Abstract
本发明涉及特医食品领域,特别公开了一种促进安全吞咽的营养食品及其制备方法。该促进安全吞咽的营养食品,其特征为,由以下重量份数的原料混合制成流食:麦芽糊精5‑10份、阿拉伯胶1‑3份、瓜尔胶2‑6份、赤藓糖醇1‑3份、大蒜素粉6‑12份、山楂粉6‑12份、薏米粉15‑25份、水60‑80份。本发明制备工艺简单,生产成本低,产品稳定性好,长时间保存不会出现分层、离析现象,便于工业化生产,符合吞咽障碍患者的食用需求,适于广泛推广应用。

技术领域
本发明涉及特医食品领域,特别涉及一种促进安全吞咽的营养食品及其制备方法。
背景技术
进入到21世纪,世界人口老龄化问题不断凸显,很多发达国家已进入到老龄化社会。我国作为人口大国,老龄化问题也正在不断加剧,据统计,2015年我国60岁及以上人口达到2.22亿,占总人口的16.15%,预计2025年,六十岁以上人口将达到3亿,成为超老年型国家,2040年,我国人口老龄化进程将达到顶峰。伴随着人口老龄化问题,老年人的健康和生活质量应该引起社会的高度关注。很多老年人由于口腔以及其他身体原因,存在吞咽障碍,无法或较困难直接饮用液体食物,这严重影响了他们的正常饮食。
吞咽是人类最复杂的行为之一,需要多个神经节段和口、咽及食道的不同肌肉参与,同时也是人体进食获得营养成分最主要的行为方式。吞咽障碍表现为对液体或固体食物的摄取、吞咽发生障碍或吞咽时发生呛咳、哽噎,在老年人群,尤其是老年痴呆、脑卒中、脑外伤和帕金森病人中发病率极高。吞咽障碍会导致患者营养不良、吸入性肺炎、肺部感染、脱水、窒息等并发症,严重降低患者的生活质量,甚至导致患者死亡。
食物的吞咽与食物的流变性质和糜粒的组成有着密切的关系,安全的吞咽模式是糜粒的流变与口、咽及食道肌肉推动力的协同作用。目前,在医学上有多种康复训练方法缓解吞咽障碍,但都无法完全恢复。临床医学显示:吞咽障碍患者的进食以固体食物最难吞咽,糜烂食物最易吞咽,液体食物最易误吸,糊状食物不易误吸。因此,Logemann等认为通过增加食物粘度来控制食物的流动是吞咽障碍治疗的一种最简单而可行的方法,而这种方法可通过设计食物结构、改变食物流变性质来实现。
在日本,吞咽障碍人群的食物配方的研究也取得一定进展,并有相关商业化产品。而我国关于特殊人群食品的研究才刚刚起步,对于吞咽障碍人群的特殊食品更是还没有相关研究报道。
由于吞咽是一个非常复杂的过程,吞咽障碍人群食品研究存在一定的难度。目前,该人群主要的进食方式是采用导管引流喂食,这种方式在一定程度上增加了护理难度和成本,也使该人群的生活质量大大降低。为了改善这种现状,美国一家康复中心首先提出了吞咽障碍人群食物标准化的概念,而后Pardoe等评估了标准饮食在防止误吸和改善患者生活质量方面的效果,结果表明:通过标准食谱可有效降低误吸的发生,并减少对导管引流喂食的依赖。Bakheit在此基础上,提出对于神经性吞咽障碍患者最佳的食品粘度是“浆状”或“酸奶状”,但这个概念需要有非常精准的测定,一旦流体太稀,就会增加误吸的危险,而流体太粘,则会遭到患者的拒绝。
近年来不断加剧的人口老龄化趋势导致以吞咽障碍为代表的进食受限问题逐渐突出。老年人随着生理功能的减弱,出现了饮食功能障碍,尤其是他们的咀嚼和吞咽能力受到了很大的影响。不当的饮食会引起呛食,甚至引发吸入性肺炎,严重的还会导致生命危险。因此,如何通过改良食品配方来给老年人提供可安全饮食的食品是当今食品工业的巨大挑战。
发明内容
本发明为了弥补现有技术的不足,提供了一种制备简单、生产成本低的促进安全吞咽的营养食品及其制备方法。
本发明是通过如下技术方案实现的:
一种促进安全吞咽的营养食品,由以下重量份数的原料混合制成流食:
麦芽糊精5-10份、阿拉伯胶1-3份、瓜尔胶2-6份、赤藓糖醇1-3份、大蒜素粉6-12份、山楂粉6-12份、薏米粉15-25份、水60-80份。
上述原料优选的重量配比为:
麦芽糊精6-8份、阿拉伯胶1.5-2.5份、瓜尔胶3-5份、赤藓糖醇1.5-2.5份、大蒜素粉8-10份、山楂粉8-10份、薏米粉18-22份、水65-75份。
进一步优选的配比如下:
麦芽糊精7份、阿拉伯胶2份、瓜尔胶4份、赤藓糖醇2份、大蒜素粉9份、山楂粉9份、薏米粉20份、水70份。
麦芽糊精是DE值小于20的淀粉水解产物。它介于淀粉和淀粉糖之间,是一种价格低廉、口感滑腻、没有任何味道的营养性多糖。
阿拉伯胶是一种安全无害的增稠剂,并在空气中自然凝固而成的树胶。为淡黄色的块或白色粉末,是分子量为22-30万的高分子电解质,加水则缓慢地溶解成浓厚无味的粘稠剂,经过一些时间则粘度减低。
瓜尔胶为大分子天然亲水胶体,主要由半乳糖和甘露糖聚合为食品而成,属于天然半乳甘露聚糖,是一种天然的增稠剂。
赤藓糖醇由小麦、玉米等淀粉经安全、适当的食用级嗜高渗酵母如丛梗孢酵母、脂假丝酵母或类丝孢酵母在高浓度下进行酶解发酵后,发酵醪液经加热杀菌并过滤然后经离子交换树脂、活性炭和超滤纯化,结晶、洗涤并干燥而得,是一种低热量甜味剂。
大蒜素粉是从葱科葱属植物大蒜的鳞茎中提取的一种有机硫化合物,具有消炎、降血压、降血脂等多种生物学功能,可作为一种广谱抗菌药使用。
山楂粉含多种维生素、酒石酸、柠檬酸、山楂酸、苹果酸等,还含有黄酮类、内酯、糖类、蛋白质、脂肪和钙、磷、铁等矿物质,所含的解脂酶能促进脂肪类食物的消化。
薏米粉富含丰富的蛋白质、维生素B1、B2、钙、磷、铁、水溶性纤维、蛋白质以及油脂等,具有极高的美容和保健价值。
上述促进安全吞咽的营养食品的制备方法,包括如下步骤:
(1)将阿拉伯胶、瓜尔胶、赤藓糖醇冻干、混合后粉碎,得到冻干粉末;
(2)将麦芽糊精、大蒜素粉、山楂粉、薏米粉溶于水中,并加热至50-60℃,搅拌均匀得混合液;
(3)将冻干粉末加入到混合液中,搅拌至完全溶解,灭菌、分装得到产品。
本发明中,阿拉伯胶、瓜尔胶、赤藓糖醇冻干后粉碎,提高吸收系统,溶解后同时提高液体粘性,使其符合吞咽困难患者的需求,麦芽糊精、大蒜素粉、山楂粉、薏米粉溶解悬浮在混合液中,为患者提供必要的营养,同时有限改善患者身体状况,提高其免疫力。
本发明制备工艺简单,生产成本低,产品稳定性好,长时间保存不会出现分层、离析现象,便于工业化生产,符合吞咽障碍患者的食用需求,适于广泛推广应用。

为了使本发明的目的、技术方案及优点更加清楚明白,以下结合具体实施例,对本发明作进一步详细说明。应当理解,此处所描述的具体实施例仅仅用于解释本发明,并不用于限定本发明。
实施例1:
一种促进安全吞咽的营养食品,由以下原料混合制成而成:
麦芽糊精5kg、阿拉伯胶1kg、瓜尔胶2kg、赤藓糖醇1kg、大蒜素粉6kg、山楂粉6kg、薏米粉15kg、水60kg。
其制备方法如下:
(1)将阿拉伯胶、瓜尔胶、赤藓糖醇冻干、混合后粉碎,得到冻干粉末;
(2)将麦芽糊精、大蒜素粉、山楂粉、薏米粉溶于水中,并加热至50-60℃,搅拌均匀得混合液;
(3)将冻干粉末加入到混合液中,搅拌至完全溶解,灭菌、分装得到产品。
实施例2:
一种促进安全吞咽的营养食品,由以下原料混合制成而成:
麦芽糊精10kg、阿拉伯胶3kg、瓜尔胶6kg、赤藓糖醇3kg、大蒜素粉12kg、山楂粉12kg、薏米粉25kg、水80kg。
其制备方法如实施例1。
实施例3:
一种促进安全吞咽的营养食品,由以下原料混合制成而成:
麦芽糊精6kg、阿拉伯胶1.5kg、瓜尔胶3kg、赤藓糖醇1.5kg、大蒜素粉8kg、山楂粉8kg、薏米粉18kg、水65kg。
其制备方法如实施例1。
实施例4:
一种促进安全吞咽的营养食品,由以下原料混合制成而成:
麦芽糊精8kg、阿拉伯胶2.5kg、瓜尔胶5kg、赤藓糖醇2.5kg、大蒜素粉10kg、山楂粉10kg、薏米粉22kg、水75kg。
其制备方法如实施例1。
实施例5:
一种促进安全吞咽的营养食品,由以下原料混合制成而成:
麦芽糊精7kg、阿拉伯胶2kg、瓜尔胶4kg、赤藓糖醇2kg、大蒜素粉9kg、山楂粉9kg、薏米粉20kg、水70kg。
其制备方法如实施例1。
根据“国民吞咽障碍饮食指南”(NDD),该指南将食物的粘度划分为四类:极稀状(1-50cp),浆液状(51-350cp),蜂蜜状(351-1750cp)和可固定在勺子上的稠状(>1750cp)。
经检测,上述实施例1- 5所得营养食品均为蜂蜜状,符合吞咽障碍患者的需求,可作为吞咽障碍患者的标准食品。

1.一种促进安全吞咽的营养食品,其特征为,由以下重量份数的原料混合制成流食:麦芽糊精5-10份、阿拉伯胶1-3份、瓜尔胶2-6份、赤藓糖醇1-3份、大蒜素粉6-12份、山楂粉6-12份、薏米粉15-25份、水60-80份。
2.如权利要求1所述的促进安全吞咽的营养食品,其特征为,由以下重量份数的原料混合制成:麦芽糊精6-8份、阿拉伯胶1.5-2.5份、瓜尔胶3-5份、赤藓糖醇1.5-2.5份、大蒜素粉8-10份、山楂粉8-10份、薏米粉18-22份、水65-75份。
3.如权利要求1或2所述的促进安全吞咽的营养食品,其特征为,由以下重量份数的原料混合制成:麦芽糊精7份、阿拉伯胶2份、瓜尔胶4份、赤藓糖醇2份、大蒜素粉9份、山楂粉9份、薏米粉20份、水70份。
4.如权利要求1所述的促进安全吞咽的营养食品的制备方法,其特征为,包括如下步骤:(1)将阿拉伯胶、瓜尔胶、赤藓糖醇冻干、混合后粉碎,得到冻干粉末;(2)将麦芽糊精、大蒜素粉、山楂粉、薏米粉溶于水中,并加热至50-60℃,搅拌均匀得混合液;(3)将冻干粉末加入到混合液中,搅拌至完全溶解,灭菌、分装得到产品。
