Abstract
本发明涉及食品制备技术领域,具体地说,涉及一种提高免疫力的保健饼干及其制备方法。该方法主要包括:药材提纯分离,取人参、党参、黄芪、白术和防风,研磨提纯分离制得药材粉末与药液,将黄油和鸡蛋液混合在搅拌器器中打发制备黄油糊;取小麦粉加入打发黄油糊中,并兑入药液,牛奶粉,白砂糖和植物油,揉捻融合均匀后,加入药材粉末和蓝莓干,继续揉捻,制得饼干原料,将饼干原料经过压制脱模后,取山楂和冬虫夏草混合后研磨,将研磨后粉末洒至饼干雏形表面,再将饼干雏形置于烤箱中,烘烤10‑15分钟,饼干表面金黄即可。本发明将饼干与中草药的药用价值相结合,并通过辅材提高饼干口感,使得人们在食用饼干的同时提高自身免疫力。

技术领域
本发明涉及食品制造技术领域,具体地说,涉及一种提高免疫力的保健饼干及其制备方法。
背景技术
饼干的主要原料是小麦面粉,再添加糖类,油脂,蛋品,乳品等辅料。根据配方和生产工艺的不同,甜饼干可分为韧性饼干和酥性饼干两大类。韧性饼干的特点是印模造型多为凹花,表面有针眼。制品表面平整光滑,断面结构有层次,口嚼时有松脆感,耐嚼,松脆为其特有的特色。韧性饼干的糖和油脂的配比较酥性饼低。一般用糖量的30%以下,用油量为20%以下。酥性饼干的特点是印模造型多为凸花,花纹明显,结构细密,为面粉量的14%-30%。
近年来,城市污染不断加剧,对孩童和老人等免疫力低的人群造成了不小的影响,而在中医中有许多提高免疫力的药方与药材,但是药材口感较差,难以被人们长期接受,随着饼干已经渐渐成为了人们生活的主要休闲食品之一,将中药与饼干结合制备一种提高免疫力的饼干尤为重要。
发明内容
本发明的目的在于提供一种提高免疫力的保健饼干及其制备方法,以解决上述背景技术中提出的问题,本发明制作的饼干,口感良好且有助于提高食用者免疫力。
一种提高免疫力的保健饼干的制备方法,包括以下步骤:
S1::取人参、党参、黄芪、白术和防风,切段并研磨成粉末,取研磨后粉末加入提取液,在40-60℃下超声提取30-60min,提取后过滤制得药材粉末和药材提取液;
S2:药材粉末在真空60℃下烘干,药材提取液蒸馏20min后加入纯净水混合,制备药液,药材提取液与纯净水混合比为10-20%;
S3:按一下重量份准备原料:200-300份小麦粉,5-10份白砂糖,50-100份牛奶粉,100-160份黄油,10-20份植物油,30-60份鸡蛋液,80-160份药液,30-60份山楂,30-60份蓝莓干,10-20份冬虫夏草,20-40份药材粉末;
S4:取黄油和鸡蛋液混合在搅拌器器中打发10-20分钟,直至鸡蛋液和黄油完全混合,制备黄油糊;
S5:取小麦粉加入打发黄油糊中,并兑入药液,牛奶粉,白砂糖和植物油,揉捻10-15分钟,融合均匀后,加入药材粉末,和蓝莓干,继续揉捻5-10分钟,制得饼干原料,
S6:将饼干原料经过压制脱模,制得饼干雏形,取山楂和冬虫夏草混合后研磨,将研磨后粉末洒至饼干雏形表面,再将饼干雏形置于烤箱中,260℃下烘烤10-15分钟,饼干表面金黄即可。
优选的,所述S1中人参、党参、黄芪、白术、防风的质量份数依次为:10-30份、40-60份、60-90份、20-30份、20-30份。
优选的,所述S1中提取液具体为75%乙醇溶液,其质量份数为100-150份。
本发明的饼干中,采用了具有提高抵抗力的中草药作为部分原料,各中草药成份的功效如下:
人参:人参的肉质根为著名强壮滋补药,适用于调整血压、恢复心脏功能、神经衰弱及身体虚弱等症,也有祛痰、健胃、利尿、兴奋等功效。
党参:党参味甘,性平。有补中益气、止渴、健脾益肺,养血生津。用于脾肺气虚,食少倦怠,咳嗽虚喘,气血不足,面色萎黄,心悸气短,津伤口渴,内热消渴。
黄芪:黄芪根可以入药,味甘,性微温,具补气固表、利尿、强心、降压、抗菌、托毒、排脓、生肌、加强毛细血管抵抗力、止汗和类性激素的功效,治表虚自汗、气虚内伤、脾虚泄泻、浮肿及痈疽等。
白术:白术是一种常用重要的大宗中药材,具补脾健胃、燥湿利水、止汗安胎等功能。
防风:防风以根入药。味辛、甘,性温。有解表发汗、祛风除湿作用,主治风寒感冒、头痛、发热、关节酸痛、破伤风;此外,防风叶、防风花也可供药用。
冬虫夏草:具有补肾益肺,止血化痰功效。主治阳痿遗精、腰膝酸痛、久咳虚喘、劳嗽痰血。
与现有技术相比,本发明的有益效果:将人参,党参,黄芪,白术和防风研磨后加乙醇提取液提取,可以提取做药材中大部分的药用物质,蒸馏后与饼干掺杂,更利于人体吸收,提取后的药材粉末中仍然含有少量的药用物质和膳食纤维,将药材粉末也掺杂在饼干中进步提高饼干的药用价值,同时黄芪、白术、和防风为中药配方玉屏风散的主要原料,黄芪白术和防风衣3:1:1的比例入药,具有补中有散,共建益气,固表止汗之功;补气虚,固表虚,增强人体抵御外邪的能力的功效,为了避免药材影响饼干的口味在饼干中加入了蓝莓牛奶粉白砂糖等物质提高饼干的口感,其中蓝莓具有丰富的维生素C和花青素,有利于增强人体免疫力,由于冬虫夏草不宜采用提取方式,故将冬虫夏草研磨成粉末倾洒于饼干表面,并加以山楂调和口感。
具体实施方式
本发明公开了一种提高免疫力的保健饼干的制备方法,以下通过具体实施例对本发明作进一步详述。
实施例1
一种提高免疫力的保健饼干的制备方法,其特征在于:包括以下步骤:S1:取10份人参、40份党参、60份黄芪、20份白术和20份防风,切段并研磨成粉末,取研磨后粉末加入100份75%的乙醇提取液,在40-60℃下超声提取30-60min,提取后过滤制得药材粉末和药材提取液;
S2:药材粉末在真空60℃下烘干,药材提取液蒸馏20min后加入纯净水混合,制备药液,药材提取液与纯净水混合比为10%;
S3:按一下重量份准备原料:200份小麦粉,5份白砂糖,50份牛奶粉,100份黄油,10份植物油,30份鸡蛋液,80份药液,30份山楂,30份蓝莓干,10份冬虫夏草,20份药材粉末;
S4:取黄油和鸡蛋液混合在搅拌器器中打发10-20分钟,直至鸡蛋液和黄油完全混合,制备黄油糊;
S5:取小麦粉加入打发黄油糊中,并兑入药液,牛奶粉,白砂糖和植物油,揉捻10-15分钟,融合均匀后,加入药材粉末,和蓝莓干,继续揉捻5-10分钟,制得饼干原料,S6:将饼干原料经过压制脱模,制得饼干雏形,取山楂和冬虫夏草混合后研磨,将研磨后粉末洒至饼干雏形表面,再将饼干雏形置于烤箱中,260℃下烘烤10-15分钟,饼干表面金黄即可。

一种提高免疫力的保健饼干的制备方法,其特征在于:包括以下步骤:S1:取30份人参、60份党参、90份黄芪、30份白术和30份防风,切段并研磨成粉末,取研磨后粉末加入150份75%的乙醇提取液,在40-60℃下超声提取30-60min,提取后过滤制得药材粉末和药材提取液;
S2:药材粉末在真空60℃下烘干,药材提取液蒸馏20min后加入纯净水混合,制备药液,药材提取液与纯净水混合比为20%;
S3:按一下重量份准备原料:300份小麦粉,10份白砂糖,100份牛奶粉,160份黄油,20份植物油,60份鸡蛋液,160份药液,60份山楂,60份蓝莓干,20份冬虫夏草,40份药材粉末;
S4:取黄油和鸡蛋液混合在搅拌器器中打发10-20分钟,直至鸡蛋液和黄油完全混合,制备黄油糊;
S5:取小麦粉加入打发黄油糊中,并兑入药液,牛奶粉,白砂糖和植物油,揉捻10-15分钟,融合均匀后,加入药材粉末,和蓝莓干,继续揉捻5-10分钟,制得饼干原料,S6:将饼干原料经过压制脱模,制得饼干雏形,取山楂和冬虫夏草混合后研磨,将研磨后粉末洒至饼干雏形表面,再将饼干雏形置于烤箱中,260℃下烘烤10-15分钟,饼干表面金黄即可。

S1:取人参、党参、黄芪、白术和防风,切段并研磨成粉末,取研磨后粉末加入提取液,在40-60℃下超声提取30-60min,提取后过滤制得药材粉末和药材提取液;
S2:药材粉末在真空60℃下烘干,药材提取液蒸馏20min后加入纯净水混合,制备药液,药材提取液与纯净水混合比为10-20%;
S3:按一下重量份准备原料:200-300份小麦粉,5-10份白砂糖,50-100份牛奶粉,100-160份黄油,10-20份植物油,30-60份鸡蛋液,80-160份药液,30-60份山楂,30-60份蓝莓干,10-20份冬虫夏草,20-40份药材粉末;
S4:取黄油和鸡蛋液混合在搅拌器器中打发10-20分钟,直至鸡蛋液和黄油完全混合,制备黄油糊;
S5:取小麦粉加入打发黄油糊中,并兑入药液,牛奶粉,白砂糖和植物油,揉捻10-15分钟,融合均匀后,加入药材粉末,和蓝莓干,继续揉捻5-10分钟,制得饼干原料,

2.根据权利要求1所述的一种提高免疫力的保健饼干的制备方法,其特征在于:所述S1中人参、党参、黄芪、白术、防风的质量份数依次为:10-30份、40-60份、60-90份、20-30份、20-30份。
3.根据权利要求1所述的一种提高免疫力的保健饼干的制备方法,其特征在于:所述S1中提取液具体为75%乙醇溶液,其质量份数为100-150份。
