技术领域
本发明属于食品技术领域,更具体的说是涉及一种富含维生素C的复合果汁饮料及其制备方法。
背景技术
市场上标识高维生素C含量的食品种类很少,更多的是维生素C低含量的饮料,或者是维生素C含片、泡腾片、软糖等。市面同类型维生素C果汁饮品大多通过添加营养强化剂维生素C来提高产品整体维生素C含量。
目前,市场上复合果汁饮料多添加白砂糖、果葡糖浆等甜味料调整甜度,来改善果汁的糖酸比,以达到适宜的口感,但过多糖分的添加,大量饮用容易造成肥胖,且易造成龋齿,糖尿病人不适宜,适宜人群窄,并且在生产过程中大多添加酸度剂、香精、色素、防腐剂等辅料,过多添加剂的添加,使产品失去原有的风味及营养成分,影响了产品的纯天然口味。
因此,研发一种酸甜适口,口感柔和,风味醇厚、色泽好的富含维生素C的复合果汁饮料及其制备方法是本领域技术人员亟需解决的问题。
发明内容
有鉴于此,本发明提供了一种酸甜适口,口感柔和,风味醇厚、色泽好的富含维生素C的复合果汁饮料及其制备方法。
为了实现上述目的,本发明采用如下技术方案:
一种富含维生素C的复合果汁饮料,包括下述重量份的原料:酸枣浓缩汁5-20份,针叶樱桃浓缩汁0.5-5份,结晶果糖1-10份,三氯蔗糖0.001-0.2份,羧甲基纤维素钠0.01-0.5份,黄原胶0.01-0.5份,水70-100份。
本发明的有益效果:本发明产品将增加补充维生素C产品的新剂型,果饮高维生素C含量,口感接近天然果汁,更受消费者喜爱。
本产品添加的酸枣肉具有降血脂、抗心率失常、降压、镇静、催眠、扩张血管等作用,含有氨基酸、蛋白质、脂肪、维生素C、胡萝卜素、苹果酸、柠檬酸、单糖、多糖及微量元素等多种营养成分。
本产品通过添加维C含量高的针叶樱桃,以天然原料:水果的方式向产品中引入维生素C,以提高产品整体维生素C含量,市面上针叶樱桃相关产品均为咀嚼片,泡腾片,果汁饮料产品很少。针叶樱桃含有蛋白质、糖、果酸及维A、维B1、维B2、维C、叶黄素、玉米黄质和胡萝卜素等营养成分,具有提高免疫力、抗氧化、抗菌、抗病毒和缓解贫血等功效,其中维生素C的质量分数高达1215~3024mg/100g,是番石榴、木瓜及草莓等水果的10~50倍。
这两种水果因其具有丰富的营养物质,均受到消费者的青睐,因此很多生产厂家将其制作成果汁以满足消费者的需要。但现有技术中,单一的利用酸枣制成的果汁饮料较多,香气淡薄,口感比较单调,营养成份不够全面,与其它水果结合,制成复合果汁饮料也并不常见,同时,与针叶樱桃组合制成复合果汁饮料的报道尚没有见到。本发明综合两种水果的营养价值,符合当今人们对果汁饮料的原料复合化、营养均衡化的追求。
本发明产品呈深棕色,色泽均匀,具有酸枣、针叶樱桃的香气、无异味,无酸涩感,酸甜爽口,口感细腻,组织状态均匀,无分层沉淀。
本发明产品稳定性好,静置60d不分层沉淀,在不添加防腐剂的条件下,可以保存6个月。
优选地,上述富含维生素C的复合果汁饮料包括下述重量份的原料:酸枣浓缩汁10份,针叶樱桃浓缩汁2.4份,结晶果糖5份,三氯蔗糖0.006份,羧甲基纤维素钠0.225份,黄原胶0.075份,水100份。
更优选地,上述富含维生素C的复合果汁饮料的原料还包括甜菊糖苷、罗汉果甜苷、木糖醇、山梨糖醇、异麦芽酮糖醇或赤藓糖醇中的一种或几种的混合物。
采用上述更优选地的有益效果:使用结晶果糖及高倍甜味剂调味,甜味温和舒适,同时照顾到患糖尿病、龋齿等人群,增大适宜人群范围。
本发明还提供一种富含维生素C的复合果汁饮料的制备方法,包括以下步骤:
(1)根据上述一种富含维生素C的复合果汁饮料称取各原料;
(2)化胶化糖:将40-55份水在搅拌状态下加入混合均匀的羧甲基纤维素钠、黄原胶、结晶果糖和三氯蔗糖,继续搅拌得到料液1;
(3)调配:将料液1加入酸枣浓缩汁和针叶樱桃浓缩汁,搅拌后得到料液2;
(4)定容:将料液2加入剩余50份水,得到料液3;
(5)均质:将料液3高压均质;
(6)脱气:将高压均质完成后的料液3进行脱气;
(7)灭菌:将脱气完成后的料液灭菌,得到上述富含维生素C的复合果汁饮料。
本发明的有益效果:本发明富含维生素C的复合果汁饮料生产工艺简单,具有良好的稳定性,便于产业化生产。

(1)称取酸枣浓缩汁12kg,针叶樱桃浓缩汁2kg,结晶果糖7kg,三氯蔗糖0.008kg,羧甲基纤维素钠0.3kg,黄原胶0.1kg,水70kg;
(2)化胶化糖:将羧甲基纤维素钠、黄原胶、结晶果糖和三氯蔗糖混合25min,混合的转速为1500r/min,将40kg水在搅拌状态下加入混合均匀的羧甲基纤维素钠、黄原胶、结晶果糖和三氯蔗糖,继续搅拌25min得到料液1,搅拌转速为1500r/min;
(3)调配:将料液1加入酸枣浓缩汁和针叶樱桃浓缩汁,搅拌15min后得到料液2,搅拌转速为400r/min;
(4)定容:将料液2加入剩余30kg水,得到料液3,取样测可溶性固形物含量,控制可溶性固形物≥13%,控制pH为3.4;
(5)均质:将料液3在压力为18MPa均质10min;
(6)脱气:将高压均质完成后的料液3进行脱气,脱气时真空度为0.06MPa;

(3)调配:将料液1加入酸枣浓缩汁和针叶樱桃浓缩汁,搅拌20min后得到料液2,搅拌转速为500r/min;
(4)定容:将料液2加入剩余45kg水,得到料液3,取样测可溶性固形物含量,控制可溶性固形物≥13%,控制pH为3.5;
(5)均质:将料液3在压力为19MPa均质10min;
(6)脱气:将高压均质完成后的料液3进行脱气,脱气时真空度为0.07MPa;
(7)灭菌:将脱气完成后的料液采用高温瞬时杀菌机杀菌,杀菌温度为110℃,杀菌时间为15s,将灭菌后的料液储存至成品罐,成品罐的出料温度为92℃,得到富含维生素C的复合果汁饮料;
(8)无菌灌装:将成品罐至灌装机采用CIP五步法清洗,并用90℃以上热水冲洗消毒30min,将瓶体用50ppm氯水冲洗消毒,将瓶盖清洗并干燥后用臭氧消毒30min,然后将富含维生素C的复合果汁饮料降温至50℃进行灌装;

(10)喷淋降温:装瓶后的成品经喷淋降温至30℃以下。
实施例3
富含维生素C的复合果汁饮料的制备方法,包括以下步骤:
(1)称取酸枣浓缩汁8kg,针叶樱桃浓缩汁2.8kg,结晶果糖6kg,三氯蔗糖0.004kg,羧甲基纤维素钠0.225kg,黄原胶0.075kg,水100kg;
(2)化胶化糖:将羧甲基纤维素钠、黄原胶、结晶果糖和三氯蔗糖混合45min,混合的转速为2000r/min,将50kg水在搅拌状态下加入混合均匀的羧甲基纤维素钠、黄原胶、结晶果糖和三氯蔗糖,继续搅拌45min得到料液1,搅拌转速为2000r/min;
(3)调配:将料液1加入酸枣浓缩汁和针叶樱桃浓缩汁,搅拌30min后得到料液2,搅拌转速为700r/min;
(4)定容:将料液2加入剩余50kg水,得到料液3,取样测可溶性固形物含量,控制可溶性固形物≥13%,控制pH为3.6;
(5)均质:将料液3在压力为20MPa均质10min;
(6)脱气:将高压均质完成后的料液3进行脱气,脱气时真空度为0.08MPa;
(7)灭菌:将脱气完成后的料液采用高温瞬时杀菌机灭菌,杀菌温度为115℃,杀菌时间20s,将灭菌后的料液储存至成品罐,成品罐的出料温度为90℃,得到富含维生素C的复合果汁饮料;
(8)无菌灌装:将成品罐至灌装机采用CIP五步法清洗,并用90℃以上热水冲洗消毒30min,将瓶体用60ppm氯水冲洗消毒,将瓶盖清洗并干燥后用臭氧消毒30min,然后将富含维生素C的复合果汁饮料降温至50℃进行灌装;

(2)化胶化糖:将羧甲基纤维素钠、黄原胶、结晶果糖和三氯蔗糖混合30min,混合的转速为1800r/min,将50kg水在搅拌状态下加入混合均匀的羧甲基纤维素钠、黄原胶、结晶果糖和三氯蔗糖,继续搅拌30min得到料液1,搅拌转速为1800r/min;
(3)调配:将料液1加入酸枣浓缩汁和针叶樱桃浓缩汁,搅拌20min后得到料液2,搅拌转速为500r/min;
(4)定容:将料液2加入剩余50kg水,得到料液3,取样测可溶性固形物含量,控制可溶性固形物≥13%,控制pH为3.4;

(3)调配:将料液1加入酸枣浓缩汁和针叶樱桃浓缩汁,搅拌25min后得到料液2,搅拌转速为600r/min;
(4)定容:将料液2加入剩余50kg水,得到料液3,取样测可溶性固形物含量,控制可溶性固形物≥13%,控制pH为3.6;

对比例1
酸枣浸提浓缩汁:将干酸枣破碎至2~4瓣,按照1:6倍水,70℃±5℃浸泡1小时,中间间隔20min搅拌,每次搅拌时间5min,过滤200目;剩余滤渣二次浸泡,6倍原料量水浸泡30min,中间间隔搅拌,搅拌时间5min,过滤200目,浓缩至终量,得酸枣浸提浓缩汁。
品质检测
分别取50mL本发明中各实施例的复合果汁饮料与等比例的酸枣浸提浓缩汁进行对比,品尝其口感,测其可溶性固形物及pH,对比结果如表1所示。

从表1可以看出,本发明的复合果汁饮料经过调配后,酸甜爽口,口感柔和细腻,组织状态均匀,无分层沉淀,同时具有酸枣、针叶樱桃两种天然水果的香味,而酸枣浸提浓缩汁,口感单一寡淡且较涩,口感不好。
采用本发明实施例1-5的方法制得的富含维生素C的复合果汁饮料,经试验检测,结果如下:
感官指标:深棕色,色泽均匀,具有酸枣、针叶樱桃的香气、无异味,无酸涩感,酸甜爽口,口感细腻,组织状态均匀,无分层沉淀。
理化指标:维生素C含量大于等于300mg/100mL。

1.一种富含维生素C的复合果汁饮料,其特征在于,包括下述重量份的原料:酸枣浓缩汁5-20份,针叶樱桃浓缩汁0.5-5份,结晶果糖1-10份,三氯蔗糖0.001-0.2份,羧甲基纤维素钠0.01-0.5份,黄原胶0.01-0.5份,水70-100份。
2.一种富含维生素C的复合果汁饮料的制备方法,其特征在于,包括以下步骤:
(1)根据权利要求1所述一种富含维生素C的复合果汁饮料称取各原料;
(2)化胶化糖:将40-55份水在搅拌状态下加入混合均匀的羧甲基纤维素钠、黄原胶、结晶果糖和三氯蔗糖,继续搅拌得到料液1;
(3)调配:将料液1加入酸枣浓缩汁和针叶樱桃浓缩汁,搅拌后得到料液2;
(4)定容:将料液2加入剩余水,得到料液3;
(5)均质:将料液3高压均质;
(6)脱气:将高压均质完成后的料液3进行脱气;
(7)灭菌:将脱气完成后的料液灭菌,得到所述富含维生素C的复合果汁饮料。
3.根据权利要求2所述一种富含维生素C的复合果汁饮料的制备方法,其特征在于,步骤(2)中,所述搅拌转速为1500-2000r/min,继续搅拌的时间为25-45min。

5.根据权利要求2所述一种富含维生素C的复合果汁饮料的制备方法,其特征在于,步骤(3)中,所述搅拌转速为400-700r/min,搅拌时间为15-30min。
6.根据权利要求2所述一种富含维生素C的复合果汁饮料的制备方法,其特征在于,步骤(4)还包括将料液3取样测可溶性固形物含量,控制可溶性固形物≥13%,控制pH为3.4-3.6。
7.根据权利要求2所述一种富含维生素C的复合果汁饮料的制备方法,其特征在于,步骤(5)中,所述高压均质的压力为18-20MPa,高压均质的时间为10-25min。
8.根据权利要求2所述一种富含维生素C的复合果汁饮料的制备方法,其特征在于,步骤(7)中,所述灭菌采用高温瞬时杀菌机杀菌,杀菌温度为105-115℃,杀菌时间为5-20s。
9.根据权利要求2所述一种富含维生素C的复合果汁饮料的制备方法,其特征在于,步骤(7)还包括将灭菌后的料液储存至成品罐,成品罐的出料温度为88-92℃。
10.根据权利要求9所述一种富含维生素C的复合果汁饮料的制备方法,其特征在于,还包括以下步骤:
(8)无菌灌装:将成品罐至灌装机采用CIP五步法清洗,并用90℃以上热水冲洗消毒30min,将瓶体用40-60ppm氯水冲洗消毒,将瓶盖清洗并干燥后用臭氧消毒30min,然后将富含维生素C的复合果汁饮料降温至50℃进行灌装;
(9)封口:封盖后保证无漏液、歪盖现象;
(10)喷淋降温:装瓶后的成品经喷淋降温至30℃以下。
