技术领域
本发明涉及全营养代餐粉领域,特别涉及一种低GI全营养代餐粉及其制备方法。
背景技术
近年来,随着人们对身体健康越来越关注,健身人群和肥胖人群,对食物的要求也有了新的变化,低GI(Glycemic Index“食物血糖生成指数”,也可简称“升糖指数”)食物得到很多人的关注,
发明内容
为解决上述现有技术存在的问题,本发明的目的在于提供一种低GI全营养代餐粉及其制备方法,普通的糖尿病人的代餐粉中是不添加淀粉的,而本方案中是含有淀粉的,淀粉是人体的主要能量来源,糖尿病人比普通人更加需要保证能量的摄入。食品原料营养、健康和安全,病人不用担心摄入了淀粉而导致体内血糖大幅上升。在满足人体正常营养需求的前提下,达到低GI的目的,具有很好的商业应用前景。
为达到上述目的,本发明的技术方案为:

进一步的,所述蔬菜干碎由香菇、秋葵、红薯、青萝卜、苹果组成,重量比为2:1:1.5:1:1。
低GI全营养代餐粉的制备方法,包括如下步骤:(1)将3D-全麦粉低温焙熟,并将其与其它所有原材料按比例称量混合均匀;
(2)将蔬菜干、锅巴、花生分别粉碎备用;
(3)将所有物料加入搅拌机中混合均匀;
(4)按要求的重量分装;
(5)封口。
相对于现有技术,本发明的有益效果为:

低GI全营养代餐粉的制备方法,包括如下步骤:(1)将3D-全麦粉低温焙熟,并将其与其它所有原材料按比例称量混合均匀;
(2)将蔬菜干、锅巴、花生分别粉碎备用;
(3)将所有物料加入搅拌机中混合均匀;
(4)按要求的重量分装;
(5)封口。
我们对20名自愿参与的糖尿病患者进行了初步的试吃实验,要求受试者间歇食用馒头、米饭等普通碳水化合物和我们的代餐粉,并在食用后2小时检测毛细血管血糖值。得到如下的数据。(正常人的餐后2h血糖浓度应该<7.8mmol/L,糖尿病前期为7.8到11mmol/L之间,本次受试人群主要为糖尿病前期或者轻微糖尿病患者,因为见效较快,如果是重度糖尿病患者需长时间服用才能看到效果。)
案例2一位有六年糖尿病史的李女士,需要定期打胰岛素来控制血糖的升高。即便如此,血糖依旧高于正常水平,在食用本发明中的稳糖餐数月后,在打了胰岛素的情况下,血糖值比平时降低了1个单位。
本发明中具有辅助降血糖作用的组分:
(1)发酵桑叶红茶:桑叶是中医自古作为治疗消渴症(即现代医学的糖尿病)的主要药材。原理之一是通过生物碱DNJ(1-脱氧野尻霉素)对二糖类分解酶活性产生抑制作用,从而抑制小肠对双糖的吸收,降低食后血糖的高峰值;原理之二是通过桑叶生物碱fagomine及桑叶多糖促进β细胞分泌胰岛素,进而达到降血糖的效果。桑叶发酵后通过低温烘干等特殊工艺,将桑叶红茶里的1-脱氧野尻霉素这一降糖有效成分完整地保留下来。
(2)3D-全麦粉,小麦是人体每日摄入碳水化合物的主要选择,为五谷之首。小麦去皮后磨成的面粉在加工过程中损失了大量有效成分,因此不适合作为本产品主要研究的载体,也是目前各种糖尿病人饮食建议少吃或者不吃的原因。全麦面粉,因为在小麦加工磨粉中没有去掉麸皮,保留了麸皮中的大量维生素、矿物质、纤维素,因此具有更高的营养价值。而3D-全麦粉不同于目前市场上所有的全麦粉加工技术,特殊的工艺可以完全保留小麦中的全部营养成分并且口感和营养价值也好于普通全麦粉。
(3)均衡营养设计:均衡营养方法之一就是每天吃很多种类的食物,三大能量物质分别选择不同的食物来源,动物蛋白采用了乳清蛋白,动物油脂选择了富含结构脂肪酸的芭莎鱼油,
强化了糖尿病人需要的特殊微量元素和维生素还有提高人体免疫力的氨基酸和多肽及益生元。淀粉和膳食纤维来源选择小麦、荞麦、莜麦、大米、糯米等。蛋白质和脂肪均选择了动物源和植物源的原料。
(4)风味和口感调整:选择添加果蔬粉、膨化食品、坚果碎等,增加让消费者喜爱的风味,赋予产品咀嚼功能,满足人们对食物最基本的感观诉求,提高糖尿病患者的生活质量,满足消费心理。
以上所述,仅为本发明的具体实施方式,但本发明的保护范围并不局限于此,任何不经过创造性劳动想到的变化或替换,都应涵盖在本发明的保护范围之内。因此,本发明的保护范围应该以权利要求书所限定的保护范围为准。
