Abstract

本发明涉及一种甜蛋奶饮料的生产方法。先将清洗、打碎至发泡的鲜蛋液缓慢倒入隔层反应锅中10-15倍于鲜蛋量的冷水中,然后升温至95℃,使鲜蛋液嫩熟,再降温至90℃,并加入产品总糖量的三分之一,再降温至80℃,上述制作过程均需不停地搅拌,在上述蛋液中加入灭菌牛奶,并加足产品的总糖。充分搅拌溶和为均质后装罐,在高温121℃、15磅压力下灭菌5-8分钟,即为成品。本发明的工艺简单、产品的口感好。

Description

甜蛋奶饮料的生产方法
本发明涉及一种甜蛋奶饮料的生产方法。
目前,在蛋奶饮料的生产过程中,均需加入一定量的酶制品,以分解蛋液中的蛋白质,其制成的成品均带有酸味,因此口感不太好。在上述产品的制作过程中,还需加入防止蛋白沉淀的耐酸cmc,防止分层的蔗糖脂,以及单甘脂,防腐剂等,因此工艺也较为繁琐。
本发明的目的是克服上述蛋奶生产工艺的不足而提供一种生产工艺简单、产品口感好的甜蛋奶饮料的生产方法。
先将清洗、打碎至发泡的鲜蛋液缓慢倒入隔层反应锅中10-15倍于鲜蛋量的冷水中,然后升温至95℃,使鲜蛋液嫩熟,再降温至90℃,并加入产品总糖量的三分之一,再降温至80℃,上述制作过程均需不停地搅拌,在上述蛋液中加入灭菌牛奶,并加足产品的总糖,充分搅拌溶和为均质后装罐,在高温121℃、15磅压力下灭菌5-8分钟,即为成品。
本发明采用上述具体工艺,其过程不使用任何防腐剂、稳定剂和香味剂,因此口味纯正,同时,本发明的生产工艺与普通工艺相比,也较为简单。
以下结合附图和实施例说明本发明的详细内容。
附图是本发明的工艺流程图。
先将清洗、打碎至发泡的鲜蛋液10千克缓慢倒入隔层反应锅中100-150千克的冷水中,然后升温至95℃,使鲜蛋液嫩熟,再降温至90℃,并加入总糖量的三分之一,再降温至80℃,上述制作过程均需不停地搅拌。再在上述蛋液中加入灭菌牛奶,并加足产品的总糖(剩余的三分之二),充分搅拌溶和为均质后装罐,在高温121℃、15磅压力下灭菌5-8分钟,即为成品。

1、一种甜蛋奶饮料的生产方法,其特征是:先将清洗、打碎至发泡的鲜蛋液缓慢倒入隔层反应锅中10-15倍于鲜蛋量的冷水中,然后升温至95℃,使鲜蛋液嫩熟,再降温至90℃,并加入产品总糖量的三分之一,再降温至80℃,上述制作过程均需不停地搅拌,在上述蛋液中加入灭菌牛奶,并加足产品的总糖,充分搅拌溶和为均质后装罐,在高温121℃、15磅压力下灭菌5-8分钟。
