为解决上述技术问题,本发明还提供如下技术方案:一种吸吸型睡眠功能果冻生产工艺,按照以下步骤进行制备:
S1:按质量分数配置原料,室温下将0.15%稳定剂、0.1%魔芋粉、0.05%卡拉胶、0.05%柠檬酸钠及1.75%白砂糖混合3min;
S2:准备总水量70%的纯化水,将混合物加入纯化水中,保持高速剪切,转速4000r/m,保持180s,关掉高速截切,设置转速20-40rpm,加热至85~90℃,保温搅拌10~15min;
S3:在搅拌下将预溶解好的乳酸钙溶液加入到混合液中;
S4:在保持高速剪切,转速4000r/m条件下,依次加入7%果汁、0.03%VC、0.5%GABA、0.3%茶叶茶氨酸、0.3%酸枣仁粉、1%酪蛋白水解肽、0.01%香蜂草提取物、0.15%德国春黄菊花提取物,搅拌混合均匀;

本发明的有益效果:本发明提供一种吸吸型睡眠功能果冻及其生产工艺,将果冻产品与睡眠功能产品结合,借助可吸果冻零食化、高颜值、小包装等优势,打造出了一款体感佳、使用方便、趣味性强、颜值高的睡眠功能果冻产品;本发明除了新食品原料GABA、茶叶茶氨酸以及药食同源原料酸枣仁外,尝试使用酪蛋白水解肽、香蜂草提取物及德国春黄菊花提取物等,产品定位天然、无依赖性,更易服用和美味;同时,通过调节结冷胶、乳酸钙、魔芋粉、卡拉胶、黄原胶等比例来改善果冻的质感,使得果冻产品拥有弹性和爽滑的质构、卓越的保水控制及风味释放性。

为使本发明的上述目的、特征和优点能够更加明显易懂,下面结合说明书附图对本发明的具体实施方式做详细的说明,显然所描述的实施例是本发明的一部分实施例,而不是全部实施例。基于本发明中的实施例,本领域普通人员在没有做出创造性劳动前提下所获得的所有其他实施例,都应当属于本发明的保护的范围。
目前睡眠类的功能食品剂型比较常见的是液体、片剂、胶囊等,果冻剂型相对较少;功效成分以GABA、酸枣仁、茶叶茶氨酸为主,产品同质化较为严重;产品体感普遍较差,消费者反馈不佳。
故此,本发明提供一种吸吸型睡眠功能果冻,按质量分数包括以下组分:0.15%稳定剂、0.1%魔芋粉、0.05%卡拉胶、0.05%柠檬酸钠、1.75%白砂糖、77.88%水、0.15%乳酸钙溶液、7%果汁、0.03%VC、0.5%GABA、0.3%茶叶茶氨酸、0.3%酸枣仁粉、1%酪蛋白水解肽、0.01%香蜂草提取物、0.15%德国春黄菊花提取物、0.33%无水柠檬酸。
具体的,稳定剂为低酰基结冷胶。
具体的,果汁包括5%百香果果汁和2%脱色脱酸浓缩苹果清汁。
其中,将称量好的乳酸钙溶于水中,制成10%的乳酸钙溶液,保持温度为80℃。
如下,本发明提供一种吸吸型睡眠功能果冻生产工艺,按照以下步骤进行制备:
S1:按质量分数配置原料,室温下将0.15%稳定剂、0.1%魔芋粉、0.05%卡拉胶、0.05%柠檬酸钠及1.75%白砂糖混合3min;
S2:准备总水量70%的纯化水,将混合物加入纯化水中,保持高速剪切,转速4000r/m,保持180s,关掉高速截切,设置转速20-40rpm,加热至85~90℃,保温搅拌10~15min;
S3:在搅拌下将预溶解好的乳酸钙溶液加入到混合液中;
S4:在保持高速剪切,转速4000r/m条件下,依次加入7%果汁、0.03%VC、0.5%GABA、0.3%茶叶茶氨酸、0.3%酸枣仁粉、1%酪蛋白水解肽、0.01%香蜂草提取物、0.15%德国春黄菊花提取物,搅拌混合均匀;
S5:降温至70℃后使用浓度为10%的柠檬酸溶液将PH值调至3.80;
S6:定容至该批量总质量;
S7:在60℃以上灌装;
S8:在90℃下杀菌20min;
S9:冷却至室温,得到产品。

额外的,灌装时温度为70℃。
如图1和图2所示,反应装置1中,从入料口11中加入原料,开启搅拌,混合均匀后,从入料口11中加入70%总水量的水,开启加热,反应装置1中加热层12根据设置的温度开始升温,实时观察温度计13上显示的温度,并于达到设定温度后关掉加热进行保温。
需要注意的是,反应装置1内部设置有刻度,方便定容操作。
其中,如图3所示,搅拌棒14呈现开花状,加大了搅拌的速率及混合度。
其中,入料口11设置成弧状,方便加料。

Claims (7)
1.一种吸吸型睡眠功能果冻,其特征在于,按质量分数包括以下组分:0.15%稳定剂、0.1%魔芋粉、0.05%卡拉胶、0.05%柠檬酸钠、1.75%白砂糖、77.88%水、0.15%乳酸钙溶液、7%果汁、0.03%VC、0.5%GABA、0.3%茶叶茶氨酸、0.3%酸枣仁粉、1%酪蛋白水解肽、0.01%香蜂草提取物、0.15%德国春黄菊花提取物、0.33%无水柠檬酸。
2.根据权利要求1所述的吸吸型睡眠功能果冻,其特征在于:所述稳定剂为低酰基结冷胶。
3.根据权利要求1或2所述的吸吸型睡眠功能果冻,其特征在于:所述果汁包括5%百香果果汁和2%脱色脱酸浓缩苹果清汁。
4.根据权利要求3所述的吸吸型睡眠功能果冻,其特征在于:将称量好的乳酸钙溶于水中,制成10%的乳酸钙溶液,保持温度为80℃。
5.一种吸吸型睡眠功能果冻生产工艺,其特征在于,按照以下步骤进行制备:
S1:按质量分数配置原料,室温下将0.15%稳定剂、0.1%魔芋粉、0.05%卡拉胶、0.05%柠檬酸钠及1.75%白砂糖混合3min;
S2:准备总水量70%的纯化水,将混合物加入纯化水中,保持高速剪切,转速4000r/m,保持180s,关掉高速截切,设置转速20-40rpm,加热至85~90℃,保温搅拌10~15min;
S3:在搅拌下将预溶解好的乳酸钙溶液加入到混合液中;
S4:在保持高速剪切,转速4000r/m条件下,依次加入7%果汁、0.03%VC、0.5%GABA、0.3%茶叶茶氨酸、0.3%酸枣仁粉、1%酪蛋白水解肽、0.01%香蜂草提取物、0.15%德国春黄菊花提取物,搅拌混合均匀;
S5:降温至70℃后使用浓度为10%的柠檬酸溶液将PH值调至3.80;
S6:定容至该批量总质量;
S7:在60℃以上灌装;
S8:在90℃下杀菌20min;
S9:冷却至室温,得到产品。
6.根据权利要求5所述的吸吸型睡眠功能果冻生产工艺,其特征在于:步骤S2中,将混合物加入至水中时,以速率100~120r/min搅拌10min混合均匀后,保持搅拌,开启加热,以3℃/min的升温速率升温至85~90℃。
7.根据权利要求5或6所述的吸吸型睡眠功能果冻生产工艺,其特征在于:灌装时温度为70℃。
