技术领域
本发明属于食品技术领域,涉及一种健脾润肺秋梨膏的制备方法。
背景技术
秋梨膏具有生津、降火、养阴、润肺、止咳血等功能,临床上常用于治疗因热燥伤津所致的肺热烦渴、便干燥闷、劳伤肺阴、咳吐白痰、久咳咯血等呼吸道病症。
目前,梨膏主要是以秋梨为原料,配以其它药食同源材料,采用压榨法获得梨汁或破碎法制成梨浆,经过滤除渣、加热熬煮、调配成分和装瓶等工艺制成,由于秋梨膏制备过程采用的均为凉性、养阴生津原料,所以,脾胃虚寒、手脚发凉、大便溏泻的人不宜服用,以避免虚寒症状加重,更易腹泻,即便是易上火、大便干、咳嗽患者也不能多吃。
在现有秋梨膏制备过程中,进行预煮、切割、压汁(或打浆)等处理时,由于残留的微量的皮、核等组织,加热熬煮等过程中会发生色泽反应,逐渐形成黄褐色,使梨膏色泽的感官性状较差,并且,由于选用原料的不同,有的梨本身酸度就较高,简单的制备方法得到的梨膏并不能去除梨子本身的酸涩味道,口感较差。所以在调配产品时通常会加入大量的甜味剂、色素等添加剂对产品口感、色泽进行调整,添加剂的大量使用不但掩盖了梨膏的天然果香,更破坏了其影响成分,长期食用甚至会对健康产生影响。用这种方法生产的产品不但失去天然观感,而且产品色泽、口感由于批次不同或储存时间的长短还会存在差别,影响产品质量。
发明内容
本发明针对现有技术存在的上述不足,提供一种健脾润肺秋梨膏的制备方法,制备得到的的秋梨膏不含添加剂,色泽稳定、口感好,且具有健脾润肺功能,脾胃虚寒的患者也可长期服用。
本发明技术方案如下:
一种健脾润肺秋梨膏的制备方法,包括以下步骤:
1)称取以下重量份的原料:梨150份、黑枣50~80份、橘皮15~20份、生姜15~20份、沙棘汁10~15份、半夏曲粉5~8份、黑啤酒10~15份;
步骤1)中,所述的沙棘汁,优选为鲜沙棘果直接榨汁过滤。
2)黑枣洗净,喷洒质量浓度为60%的乙醇,密封放置15~20h,乙醇用量为每千克黑枣喷洒3~4mL,然后加甘草水浸泡、晾干,转入陶瓷缸中,每千克黑枣喷洒苹果醋15~20mL,覆盖稻草自然发酵50~60天后,过滤,得黑枣发酵液,备用;
步骤2)中,所述的甘草水为甘草与水按体积比1:2煮沸2h,过滤制得。
3)橘皮和生姜,洗净,烘干,粉碎,然后于2倍体积的水中45~48℃浸泡80~100min,蒸气加热至80~90℃,热浸60min,过滤得浸提液;滤渣于同体积的水中,同样条件下进行二次浸提,热浸4h,过滤得浸提液;合并两次浸提液,80~90℃蒸发水分至体积减少为1/4,得到浸提液浓缩液,备用;
4)梨洗净,去核,切片,用质量浓度为60%的蜂蜜水浸泡放置24~30h,取出,沥干水分,然后加入沙棘汁、半夏曲粉、黑枣发酵液,打浆,再加入20~25mg/L酵母,混合均匀后于18~22℃发酵5~7天;
步骤4)中,所述的酵母优选活性酵母DV10。
5)将步骤4)发酵后产物与黑啤酒混合,煮沸30min,晾凉,过滤,滤液80~90℃搅拌加热,蒸发水分至液体呈粘稠状,即得健脾润肺秋梨膏。
黑枣性温味甘,富含蛋白质、糖类、有机酸、维生素B和维生素E,和磷、钙、铁等微量元素,还有各种营养元素,能补中益气,养胃健脾,养血壮神,润心肺,调营卫、生津液,悦颜色,通九窍,助十二经,解药毒,调和百药。沙棘果营养丰富,富含多种维生素、脂肪酸、微量元素、亚油素、沙棘黄酮、超氧化物等活性物质和人体所需的各种氨基酸,止咳祛痰,消食化滞,活血散瘀。用于咳嗽痰多、消化不良、食积腹痛、跌扑瘀肿、瘀血经闭。半夏曲健脾胃、消食积、燥湿化痰。橘皮性味辛、苦、温,理气健胃、燥湿化痰。味辛;性温,入肺、胃、脾经。

实施例1
一种健脾润肺秋梨膏的制备方法,包括以下步骤:
1)称取以下重量份的原料:梨150份、黑枣70份、橘皮18份、生姜18份、沙棘汁(鲜沙棘果直接榨汁过滤)13份、半夏曲粉7份、黑啤酒12份;
2)黑枣洗净,喷洒质量浓度为60%的乙醇,密封放置18h,乙醇用量为每千克黑枣喷洒3mL,然后加甘草水(甘草与水按体积比1:2煮沸2h过滤制得)浸泡、晾干,转入陶瓷缸中,每千克黑枣喷洒苹果醋17mL,覆盖稻草自然发酵55天后,过滤,得黑枣发酵液,备用;
3)橘皮和生姜,洗净,烘干,粉碎,然后于2倍体积的水中45~48℃浸泡95min,蒸气加热至80~90℃,热浸60min,过滤得浸提液;滤渣于同体积的水中,同样条件下进行二次浸提,热浸4h,过滤得浸提液;合并两次浸提液,80~90℃蒸发水分至体积减少为1/4,得到浸提液浓缩液,备用;
4)梨洗净,去核,切片,用质量浓度为60%的蜂蜜水浸泡放置28h,取出,沥干水分,然后加入沙棘汁、半夏曲粉、黑枣发酵液,打浆,再加入22mg/L活性酵母DV10,混合均匀后于18~22℃发酵7天;
5)将步骤4)发酵后产物与黑啤酒混合,煮沸30min,晾凉,过滤,滤液80~90℃搅拌加热,蒸发水分至液体呈粘稠状,即得健脾润肺秋梨膏。
实施例2
1)称取以下重量份的原料:梨150份、黑枣80份、橘皮20份、生姜20份、沙棘汁(鲜沙棘果直接榨汁过滤)15份、半夏曲粉8份、黑啤酒15份;
2)黑枣洗净,喷洒质量浓度为60%的乙醇,密封放置20h,乙醇用量为每千克黑枣喷洒4mL,然后加甘草水(甘草与水按体积比1:2煮沸2h过滤制得)浸泡、晾干,转入陶瓷缸中,每千克黑枣喷洒苹果醋20mL,覆盖稻草自然发酵60天后,过滤,得黑枣发酵液,备用;
3)橘皮和生姜,洗净,烘干,粉碎,然后于2倍体积的水中45~48℃浸泡100min,蒸气加热至80~90℃,热浸60min,过滤得浸提液;滤渣于同体积的水中,同样条件下进行二次浸提,热浸4h,过滤得浸提液;合并两次浸提液,80~90℃蒸发水分至体积减少为1/4,得到浸提液浓缩液,备用;
4)梨洗净,去核,切片,用质量浓度为60%的蜂蜜水浸泡放置30h,取出,沥干水分,然后加入沙棘汁、半夏曲粉、黑枣发酵液,打浆,再加入25mg/L活性酵母DV10,混合均匀后于18~22℃发酵7天;
5)将步骤4)发酵后产物与黑啤酒混合,煮沸30min,晾凉,过滤,滤液80~90℃搅拌加热,蒸发水分至液体呈粘稠状,即得健脾润肺秋梨膏。
实施例3

5)将步骤4)发酵后产物与黑啤酒混合,煮沸30min,晾凉,过滤,滤液80~90℃搅拌加热,蒸发水分至液体呈粘稠状,即得健脾润肺秋梨膏。
将实施例1~3中获得的秋梨膏样品,分别选择具有相同咳嗽症状的成人20人进行试用, 每天服用1次,每次50g,共服用5天。具体效果评价见表1。

3)橘皮和生姜,洗净,烘干,粉碎,然后于2倍体积的水中45~48℃浸泡80~100min,蒸气加热至80~90℃,热浸60min,过滤得浸提液;滤渣于同体积的水中,同样条件下进行二次浸提,热浸4h,过滤得浸提液;合并两次浸提液,80~90℃蒸发水分至体积减少为1/4,得到浸提液浓缩液,备用;
4)梨洗净,去核,切片,用质量浓度为60%的蜂蜜水浸泡放置24~30h,取出,沥干水分,然后加入沙棘汁、半夏曲粉、黑枣发酵液,打浆,再加入20~25mg/L酵母,混合均匀后于18~22℃发酵5~7天;
5)将步骤4)发酵后产物与黑啤酒混合,煮沸30min,晾凉,过滤,滤液80~90℃搅拌加热,蒸发水分至液体呈粘稠状,即得健脾润肺秋梨膏。
2.根据权利要求1所述的制备方法,其特征在于:步骤1)中,所述的沙棘汁,优选为鲜沙棘果直接榨汁过滤。
3.根据权利要求1所述的制备方法,其特征在于:步骤2)中,所述的甘草水为甘草与水按体积比1:2煮沸2h,过滤制得。
4.根据权利要求1所述的制备方法,其特征在于:步骤4)中,所述的酵母优选活性酵母DV10。
