Abstract
本发明公开了一种安神助眠百合蜜片保健果冻及其制备方法,属于食品加工技术领域。安神助眠百合蜜片保健果冻包括以下重量份原料:中药浓缩膏5‑10份,百合蜜片2‑5份,胶粉1‑3份,白砂糖10‑15份,氯化钾0.05‑0.08份。本发明还提出了上述安神助眠百合蜜片保健果冻的制备方法,包括百合蜜片的制备、中药浓缩膏的制备、煮胶配料、冷却成型、灭菌等步骤。本发明的优点在于,此百合蜜片保健果冻具有安神助眠、养胃生津和营养丰富的特点,该制备方法简单易操作,无需使用大型设备等,便于推广。

技术领域
本发明公开了一种安神助眠百合蜜片保健果冻及其制备方法,属于食品加工技术领域。
背景技术
果冻是休闲低热量食品,具有良好的口感,深受儿童的喜欢。将中药膏、植物提取物等营养物质与果冻相结合,则可以实现兼具良好口感和营养价值的功能性果冻,填补营养功能型中药果冻的空白。
百合叶片具有养阴润肺,清心安神的功效,以蜂蜜配合百合制备的百合叶片更是在实现安神助眠的功效的同时又具有极佳的口感。
CN112022950A公开了一种百合蜜片的制备方法,包括以下步骤:准备原料百合和蜂蜜;将百合洗净晾干,入锅蒸:放入蜂蜜拌匀,得到百合蜜片。本发明的百合蜜片用于治疗肺部疾病,主要用于治疗肺气肿,肺心病,哮喘,多痰慢性气管炎等疾病,并且可以作为零食食用,口感甚佳。
上述的方法制备的百合蜜片食用形式单一,蒸熟后的百合叶片有效成分有所损失。
发明内容
本发明的目的是提供一种安神助眠百合蜜片保健果冻,利用无苦味、具有安神助眠效果的中药配合百合蜜片制备的保健果冻,既最大限度地发挥了药用成份,又以果冻的形式增加了食用人群的接受度。
本发明是通过以下技术方案实现的:
保健果冻的原料组成包括:中药浓缩膏5-10份,百合蜜片2-5份,胶粉1-3份,白砂糖10-15份,氯化钾0.05-0.08份,调酸剂0.5-1.7份,防腐剂0.2-0.5份。
进一步的,本发明提供一种安神助眠百合蜜片保健果冻的制备方法,包括以下步骤:
(1)百合蜜片的制备:将百合洗净加入到蜂蜜水中浸煮30min后捞出沥干,加入蜂蜜中浸泡10-25天,制得百合蜜片,百合蜜片表现为百合叶的形状,同时由于蜂蜜的浸泡,细胞液析出,蜂蜜充满百合叶片细胞,展现出晶莹半透明的质地,既具有百合的清香,又含有蜂蜜的馥郁滋味;
(2)中药浓缩膏的制备:将原料粉碎,过筛,加入酶制剂酶解,分离酶解液和沉淀,沉淀加水浸提取上清液,合并酶解液和上清液,进行减压浓缩至浓稠膏体;中药浓缩膏按重量份数计算原料组分为:酸枣仁10-20份、百合20-25份、龙眼肉5-10份、党参1-5份、当归5-10份、陈皮10-20份、甘草5-15份、大枣5-15份、枸杞2-5份。
(3)煮胶配料:将胶粉、白砂糖加入水中,搅拌加热至沸腾,保持微沸3-5min后过滤,待滤液降温到60-70℃时,加入中药浓缩膏和调酸剂、防腐剂搅拌均匀,得到胶液。
(4)成型:将2-5片百合蜜片放置果冻杯中,胶液注入果冻杯中,冷却成型封口。
(5)灭菌:将果冻杯置于80-85℃的巴氏灭菌锅中,灭菌10-15min后用冷水将温度迅速降至常温。
优选的,(1)中,蜂蜜水的浓度为20%-30%;

(1)本发明的安神助眠百合蜜片保健果冻,实现了能够在保留百合叶片营养性的同时,配合蜂蜜的馥郁滋味,满足大众对于果冻的感官要求。
(2)解决的中药浓缩膏的不适口感,又发挥了中药浓缩膏的保健价值。
(3)百合蜜片保健果冻风味独特,具有安神助眠的功效。

具体实施方式
实施例1
安神助眠百合蜜片保健果冻的制备:
(1)百合蜜片的制备:将百合洗净加入到30%的蜂蜜水中浸煮30min后捞出沥干,加入蜂蜜中浸泡20天,制得百合蜜片;
(2)中药浓缩膏的制备:中药原料28g,其中按重量份数计算:酸枣仁20份、百合25份、龙眼肉10份、党参5份、当归10份、陈皮20份、甘草15份、大枣15份、枸杞2份;原料粉碎,过100目筛,加入1%的酸性纤维素酶、酸性果胶酶50℃酶解,分离酶解液和沉淀,沉淀加水浸提取上清液,合并酶解液和上清液,70℃下减压浓缩至41波美度,得到浓稠膏体;
(3)煮胶配料:将8.4g琼脂粉、30g白砂糖加入1000mL水中,搅拌加热至沸腾,保持微沸5min后过滤,待滤液降温到65℃时,加入中药浓缩膏和0.2g胶凝剂氯化钾、4.6g调酸剂(柠檬酸0.2份,苹果酸1份,柠檬酸钠0.5份)、1.4g防腐剂山梨酸钾搅拌均匀,得到胶液;
(4)成型:将5片百合蜜片放置圆形内凹果冻杯中,胶液注入果冻杯中,冷却成型封口;
(5)灭菌:将果冻杯置于80-85℃的巴氏灭菌锅中,灭菌15min后用冷水将温度迅速降至常温。
实施例2
安神助眠百合蜜片保健果冻的制备:
(1)百合蜜片的制备:将百合洗净加入到30%的蜂蜜水中浸煮30min后捞出沥干,加入蜂蜜中浸泡20天,制得百合蜜片;
(2)中药浓缩膏的制备:中药原料32g,其中按重量份数计算:酸枣仁10份、百合25份、龙眼肉5份、党参1份、当归5份、陈皮10份、甘草15份、大枣5份、枸杞5份;原料粉碎,过100目筛,加入1%的酸性纤维素酶、酸性果胶酶50℃酶解,分离酶解液和沉淀,沉淀加水浸提取上清液,合并酶解液和上清液,70℃下减压浓缩至41波美度,得到浓稠膏体;
(3)煮胶配料:将8.7g卡拉胶粉、40g白砂糖加入1200mL水中,搅拌加热至沸腾,保持微沸3min后过滤,待滤液降温到65℃时,加入中药浓缩膏和0.23g胶凝剂氯化钾、5g调酸剂(柠檬酸0.2份,苹果酸1份,柠檬酸钠0.5份,酒石酸0.2份)、1.5g防腐剂山梨酸钾搅拌均匀,得到胶液;
(4)成型:将3片百合蜜片放置圆形内凹果冻杯中,胶液注入果冻杯中,冷却成型封口;
(5)灭菌:将果冻杯置于80-85℃的巴氏灭菌锅中,灭菌15min后用冷水将温度迅速降至常温。
实施例3
复配胶粉的百合蜜片果冻的制备:
(1)百合蜜片的制备:将百合洗净加入到30%的蜂蜜水中浸煮30min后捞出沥干,加入蜂蜜中浸泡20天,制得百合蜜片;
(2)中药浓缩膏的制备:中药原料28g,其中按重量份数计算:酸枣仁10份、百合20份、龙眼肉5份、党参1份、当归5份、陈皮10份、甘草15份、大枣5份、枸杞5份;原料粉碎,过100目筛,加入1%的酸性纤维素酶、酸性果胶酶50℃酶解,分离酶解液和沉淀,沉淀加水浸提取上清液,合并酶解液和上清液,70℃下减压浓缩至41波美度,得到浓稠膏体;
(3)煮胶配料:将5g卡拉胶粉、2g魔芋胶粉、1g黄原胶粉、40g白砂糖加入1000mL水中,搅拌加热至沸腾,保持微沸5min后过滤,待滤液降温到65℃时,加入中药浓缩膏和0.22g胶凝剂氯化钾、4.6g调酸剂(柠檬酸0.2份,苹果酸1份,柠檬酸钠0.5份,酒石酸0.2份、1.5g防腐剂山梨酸钾搅拌均匀,得到胶液;
(4)成型:将5片百合蜜片放置圆形内凹果冻杯中,胶液注入果冻杯中,冷却成型封口;
(5)灭菌:将果冻杯置于80-85℃的巴氏灭菌锅中,灭菌15min后用冷水将温度迅速降至常温。
实施例4
安神助眠百合蜜片保健雪糕的制备:
(1)以实施例1的方法制备百合蜜片。
(2)中药浓缩膏的制备:中药原料30g,其中按重量份数计算:酸枣仁20份、百合25份、龙眼肉10份、党参5份、当归10份、陈皮20份、甘草15份、大枣15份、枸杞2份;原料粉碎,过80目筛,加入1%的酸性纤维素酶、酸性果胶酶50℃酶解,分离酶解液和沉淀,沉淀加水浸提取上清液,合并酶解液和上清液,70℃下减压浓缩至42波美度,得到浓稠膏体;
(3)煮胶配料:将4g魔芋粉、4g黄原胶、1g瓜尔胶、30g白砂糖加入1000mL水中,搅拌加热至沸腾,保持微沸5min后过滤,待滤液降温到65℃时,加入中药浓缩膏和0.2g胶凝剂氯化钾、4.8g调酸剂(柠檬酸0.2份,苹果酸1份)搅拌均匀,得到胶液;
(4)冷冻成型:将3片百合蜜片放置雪糕模具中,放置雪糕棍,胶液注入模具中,灭菌,冷冻成型。
实施例5
复合饮料的制备:
(1)将实施例1不含百合蜜片的果冻捣碎,百合蜜片切至5mm小块;
(2)预处理:捣碎的果冻与小块百合蜜片按0.1g/mL均匀分散至水溶液;
(3)复合饮料的制作:将500mL茉莉花茶浸取液加入0.15%柠檬酸、9%白砂糖、20葡萄汁进行调制,得到茉莉花葡萄汁复合饮料样品。
(4)果冻与饮料的混合调配:已处理好的茉莉花复合饮料与果冻溶液按体积比3:1进行充分混合,灭菌,冷却静置,下层为可吸食的百合蜜片保健果冻,上层为茉莉花葡萄汁复合饮料。
实施例6
小鼠的睡眠试验
1.样品制备:
将实施例1中药浓缩膏和干燥粉碎的百合蜜片(超微粉碎机,过100目筛)混合,以蒸馏水为溶剂,配置低剂量组(16.0mg/mL)、中剂量组(33.0mg/mL)、高剂量组(80.0mg/mL)的三种溶液,另设蒸馏水为空白对照组。
2实验动物:
清洁级ICR健康雄性小鼠,体重19.3~22.8g。将小鼠分为3个实验组(1组延长戊巴比妥钠睡眠时间实验、2组进行戊巴比妥钠阈下剂量催眠实验、3组进行巴比妥钠睡眠潜伏期实验),每个实验组均将40只小鼠随机分成4个小组,每组10只动物。
3.饲养环境饲养环境:
室内温度22℃、相对湿度50%,每日光照12h,每日用消毒液对饲养环境消毒。
4.给药途径:
小鼠每日称重,按1mL/20g灌胃,连续14d。
5.实验方法:
(1)延长戊巴比妥钠睡眠时间实验:于末次灌胃15min后给各组动物腹腔注射50mg/kg BW戊巴比妥钠,注射量为0.2mL/20g BW,观察受试样品是否延长戊巴比妥钠睡眠时间,记录数据。
(2)戊巴比妥钠阈下剂量催眠实验:于末次灌胃15min后,给各组动物腹腔注射30mg/kg BW戊巴比妥钠,注射量为0.2mL/20g BW,记录30min内入睡动物数。
(3)巴比妥钠睡眠潜伏期实验:于末次灌胃15min后,给各组动物腹腔注射280mg/kg BW巴比妥钠,注射量为0.2mL/20g BW,记录受试样品对巴比妥钠睡眠潜伏期的影响。
以上实验数据见表1~3。

上述数据证明了:
以实施例1的有效成分为主的样品组与对照组相比,样品组缩短了小鼠的睡眠潜伏期,并延长了小鼠的睡眠时间,并增加了阈下剂量戊巴比妥钠诱导的小鼠睡眠发生率,依据《保健食品检验与评价技术规范》中的判断标准,判定本发明的百合蜜片保健果冻具有安神助眠的作用。
Claims (10)
1.一种安神助眠百合蜜片保健果冻,其特征在于,保健果冻按重量份数计算原料组分包括:中药浓缩膏5-10份,百合蜜片2-5份,胶粉1-3份,白砂糖10-15份,氯化钾0.05-0.08份,调酸剂0.5-1.7份,防腐剂0.2-0.5份。
2.如权利要求1所述的安神助眠百合蜜片保健果冻,其特征在于,中药浓缩膏按重量份数计算原料组分为:酸枣仁10-20份、百合20-25份、龙眼肉5-10份、党参1-5份、当归5-10份、陈皮10-20份、甘草5-15份、大枣5-15份、枸杞2-5份。
3.一种安神助眠百合蜜片保健果冻的制备方法,其特征在于,制备方法包括以下步骤:
(1)百合蜜片的制备:将百合洗净加入到蜂蜜水中浸煮30min后捞出沥干,加入蜂蜜中浸泡10-25天,制得百合蜜片;
(2)中药浓缩膏的制备:将权利要求2中所述的原料粉碎,过筛,加入酶制剂酶解,分离酶解液和沉淀,沉淀加水浸提取上清液,合并酶解液和上清液,进行减压浓缩至浓稠膏体;
(3)煮胶配料:将胶粉、白砂糖加入水中,搅拌加热至沸腾,保持微沸3-5min后过滤,待滤液降温到60-70℃时,加入中药浓缩膏和氯化钾、调酸剂、防腐剂搅拌均匀,得到胶液;
(4)成型:将百合蜜片放置果冻杯中,胶液注入果冻杯中,冷却成型封口;
(5)灭菌:将果冻杯置于80-85℃的巴氏灭菌锅中,灭菌10-15min后用冷水将温度迅速降至常温。
4.如权利要求3所述的安神助眠百合蜜片保健果冻的制备方法,其特征在于,(1)中,蜂蜜水的浓度为20%-30%。
5.如权利要求3所述的安神助眠百合蜜片保健果冻的制备方法,其特征在于,(2)中,中药浓缩膏原料粉碎后,过50-100目筛。
6.如权利要求3所述的安神助眠百合蜜片保健果冻的制备方法,其特征在于,(2)中,酶制剂为酸性纤维素酶、酸性果胶酶;酶解温度为50-55℃。
7.如权利要求3所述的安神助眠百合蜜片保健果冻的制备方法,其特征在于,(2)中,减压浓缩时的温度为70℃。
8.如权利要求3所述的安神助眠百合蜜片保健果冻的制备方法,其特征在于,(3)中,胶粉包括琼脂粉、海藻酸钠粉、卡拉胶粉、黄原胶粉、魔芋胶粉中的至少一种。
