本发明涉及榴莲的加工技术领域,公开了一种榴莲壳全利用方法及其制备的榴莲壳粉和应用,榴莲壳全利用方法包括如下步骤:(1)榴莲壳切块,榴莲壳块在0‑5℃下进行预冻1‑2h;(2)步骤(1)预冻榴莲壳块的进行真空冷冻干燥,至榴莲壳块干燥度为3%以下;(3)干燥后的榴莲壳块使用粉碎机进行初步粉碎,粉碎温度控制在50℃以内,粉碎后过80目筛,过筛部分为榴莲壳细粉a,未过筛部分为榴莲壳粗粉a;(4)将榴莲壳粗粉a进行高速粉碎,得到榴莲壳细粉b;本发明方法能够实现榴莲壳的全利用,有效的避免资源的浪费,且能有效保持榴莲壳内蛋白质成分生物活性。

本发明涉及榴莲的加工技术领域,特别是一种榴莲壳全利用方法及其制备的榴莲壳粉和应用。
背景技术
榴莲是药食兼用的水果,其价值核心在于其食药性。研究表明,榴莲壳内含丰富的膳食纤维、微量元素、矿物质、活性蛋白质、五十多种杂环类生物活性化合物,且含量远高于果肉。榴莲壳的提取物,有保持消化系统健康、平衡血糖、降低三酸甘油酯、抗氧化、抗炎、止咳、镇痛、应激性肝损伤保护等多种作用;榴莲壳提取物能有效缓解老年性皮肤瘙痒;实验表明,榴莲壳提取物可清除自由基,清除亚硝酸根,阻断亚硝胺合成,对于防癌抗癌以及对生殖系统有积极影响。民间留传榴莲壳煲汤滋补习俗,更有“一个榴莲三只鸡”的说法。
近年来,随着榴莲果肉加工产量的迅速增加,榴莲壳成为加工企业的负担。榴莲壳多数被当作农业垃圾丢弃。从食药利用角度看,是极大浪费;处理不当还会造成环境污染。
现有榴莲壳提取物制备方法,一般经过高温处理、有机溶剂提取(如乙醇、石油醚、硫酸、柠檬酸等)等工艺步骤,获取提取物的成本比较高,加工过程存在安全隐患,不利于批量生产,且目前榴莲壳的加工方法一般需要人工的将榴莲壳内瓤和外壳分开,从而单独进行使用,需要耗费较高的人工成本,进而降低榴莲壳的利用率。高温处理使榴莲壳内蛋白质活性降低或完全失活。
发明内容
为此,需要提供一种榴莲壳全利用方法及其制备的榴莲壳粉和应用,解决现有榴莲壳加工工序繁琐,榴莲壳利用率低的问题,同时保持榴莲壳内蛋白质活性。
为实现上述目的,本发明提供了一种榴莲壳全利用方法,包括如下步骤:
(1)榴莲壳切块,榴莲壳块在0-5℃下进行预冻1-2h;
(2)步骤(1)预冻榴莲壳块的进行真空冷冻干燥,至榴莲壳块干燥度为3%以下;
(3)干燥后的榴莲壳块使用粉碎机进行初步粉碎,粉碎温度控制在50℃以内,粉碎后过80目筛,过筛部分为榴莲壳细粉a,未过筛部分为榴莲壳粗粉a;
(4)将榴莲壳粗粉a进行高速粉碎,得到榴莲壳细粉b。
进一步,所述榴莲壳切块之前先浸泡于2-3mg/L的臭氧水,臭氧水温度为10-15℃,浸泡时间为15-30min,之后漂洗、沥干备用。臭氧水浸泡用于杀菌及降解去除榴莲上残留农残。
进一步,真空冷冻干燥过程为:榴莲壳块放入冻干机中,冻干机由常温降到-26℃,真空度为-30Pa,保温1-2h,之后按2℃/15min的速度升温,升温到常温后,保持一定的时间从而控制榴莲壳块的干燥度。真空冷冻干燥能够有效的去除榴莲壳的水分,并保持榴莲壳粉内部蛋白质生物活性。
进一步,所述榴莲壳块的干燥度控制为1-2%。
进一步,步骤(3)中控制粉碎温度为30-40℃。初步粉碎时,包括内瓤和外壳,此时,榴莲壳含有较多的蛋白质,控制温度,能够有效的避免蛋白质变性。
进一步,步骤(3)和步骤(4)的粉碎均使用分级水冷流水式粉碎机,
步骤(3)粉碎时,转速为2000-2800转/分钟,粉碎时间为30-60min;
步骤(4)粉碎时,转速为4800-6000转/分钟,粉碎时间为10-30min。粉碎机在旋转的过程中容易因为高速旋转而产生高温,步骤(2)中通过控制转速和水冷的方式控制粉碎温度。

本发明中,使用的榴莲壳材料包括内瓤和外壳,无需进行人工分离,降低了人工成本,经过真空干燥、初次粉碎得到的榴莲壳细粉a具有较多的生物活性分子,能够作为组分应用于固体饮料、化妆品、止痒膏等,容易被人体吸收,而榴莲壳细粉b部分含有较多的纤维部分,生物活性成分结合比较牢固,可以应用与制备袋泡茶或营养汤包,经过热水浸泡后,其营养成分更容易被人体吸收。
本发明中,并没有单独的分开榴莲壳的内瓤和外壳,而是通过干燥、机械粉碎加工的方法将榴莲壳制成易被人体吸收、含有较多营养成分的榴莲壳细粉a及需要浸泡的榴莲壳细粉b,整个过程方法简单、成本低、且能保持榴莲壳内蛋白质活性,容易实现规模化生产;对于榴莲壳内瓤、外壳的成分均得以完全利用。

具体实施方式
为详细说明技术方案的技术内容、构造特征、所实现目的及效果,以下结合具体实施例详予说明。
实施例1
本实施例一种榴莲壳全利用方法,包括如下步骤:
(1)取榴莲壳(包含内瓤和外壳)25kg,以10℃清水连续充臭氧,臭氧浓度2-3mg/L,浸泡20分钟后洗净、沥干备用;
(2)榴莲壳切成1cm×1cm左右的榴莲壳块,榴莲壳装盘5℃下进行预冷1h;
(3)预冷后榴莲壳块的进行真空冷冻干燥,至榴莲壳块干燥度为3%;
真空冷冻干燥过程为:榴莲壳块放入冻干机中,冻干机降温到-26℃,真空度为-30Pa,保温2h,之后按2℃/15min的速度升温,升温到常温后,保持1h,得到干燥度为3%的榴莲壳块(3400g);
(4)干燥后的榴莲壳块使用永力分级水冷流水式粉碎机进行粉碎,转速为2000转/分钟,粉碎时间为60min,粉碎温度控制为30±2℃,粉碎后过80目筛,过筛部分为榴莲壳细粉a(880g),未过筛部分为榴莲壳粗粉a(2510g);
(5)将榴莲壳粗粉a使用分级水冷流水式粉碎机进行高速粉碎,粉碎时,转速为4800转/分钟,粉碎时间为30min,得到榴莲壳细粉b(2500g)。
实施例2
本实施例一种榴莲壳全利用方法,与实施例1不同点是:
(1)取榴莲壳(包含内瓤和外壳)25kg,以15℃清水连续充臭氧,臭氧浓度2-3mg/L,浸泡15分钟后洗净、沥干备用;
(2)榴莲壳装盘0℃下进行预冻1h;
(3)真空冷冻干燥时在-26℃下保持2h,之后升温,延长最终的保持温度,得到干燥度为2%的榴莲壳块(3356g);
(4)干燥后的榴莲壳块使用分级水冷流水式粉碎机进行粉碎,转速为2500转/分钟,粉碎时间为45min,粉碎温度控制为40±2℃,粉碎后过80目筛,过筛部分为榴莲壳细粉a(875g),未过筛部分为榴莲壳粗粉a(2472g);
(5)将榴莲壳粗粉a使用分级水冷流水式粉碎机进行高速粉碎,步骤(4)粉碎时,转速为5000转/分钟,粉碎时间为30min,得到榴莲壳细粉b(2456g)。
实施例3
本实施例一种榴莲壳全利用方法,与实施例1不同点是:
(1)去榴莲壳(包含内瓤和外壳)25kg,以15℃清水连续充臭氧,臭氧浓度2-3mg/L,浸泡20分钟后洗净、沥干备用;
(2)榴莲壳装盘0℃下进行预冻2h;
(3)真空冷冻干燥时在-26℃下保持2h,之后升温,延长最终的保持温度,得到干燥度为1%的榴莲壳块(3344g);
(4)干燥后的榴莲壳块使用分级水冷流水式粉碎机进行粉碎,转速为2800转/分钟,粉碎时间为30min,粉碎温度控制为50±1℃,粉碎后过80目筛,过筛部分为榴莲壳细粉a(870g),未过筛部分为榴莲壳粗粉a(2459g);
(5)将榴莲壳粗粉a使用分级水冷流水式粉碎机进行高速粉碎,步骤(4)粉碎时,转速为5000转/分钟,粉碎时间为30min,得到榴莲壳细粉b(2443g)。
将实施例1制备的榴莲壳细粉a和榴莲壳细粉b分别进行成分检测,检测结果如图1-4所示,图1-2中榴莲壳粉a即为本发明的榴莲壳细粉a,图3-4中的榴莲壳粉b即为本发明的榴莲壳细粉b。
由图1-4的检测结果可知,本发明制备的榴莲壳粉a中含有大量的氨基酸和微量元素,其中β-胡萝卜素高达795μg/100g,氨基酸总量为7.48g/100g,且各种氨基酸的含量高于榴莲壳粉b,榴莲壳粉b含有较高的膳食纤维,具体为59.5g/100g,同时维生素C的含量为47.8mg/100g,本发明制备时榴莲壳的内瓤和外壳无需分离,通过真空干燥和粉碎等多个步骤将榴莲壳全利用制备成两种含量不同的榴莲壳粉,之后根据每个榴莲壳粉的营养元素含量的区别分别进行应用。
实施例4
一种榴莲止痒软膏:取实施例1制备的榴莲壳细粉a200克,进一步过200目筛,得100克超细粉,加入软膏基质(包含硬脂酸20克,氢氧化钾1.4克,甘油5.0克,蒸馏水100毫升),充分搅拌混合均匀,得榴莲止痒软膏,分装入软管。
使用时,将适量软膏挤出,均匀涂抹于瘙痒处。
实施例5
一种榴莲壳固体饮料:取实施例1制备的榴莲壳细粉a 500克,加入木糖醇50克,均匀混合,并按分袋密封包装。得榴莲壳食品固体饮料
使用时,以适量温开水冲服
实施例6
一种榴莲袋泡茶:取实施例1制备榴莲壳细粉b500克,均匀分装入1000个一次性茶袋,每袋0.5g,封口后得袋泡茶。
使用时,开水冲泡即可。
实施例7
一种榴莲壳营养汤包:取实施例2制备榴莲壳粉b 500克,均匀装入100个一次性茶袋,每袋5g,封口后得榴莲壳营养汤包。可用于炖煮煲汤等

Claims (10)
1.一种榴莲壳全利用方法,其特征在于,包括如下步骤:
(1)榴莲壳切块,榴莲壳块在0-5℃下进行预冻1-2h;
(2)步骤(1)预冻榴莲壳块的进行真空冷冻干燥,至榴莲壳块干燥度为3%以下;
(3)干燥后的榴莲壳块使用粉碎机进行初步粉碎,粉碎温度控制在50℃以内,粉碎后过80目筛,过筛部分为榴莲壳细粉a,未过筛部分为榴莲壳粗粉a;
(4)将榴莲壳粗粉a进行高速粉碎,得到榴莲壳细粉b。
2.如权利要求1所述的榴莲壳全利用方法,其特征在于,所述榴莲壳切块之前先浸泡于2-3mg/L的臭氧水,臭氧水温度为10-15℃,浸泡时间为15-30min,之后漂洗、沥干备用。
3.如权利要求1所述的榴莲壳全利用方法,其特征在于,真空冷冻干燥过程为:榴莲壳块放入冻干机中,冻干机降温到-26℃,真空度为-30Pa,保温1-2h,之后按2℃/15min的速度升温,升温到常温后,保持一定的时间从而控制榴莲壳块的干燥度。
4.如权利要求1所述的榴莲壳全利用方法,其特征在于,所述榴莲壳块的干燥度控制为1-2%。
5.如权利要求1所述的榴莲壳全利用方法,其特征在于,步骤(3)中控制粉碎温度为30-40℃。
6.如权利要求1所述的榴莲壳全利用方法,其特征在于,步骤(3)和步骤(4)的粉碎均使用分级水冷流水式粉碎机,
步骤(3)粉碎时,转速为2000-2800转/分钟,粉碎时间为30-60min;
步骤(4)粉碎时,转速为4800-6000转/分钟,粉碎时间为10-30min。
7.一种榴莲壳粉,其特征在于,如权利要求1-6任一所述的榴莲壳全利用方法制备的榴莲壳细粉a。
8.一种榴莲壳粉,其特征在于,如权利要求1-6任一所述的榴莲壳全利用方法制备的榴莲壳细粉b。
9.一种榴莲壳粉的应用,其特征在于,如权利要求1-6任一所述的榴莲壳全利用方法制备的榴莲壳细粉a应用于制备固体饮料、化妆品、止痒膏或牙膏。
10.一种榴莲壳粉的应用,其特征在于,如权利要求1-6任一所述的榴莲壳全利用方法制备的榴莲壳细粉b应用于制备袋泡茶或营养汤包。
