技术领域

背景技术
随着消费者对提神饮料的需求不断增加,许多类型的饮料也不断引入。使饮料保持商业流通要求饮料和制备饮料的糖浆在制造后未饮用或使用的情况下可免受变质。
可将饮料保持在能够显著延迟微生物和其它变质剂(诸如,细菌、霉菌和真菌)的活性的条件下。这些条件通常要求例如制冷,直到饮用饮料或糖浆。维持这些条件通常是不可能或不实际的。
用于延迟微生物活性的另一种方法是向饮料中添加防腐剂。许多防腐剂是已知的。但是已知的防腐剂通常具有限制在饮料中使用的缺点。例如,当以足以提供防腐作用的浓度使用防腐剂时,防腐剂可能赋予饮料异味。防腐剂还可能对饮料外观造成不利影响。
在饮料或制备饮料的糖浆的制造或储存条件下,一些防腐剂沉淀出或形成晶体或絮凝物。一些防腐剂可能使饮料变浑浊,这在期望饮料为澄清的情况下是不被消费者接受的。这类现象之所以通常不被消费者接受,不仅是因为存在某些与外观有关的偏见,而且还因为消费者常常将浑浊或微粒形成视为饮料变质。饮料瓶中的絮凝物、晶体或者沉淀物或沉淀样沉积物同样不被消费者接受,因为固体通常口味较差并且呈现出令人不悦的口感(例如,砂砾或多沙的口感)。
饮料通常由被稀释的浓缩物制备。然后立即将饮料提供给消费者,或者对其进行包装以便分配和饮用。浓缩物(常常称为糖浆)便于运送,然后用于在一步法中制备饮料。因此,将所有成分(包括防腐剂)放入糖浆中是方便的。然而,由于糖浆是浓缩的,因而在不产生沉淀的情况下引入溶解度有限的化合物通常是不可能的。
山梨酸广泛地用作食品和饮料中的防腐剂。在饮料中使用山梨酸的常见问题是其溶解度较低。山梨酸在高酸性糖浆中的溶解度较低,例如在60%白利度糖浆中为0.08%。通常,糖浆中的山梨酸水平在0.08%-0.2%的范围内,具体取决于糖水平。山梨酸的溶解度取决于温度。溶解度随温度降低而降低。由于溶解度较低,山梨酸在糖浆中是不稳定的,从而形成沉淀。
美国专利8,697,163、8,691,309、8,563,062和8,414,942以及US 2012/0219679提出了用于稳定糖浆和饮料中的山梨酸以及减少所述山梨酸的沉淀的不同方法。山梨酸水分散体通常在正常糖浆中可稳定24-72小时。
但是山梨酸水分散体的稳定性是有限的,因此通常不会用在需要6个月稳定性的汽水用糖浆中。另外,形成水分散体的过程需要高剪切混合和/或均化。但是由于溶解度较差,所得水分散体的山梨酸浓度较低。因此,希望开发一种包括简单步骤来稳定正常糖浆和汽水用糖浆中的山梨酸的方法。
发明内容
本发明的各方面涉及一种用于稳定饮料糖浆(包括汽水用糖浆)中的山梨酸的方法。
在一个方面,利用固体分散技术并使用载体来稳定山梨酸。
在另一个方面,对山梨酸进行喷雾干燥以形成包括山梨酸和载体的小颗粒。
在另一个方面,向饮料糖浆中添加山梨酸/载体。
具体实施方式
如本文所用,“糖浆”或“饮料糖浆”是向其中添加流体(通常为水)以形成即饮型饮料或“饮料”的饮料前体。通常,糖浆与水的体积比介于1:3至1:8之间,更通常介于1:4和1:5之间。糖浆与水的体积比也表示为“投(throw)”。1:5的比例是饮料工业内常用的比例,称为“1+5投”。
如本文所用,“饮料”是指诸如软饮料、汽水饮料、冷冻即饮型饮料、咖啡饮料、茶饮料、运动饮料和酒精产品的饮料。饮料可以是碳酸化或非碳酸化的。另外,在本发明的某些实施方案中,“饮料”也是指果汁、乳制品和其它非澄清饮料。根据本发明的实施方案的饮料可以是澄清或非澄清的。汽水饮料是指在将饮料分配用于立即饮用时通过将风味糖浆或糖浆浓缩物与碳酸化水混合制备的饮料。
“澄清”是指光学清晰度,即澄清饮料可像水一样澄清。在本发明的优选实施方案中,饮料浓缩物和/或成品饮料是澄清的,如通过HACH浊度计(型号2100AN,美国科罗拉多州洛弗兰德的哈希公司(Model 2100AN,Hach Company,Loveland,Colo.))进行的读取所证实的那样。读数最高至3NTU(浊度单位)被认为是非常澄清的,该值最高至5NTU可被认为是澄清的。当这一读数高至大约6至10NTU时,样品是不澄清的,而是非常轻微混浊或轻微混浊的。在15NTU下,饮料是混浊的。因此,认为浊度不大于5NTU的饮料是澄清饮料,其中该值为6NTU是非常轻微混浊的,而为10NTU是轻微混浊的。
如本文所用,“稳定的”饮料糖浆是指在三天以上、通常一周以上、更通常四周以上、更通常十周以上、最通常二十周以上的时间段内,在室温和低温(<50℉)下不发生相分离(即,无晶体、絮凝物、沉淀物或沉淀)的糖浆。如本文所用,“稳定的”成品饮料是指在四周、通常十周以上、更通常二十周以上、更通常六个月以上的时间段内(即,在成品饮料的典型架藏期内),在室温下以及40℉、70℉、90℉和110℉下不发生相分离(即,无晶体、絮凝物、沉淀物或沉淀)的澄清饮料。对于基于汽水的糖浆,需要至少六个月的架藏稳定性。
“保存的”饮料在稳定时间段期间不会表现出显著的微生物活性。
如本文通常所用,“水”是质量适于制造饮料且通常经过调理和处理的水。硬度过大可能引起山梨酸沉淀。在本文提供的指导下,技术人员将能够提供质量足够的水。

为简明起见,当本发明涉及水时,将描述为流体。然而,本文的描述还涉及本文所限定的流体。在本文提供的指导下,技术人员将能够提供适用于形成糖浆的流体。
根据本发明的实施方案制备的饮料和糖浆通常包含水、防腐剂(包括山梨酸)、甜味剂、pH中性化合物、酸和酸性化合物以及风味剂和风味化合物。这些化合物通常包括常见于饮料中的口味调节剂、营养物、着色剂和其它化合物,诸如乳剂、表面活性剂、缓冲剂和抗起泡化合物。
山梨酸和山梨酸盐充当防腐剂。然而,在常见于糖浆中的pH水平下和在糖浆中的足以在由其制备的饮料中提供商业可用的防腐活性的典型山梨酸和/或山梨酸盐浓度下,山梨酸很可能沉淀,除非采取避免沉淀的步骤。山梨酸沉淀对于需要长期储存的汽水用糖浆来说尤其存在问题。
据发现,在制造糖浆和饮料的过程中山梨酸在糖浆中的沉淀可通过以下过程来避免:使用喷雾干燥过程(固体分散)将山梨酸盐或山梨酸盐/山梨酸颗粒分散到惰性亲水性固体载体基质中。然后可将所得颗粒添加到糖浆或饮料组合物中。
首先通过将山梨酸盐溶解在水中来制备山梨酸盐固体分散体。水的温度可为20至99℃,更通常为20至40℃或20至30℃,但最通常为大约室温或20至25℃。溶解的山梨酸盐的量通常用于实现1-60%(w/w)、更通常10-20%(w/w)范围内的浓度。
山梨酸盐可以是任何合适的山梨酸盐,诸如山梨酸钾或山梨酸钠。在具体的方面,使用山梨酸钾。
然后,向溶液中添加至少一种稳定载体,并且在20-99℃下将溶液混合通常至少10分钟、更通常20至30分钟,例如30分钟。pH可不调节,或可调节以维持pH为4至10,具体取决于所用载体的类型。溶液将包含山梨酸盐或者山梨酸盐和山梨酸的混合物,具体取决于pH。因此,调节pH可影响山梨酸盐与山梨酸的比例。低pH有利于较高量的山梨酸,而较高pH有利于存在较少山梨酸或不存在山梨酸。
可通过添加合适的酸或碱(诸如但不限于磷酸、柠檬酸或氢氧化钠)来调节pH。
潜在的稳定载体是有机酸、无机酸的氧化亲水性盐和甜菊醇糖苷,诸如磷酸二氢钾(KH2PO4)、柠檬酸盐诸如柠檬酸钾、酒石酸盐诸如酒石酸钠和六偏磷酸钠(SHMP);多糖,包括麦芽糖糊精、阿拉伯树胶、果胶、卡拉胶、印度树胶、淀粉、藻酸盐、纤维素、改性淀粉、羧甲基纤维素(CMC);甜菊醇糖苷,包括瑞鲍迪甙A、瑞鲍迪甙D或它们的组合。载体优选地不进行预处理,而是按原样使用。
稳定载体与山梨酸盐的比例在0.1:10至10:0.1、0.5:5至5:0.5、0.5:2至2:0.5的范围内。更通常地,该范围将为1:1。
然后对山梨酸盐-载体溶液进行喷雾干燥以产生精细的山梨酸盐固体分散体粉末。喷雾干燥可在200℃的干燥温度和10ml/min的流速下完成。粉末的粒度可为1至500微米、优选10至300微米。基于粉末的总重量计,山梨酸盐固体分散体粉末通常含有20至80重量%、或30至70重量%、或35至65重量%的山梨酸盐。山梨酸盐粉末是架藏稳定的。
在现有技术的饮料和糖浆中,山梨酸在饮料中的浓度通常小于500ppm,并且山梨酸在糖浆中的浓度通常小于1300ppm。在约20℃下、pH介于2.5和4之间的水溶液中(其为饮料和糖浆的典型制造条件),在山梨酸盐浓度为约500ppm时山梨酸开始沉淀,除非采取阻止沉淀的步骤,并且在浓度为1300ppm时,沉淀倾向很明显。
相比之下,可以最高至2300ppm的量向水中添加根据本发明的各方面的山梨酸盐固体分散体粉末,具体取决于溶液是否旨在为糖浆(浓缩物)。山梨酸盐固体分散体粉末在轻微搅动下迅速溶解在水中。在本发明的各方面,汽水用糖浆的浓度为1000至2300ppm,更通常为1000至1500ppm。分散体在山梨酸盐为1000至2300ppm(w/v)时在各种汽水用糖浆(诸如,茶、柠檬水、水果宾治和碳酸化饮料,诸如可乐和柑橘风味糖浆)中是稳定的。
用山梨酸盐固体分散体粉末制备的汽水用糖浆在40℉下持续至少一个月不会发生山梨酸堆出(shock out)(沉淀)。然而,用未处理的山梨酸盐制备的汽水用糖浆在相同条件和相同水平下在7-20天内便堆出。
尽管不希望受任何理论束缚,但是通过山梨酸盐固体分散体粉末实现的溶解度和稳定性增强可归因于通过非共价键合(诸如氢键合)在山梨酸盐/山梨酸与稳定载体之间形成复合物。在汽水用糖浆中,与山梨酸盐/山梨酸相缔合的稳定载体可防止山梨酸结晶,从而导致物理稳定性增加。
山梨酸在固体分散体中的相对溶解度通过紫外-可见(UV-Vis)光度计确定。首先在室温下将山梨酸钾以0.25-0.5%(w/w)的浓度溶解在水中。通过添加pH为2.5-3.0的柠檬酸来酸化山梨酸盐溶液,从而导致山梨酸沉淀。通过离心去除沉淀的山梨酸,并将饱和溶液储存在40℉下。通过UV-vis在λmax=263nm下测量山梨酸的相对浓度。结果表明,固体分散体中存在载体的山梨酸的吸收强度高于不存在载体的山梨酸盐对照的吸收强度(表2)。根据朗伯-比尔定律,山梨酸的浓度与吸收强度成正比(Abs(强度)=K[山梨酸])。因此,吸收强度越高,山梨酸的溶解度越高。
载体类型影响山梨酸在糖浆和饮料中的溶解度和稳定性。含有六偏磷酸钠(SHMP)(具体地,作为载体)的山梨酸盐在低pH的缓冲溶液中表现出高稳定性。山梨酸盐/SHMP固体分散体在pH 2.5-3.0的缓冲溶液中是稳定的。与其它载体相比,在室温下酸化山梨酸盐溶液之后或在40℉下储存饱和溶液14天之后未观察到结晶。稳定性增加可归因于其粒度较小和负ζ电位较高。因为磷酸是pKa较低的强酸,所以山梨酸在水溶液中吸附的磷酸颗粒甚至在低pH下都携带高负电荷。也就是说,ζ电位和粒度似乎在稳定糖浆中的山梨酸中起重要作用。负ζ电位越高,山梨酸/SHMP的稳定性越高。根据DVLO理论的胶体稳定性,颗粒在溶液中的稳定性取决于其总势能(范德瓦尔斯引力、静电排斥力和位阻排斥力)。在总势能之中,很大程度上取决于ζ电位的静电排斥力控制颗粒稳定性。因此,负表面电荷高的山梨酸/SHMP颗粒通过糖浆和饮料中的静电排斥力来稳定。
因此,设想在基本上阻止山梨酸沉淀的同时,以宽范围的山梨酸浓度添加根据本发明的各方面的山梨酸盐。
如技术人员所认识到的,饮料或糖浆中的其它化合物也可能对山梨酸溶解度造成不利影响。例如,硬度可降低山梨酸的溶解度。实现商业保存条件所需的山梨酸浓度也涉及糖浆或饮料的其它条件。例如,碳酸化会降低实现给定保存性能所需的山梨酸的浓度。相比之下,降低pH可降低实现给定保存性能所需的山梨酸的浓度。在本文提供的指导下,技术人员将能够建立适当地保存糖浆或饮料的山梨酸浓度。
根据本发明的各方面,糖浆和饮料包含山梨酸作为防腐剂。其它防腐剂对于技术人员是已知的,并且可与山梨酸一起包括在其中。其它防腐剂包括例如螯合剂诸如EDTA(包括EDTA二钠、EDTA二钠钙和六偏磷酸钠(SHMP))和抗微生物剂诸如苯甲酸盐(尤其是碱金属苯甲酸盐);月桂酰精氨酸酯;肉桂酸的盐;以及抗氧化剂,包括生育酚、BHA和BHT。根据本发明的实施方案,少量使用、并且最通常一点也不使用其它防腐剂。在本文提供的指导下,技术人员将能够选择适当的防腐剂。
本发明的饮料和糖浆实施方案的甜味剂包括含热量的碳水化合物甜味剂、天然的高效甜味剂、合成的高效甜味剂、其它甜味剂以及它们的组合。在本文提供的指导下,可选择合适的增甜体系(无论是单一化合物还是其组合)。

NHPS还包括改性NHPS。改性NHPS包括已天然改变的NHPS。例如,改性NHPS包括但不限于,已经发酵、与酶接触或在NHPS上衍生或取代的NHPS。在一个实施方案中,至少一种改性NHPS可与至少一种NHPS组合使用。在另一个实施方案中,至少一种改性NHPS可在没有NHPS的情况下使用。因此,改性NHPS可替代NHPS或者可与NHPS组合用于本文中所述的任一个实施方案。然而,为简明起见,在本发明的实施方案的描述中,未将改性NHPS明确描述为未改性NHPS的替代物,但应当理解,在本文公开的任一个实施方案中,改性NHPS都可替代NHPS。
如本文所用,短语“合成甜味剂”是指并非存在于自然界中且为高效甜味剂的任何组合物。适用于本发明的实施方案的合成甜味剂(也称为人工甜味剂)的非限制性示例包括三氯蔗糖、安赛蜜钾(安赛蜜K或aceK)或其它盐、阿斯巴甜、阿力甜、糖精、新橙皮甙二氢查耳酮、甜精、纽甜、N-[3-(3-羟基-4-甲氧基苯基)丙基]-L-α-天冬氨酰]-L-苯丙氨酸1-甲酯、N-[3-(3-羟基-4-甲氧基苯基)-3-甲基丁基]-L-α-天冬氨酰]-L-苯丙氨酸1-甲酯、N-[3-(3-甲氧基-4-羟基苯基)丙基]-L-α-天冬氨酰]-L-苯丙氨酸1-甲酯,及其盐。
适用于本发明的实施方案的酸包括常用于饮料和饮料糖浆中的食品级酸。缓冲剂包括形成pH缓冲剂(即,提供趋于将pH维持在选定水平下的化合物组合)的食品级酸的盐。用于具体实施方案中的食品级酸包括但不限于磷酸、柠檬酸、抗坏血酸、己二酸、富马酸、乳酸、苹果酸、酒石酸、乙酸、草酸、单宁酸、绿原酸以及它们的组合。
常用于饮料和糖浆中的风味剂适用于本发明的实施方案的饮料和糖浆中。技术人员将认识到,一些风味剂会使饮料外观变混浊或增加浑浊度。因此,这种风味剂(通常可为乳剂)将不适用于澄清饮料。合适的风味剂包括常用于饮料和糖浆中的与饮料类型相容的风味剂。也就是说,澄清饮料通常不会用会使饮料变浑浊、引入混浊物或以其它方式使饮料对消费者的吸引力降低的风味剂来调味。但是,在技术人员已知这一条件的情况下,可视情况适当地使用已知的风味剂。
符合饮料类型的任何风味剂、风味化合物或风味剂体系均适用于本发明的实施方案中。此外,风味剂可为任何形式,诸如粉末、乳剂、微乳剂等。这些形式中的一些可在饮料中引起浑浊,因此不会用于澄清饮料中。典型的风味剂包括杏仁、杏仁甜酒、苹果、酸苹果、杏、蜜桃、香蕉、黑樱桃、樱桃、树莓、黑树莓、蓝莓、巧克力、肉桂、椰子、咖啡、可乐、越橘、奶油、爱尔兰奶油、水果宾治、姜、柑曼怡、葡萄、西柚、番石榴、红石榴汁、石榴、榛子、猕猴桃、柠檬、酸橙、柠檬/酸橙、橘子、柑橘、芒果、摩卡、橙子、木瓜、百香果、桃、梨、薄荷、留兰香、凤梨椰子、菠萝、草根啤酒、桦木啤酒、洋菝契、草莓、博伊森莓、茶、补剂、西瓜、甜瓜、野樱桃和香草。示例性风味剂是柠檬-酸橙、可乐、咖啡、茶、所有类型的水果风味剂以及它们的组合。
除聚山梨酸酯之外的表面活性剂也可存在于糖浆或饮料中,作为糖浆成分添加。技术人员将认识到,表面活性剂也可作为组成成分的一部分而引入糖浆或饮料中。通常适用于本发明的实施方案中的表面活性剂包括但不限于十二烷基苯磺酸钠、磺基琥珀酸二辛酯或磺基琥珀酸钠二辛酯、十二烷基硫酸钠、氯化十六烷基吡啶(十六烷基吡啶基氯)、溴化十六烷基三甲铵、胆酸钠、氨基甲酰、氯化胆碱、甘胆酸钠、牛磺脱氧胆酸钠、月桂酰精氨酸酯、硬脂酰乳酰酸钠、牛磺胆酸钠、卵磷脂、蔗糖油酸酯、蔗糖硬酸酯、蔗糖棕榈酸酯、蔗糖月桂酸酯以及其它表面活性剂。
技术人员将认识到,可以单独地或组合地添加各成分。另外,可制备干燥成分的溶液并用于向大量的水中方便地添加成分。
技术人员将认识到,如果在糖浆制造过程中使用高于环境温度的温度,则可在完成产品之后或通常在酸化之后且在添加挥发性物质之前降低糖浆的温度。通常,通过向大量的水中添加各成分来制备饮料糖浆。水的温度通常为至少50℉且通常小于200℉,常常介于50℉和160℉之间,并且通常介于50℉和130℉之间。
通常以使各成分之间的潜在不利相互作用或对成分的潜在不利影响达到最小的顺序向大量的水中添加各成分。例如,温敏性营养物可在接近制造过程结束的相对低温部分期间添加。类似地,风味剂和风味化合物通常在临糖浆完成之前添加,以使挥发性组分的潜在损失达到最小并且使任何形式的风味剂损失达到最小。通常,酸化是最后步骤之一,常在添加温敏性的挥发性风味剂物质之前进行。因此,风味剂或风味剂组分或其它挥发性物质和营养物通常在适当的时候和适当的温度下添加。在本文提供的指导下,技术人员可确定引入风味剂和其它挥发性物质的适当时间。
适当地使用这些顺序或其它成分添加顺序中的任一种,因为添加成分的顺序可在本文提供的指导下由技术人员确定。
包装所得糖浆,并且可将其储存。糖浆可基本上立即用于制造饮料,通常对所述饮料进行包装以便分配。也可将糖浆分配给装瓶工,装瓶工对通过添加水和可能的其它物质(如碳酸化物质)制备的饮料进行包装。通常,投为1+5。
本发明的具体方面是山梨酸盐分散体粉末在汽水饮料中的用途。糖浆通常被售给将糖浆与投水以及可能的其它成分(诸如,碳酸化物质)混合以便立即饮用的那些人。
本发明的其它实施方案涉及稳定保存的即饮型饮料的制造。这类饮料通过将等分量的糖浆与适量的稀释水进行混合来制备。通常,使用1体积糖浆与5体积水或其它流体的比例,也称为“1+5投”。
本发明的糖浆实施方案是用山梨酸保存的稳定饮料糖浆,所述糖浆的架藏期在室温下为至少三天或至少约一周。更通常地,本发明的糖浆实施方案的架藏期为至少四周、或至少七周、或至少二十周,并且甚至更通常为至少六个月。
本发明的饮料实施方案是用山梨酸保存的稳定饮料,所述饮料的架藏期在40℉和110℉之间的温度下为至少四周或至少十周。更通常地,本发明的饮料实施方案的架藏期为至少四周、或至少六周、或至少二十周,并且甚至更通常为至少六个月。

实施例1
向1000ml烧杯中添加15g山梨酸钾和500g水。在室温下混合15分钟之后,山梨酸钾完全溶解在水中。通过缓慢添加磷酸(50%)将山梨酸盐溶液的pH从9.2调节至6.0。然后,添加43g(35%)阿拉伯树胶溶液。将混合物混合20分钟。随后,对山梨酸盐/阿拉伯树胶溶液进行喷雾干燥,从而产生含有50%山梨酸钾的粉末。物质回收产率为85%。
实施例2
向500ml烧杯中添加25g山梨酸钾和300g水。在室温下混合15分钟之后,山梨酸钾完全溶解在水中,其中pH为8.85。然后,添加25g麦芽糖糊精(DE13-18%)粉末。将混合物混合20分钟。溶液pH从8.85降至8.3。随后,对山梨酸盐/麦芽糖糊精溶液进行喷雾干燥,从而产生含有50%山梨酸钾的粉末。物质回收产率为86%。
实施例3

实施例4
向500ml烧杯中添加15g单磷酸钾和200g水。在室温下混合15分钟之后,单磷酸钾完全溶解在水中,其中pH为4.3。通过缓慢添加23.22g氢氧化钠(3M)将单磷酸钾溶液的pH从4.3调节至6.9。然后,添加15g山梨酸钾。将混合物混合20分钟,其中pH为6.93。随后,对山梨酸盐/单磷酸钾溶液进行喷雾干燥,从而产生含有43.38%山梨酸钾的粉末。物质回收产率为87%。
实施例5
向500ml烧杯中添加20g单磷酸钾和200g水。在室温下混合15分钟之后,单磷酸钾完全溶解在水中,其中pH为4.38。通过缓慢添加20.47g氢氧化钠(3M)将单磷酸钾溶液的pH从4.48调节至6.76。然后,添加20g山梨酸钾。将混合物混合20分钟,其中pH为6.76。随后,对山梨酸盐/单磷酸钾溶液进行喷雾干燥,从而产生含有37%山梨酸钾的粉末。物质回收产率为85%。
实施例6
向500ml烧杯中添加20g山梨酸钾和360g水。在室温下混合15分钟之后,山梨酸钾完全溶解在水中,其中pH为8.92。将山梨酸盐溶液加热至45℃。通过添加0.45g磷酸(25%)将pH调节至7.02。然后,添加30g麦芽糖糊精(DE13-18%)粉末。将混合物混合20分钟。随后,对山梨酸盐/麦芽糖糊精溶液进行喷雾干燥,从而产生粉末。物质回收产率为87%。
实施例7

Claims (20)
1.一种用于制备山梨酸盐粉末的方法,所述方法包括将山梨酸盐溶解在水中,向所述山梨酸盐溶液中添加稳定载体,以及对所述载体-山梨酸盐溶液进行喷雾干燥以形成所述山梨酸盐粉末。
2.根据权利要求1所述的方法,其中所述山梨酸盐是山梨酸钾。
3.根据权利要求1所述的方法,其中所述载体选自有机酸和无机酸的氧化亲水性盐、多糖、甜菊醇糖苷或它们的组合。
4.根据权利要求1所述的方法,其中所述载体选自六偏磷酸钠(SHMP)、磷酸二氢钾、柠檬酸钾、酒石酸钠、麦芽糖糊精、阿拉伯树胶、果胶、卡拉胶、印度树胶、淀粉、藻酸盐、纤维素、改性淀粉、羧甲基纤维素(CMC)、瑞鲍迪甙A、瑞鲍迪甙D以及它们的组合。
5.根据权利要求1所述的方法,其中所述载体-山梨酸盐溶液的pH为4至11。
6.根据权利要求5所述的方法,所述方法还包括通过添加酸或碱来调节所述pH。
7.根据权利要求6所述的方法,所述方法还包括通过添加磷酸或氢氧化钠来调节所述pH。
8.根据权利要求1所述的方法,其中所述稳定载体与山梨酸盐的比例在0.1:10至10:0.1的范围内。
9.根据权利要求1所述的方法,其中所述稳定载体与山梨酸盐的比例在0.5:5至5:0.5的范围内。
10.根据权利要求1所述的方法,其中所述稳定载体与山梨酸盐的比例在1:1的范围内。
11.根据权利要求1所述的方法,其中基于所述粉末的总重量计,所述粉末包含20至80重量%的山梨酸盐。
12.一种制备饮料糖浆的方法,所述方法包括将水、山梨酸盐粉末和至少一种选自甜味剂和风味剂的成分混合,其中所述山梨酸盐-载体粉末通过以下过程制备:将山梨酸盐溶解在水中,向所述山梨酸盐溶液中添加稳定载体,以及对所述载体-山梨酸盐溶液进行喷雾干燥以形成所述山梨酸盐粉末。
13.根据权利要求12所述的方法,其中所述山梨酸盐是山梨酸钾。
14.根据权利要求12所述的方法,其中所述载体选自有机酸和无机酸的氧化亲水性盐、多糖、甜菊醇糖苷或它们的组合。
15.根据权利要求12所述的方法,其中所述载体选自六偏磷酸钠(SHMP)、磷酸二氢钾、柠檬酸钾、酒石酸钠、麦芽糖糊精、阿拉伯树胶、果胶、卡拉胶、印度树胶、淀粉、藻酸盐、纤维素、改性淀粉、羧甲基纤维素(CMC)、瑞鲍迪甙A、瑞鲍迪甙D以及它们的组合。
16.根据权利要求12所述的方法,其中所述稳定载体与山梨酸盐的比例在0.1:10至10:0.1的范围内。
17.根据权利要求12所述的方法,其中所述稳定载体与山梨酸盐的比例在0.5:5至5:0.5的范围内。
18.根据权利要求12所述的方法,其中基于所述粉末的总重量计,所述粉末包含20至80重量%的山梨酸盐。
19.一种饮料糖浆,所述饮料糖浆包括将水、山梨酸盐粉末和至少一种选自甜味剂和风味剂的成分混合,其中所述山梨酸盐-载体粉末通过以下过程制备:将山梨酸盐溶解在水中,向所述山梨酸盐溶液中添加稳定载体,以及对所述载体-山梨酸盐溶液进行喷雾干燥以形成所述山梨酸盐粉末。
20.根据权利要求19所述的饮料糖浆,所述饮料糖浆还包含1000至2300ppm的山梨酸盐。
