,即得到保健复合盐。
制备方法的实施例5
一种制备所述的保健复合食盐的方法,包括如下步骤:
(1)取花、蔬菜、茶叶、食用菌、动物骨、中药材、面粉、食品添加剂,经分别干燥后粉碎,得到各原料细粉;将所述各原料细粉中的一种或几种进行充分混合均匀,杀菌得到复合粉;
(2)将复合粉均匀混合于30%食用盐中,制备预混样品使用,静置40小时;
(3)启动搅拌机,放入剩余食用盐,将步骤(2)中的预混合样品均匀缓慢地加入搅拌机中,搅拌25分钟至均匀状态,即得到保健复合盐。
各种配比的复合食盐可用于腌制食品、烧烤烘烤食品、凉拌食品、休闲食品、烹饪调味、配制饮品、配制美容浴盐、配制足浴盐、配制漱口盐、配制面膜、配制洗鼻盐、配制清洗瓜果疏菜盐。

Claims (9)
1.一种保健复合食盐,包括食盐和添加物质,其特征在于:所述食盐是含碘精盐、无碘精盐、硒盐、铁盐、锌盐、锶盐、海盐、井盐、池盐、岩盐、湖盐、竹盐、矿盐中的任意一种或几种的混合物,按重量份数计算,每100份复合食盐包括NaCl 30-95份、添加物质5-70份。
2.根据权利要求1所述的一种保健复合食盐,其特征在于:所述添加物质是花粉、蔬菜粉、茶粉、食用菌粉、动物骨粉、中药粉、面粉、食品添加剂中的任意一种或几种的混合物。
3.根据权利要求1所述的一种保健复合食盐,其特征在于食盐的重量含量95%-50%。
4.根据权利要求1所述的一种保健复合食盐,其特征在于食盐的重量含量5%-49%。
5.根据权利要求2所述的一种保健复合食盐,其特征在于:所述花粉是玫瑰花、茉莉花、山茶花、荷花、栀子花、野菊花、金银花、芍药中的任意一种或几种的混合物;所述蔬菜是胡萝卜、芹菜、菠菜、西红柿、黄瓜、大蒜、芝麻、枣、海带、海藻、浒苔、山药、竹笋中的任意一种或几种的混合物;所述茶是绿茶、红茶、花茶、普洱茶中的任意一种或几种的混合物;所述食用菌是香菇、平菇、茶树菇、灵芝、猴头菇、蘑菇中的任意一种或几种的混合物;所述动物骨是鸡骨、猪骨、牛骨、羊骨、鱼骨中的任意一种或几种的混合物;所述中药是枸杞、知母、小茴香、益智仁、橘核、杜仲、黄柏、沙苑子、荔枝核、车前子中的任意一种或几种的混合物;所述面粉是小麦粉、燕麦粉、大米粉、小米粉、高粱粉、玉米粉、红薯粉、土豆粉中的任意一种或几种的混合物;所述食品添加剂是苯甲酸、苯甲酸钠、山梨酸、山梨酸钾、核苷酸、磷酸三钙、谷氨酸钙中的任意一种或几种的混合物。
6.一种制备权利要求1-5任一项所述的保健复合食盐的方法,其特征在于,包括如下步骤:
(1)取花、蔬菜、茶叶、食用菌、动物骨、中药材、面粉、食品添加剂,经分别干燥后粉碎、灭菌得到各原料细粉;将所述各原料细粉中的一种或几种进行充分混合均匀,得到复合粉;
(2)向所述复合粉中加入5-10倍质量水,充分混合均匀,制得复合粉溶液;
(3)将步骤(2)所述复合粉溶液加入所述食用盐中,静置20小时-40小时之后经蒸发、结晶,即得所述复合食盐;
(4)灭菌,所述灭菌采用干热灭菌法,将上述混合物置于100-150℃的环境灭菌2-6小时。
7.一种制备权利要求1-5任一项所述的保健复合食盐的方法,其特征在于,包括如下步骤:
(1)取花、蔬菜、茶叶、食用菌、动物骨、中药材、面粉、食品添加剂,经分别干燥后粉碎、灭菌得到各原料细粉;将所述各原料细粉中的一种或几种进行充分混合均匀,得到复合粉;
(2)向所述复合粉中加入5-10倍质量水,充分混合均匀,制得复合粉溶液;
(3)将步骤(2)所述复合粉溶液加入所述食用盐中,搅拌条件下进行充分混合均匀,静置20小时-40小时之后即得所述复合食盐溶液。
8.一种制备权利要求1-5任一项所述的保健复合食盐的方法,其特征在于,包括如下步骤:
(1)取花、蔬菜、茶叶、食用菌、动物骨、中药材、面粉、食品添加剂,经分别干燥后粉碎,灭菌得到各原料细粉;将所述各原料细粉中的一种或几种进行充分混合均匀得到复合粉;
(2)将复合粉均匀混合于20-30%食用盐中,制备预混样品使用,静置20-40小时;
(3)启动搅拌机,放入剩余食用盐,将步骤(2)中的预混合样品均匀缓慢地加入搅拌机中,搅拌5-25分钟至均匀状态,即得到保健复合盐。
9.一种权利要求1-5任一项所述的保健复合食盐的使用方法,其特征在于用于腌制食品、烧烤烘烤食品、凉拌食品、休闲食品、烹饪调味、配制饮品、配制美容浴盐、配制足浴盐、配制漱口盐、配制面膜、配制洗鼻盐、配制清洗瓜果疏菜盐中的一种或几种。
