The invention provides a method for separating and extracting polyhydric alkanol in brown sugar, which comprises the following steps: 1. adding water at 40-50 ℃ to dissolve brown sugar to obtain a brown sugar solution with 10-13 brix; 2. filtering the brown sugar solution to obtain brown sugar clear liquid; 3. separating the clear brown sugar solution by a primary molecular sieve with the aperture of 600-1100 nm to obtain a polyol rich solution; 4. and (3) sequentially flowing the polyol enriched liquid through a first layer of molecular sieve chromatography with the aperture of 800-1000 nm, a second layer of molecular sieve chromatography with the aperture of 500-700 nm and a third layer of molecular sieve chromatography with the aperture of 200-400 nm to obtain a polyol concentrated liquid, and completing separation and extraction.
