Abstract
本发明属于功能性食品领域,具体涉及一种美白补水抗糖化软糖及其制备方法。美白补水抗糖化软糖包括下述质量份组分:甜味剂500‑900份;凝胶剂10‑60份;功能性组分50‑200份;酸度调节剂1‑20份;本发明中采用银耳进行研磨成浆后,加入果胶酶以及半纤维素酶,半纤维素酶能够将银耳多糖中酶解成小分子的银耳多糖,方便人体的吸收,同时,酸性调节剂的加入能与小分子的银耳多糖形成葡萄糖醛酸,葡萄糖醛酸能够有效清除自由基,银耳多糖本身具有凝胶性,与凝胶剂配合,可以减少凝胶剂的用量,使得到的软糖具有很好的弹性以及硬度。

背景技术
软糖因其良好的口感、多样的外观和种类繁多的口味一直深受不同年龄层消费者的喜爱。然而主要的市售软糖通常仅能满足人们对口味、口感的外在需求,功能较为单一还会导致发胖和龋齿。随着生活水平的提高,消费者更加关注天然、少糖、营养和健康的功能型软糖。目前,中国人均年糖果消费量不到1kg,不到世界人均糖果年消费量(约3kg)的1/3,现在中国糖果市场规模近 700 亿元,作为细分品类的软糖销售额占整体糖果规模约25%,年均增长率8%,有着广阔的市场空间。所以新型功能性营养美味软糖的开发研究成为糖果行业中的一项重要课题。肌肤的美白补水一直是消费者关注的热点问题,尤其受到爱美女性的关注,开发一款既美味又具有美白养颜功效的无糖或低糖型软糖具有较大的市场需求,而目前这类软糖产品品种并不多。
发明内容
本发明的目的在于克服现有技术中的缺点,提供一种美白补水抗糖化软糖及其制备方法。
为实现上述目的,本发明采用的技术方案为:
一种美白补水抗糖化软糖,包括下述质量份组分:甜味剂500-900份;凝胶剂10-60份;功能性组分 50-200份;酸度调节剂1-20份;其中所述的功能性组分包括银耳提取物,所述的银耳提取物采用下述方式制备:
1)将银耳加水研磨成浆后,加入果胶酶以及半纤维素酶,进行酶解处理,得酶解液;
2)将步骤1)酶解液高温灭菌后,加入酸度调节剂调节pH值至2-3,进行水解6h;
3)将步骤2)得到的溶液调节pH值至5-6,然后进行均质,过滤得到银耳浆液;
步骤1)中所述的银耳、水、果胶酶以及半纤维素酶的质量比为:1:20-80:0.5%-2.5%:1%-4%,酶解的温度为30-40℃,时间为2h。
步骤1)中所述的银耳、水、果胶酶以及半纤维素酶的质量比为:1:40:1.2%:2%,酶解的温度为30-40℃,时间为2h。
步骤2)中灭酶的温度为95+1℃,灭酶活时间为15-20min。
所述的甜味剂为山梨糖醇、麦芽糖醇、赤藓糖醇、异麦芽酮糖醇、乳糖醇、木糖醇的一种或多种混合而成。
所述的凝胶剂为明胶、果胶、卡拉胶、琼脂、刺槐豆胶、海藻酸钠的一种或多种混合而成。
所述的酸度调节剂为柠檬酸、乳酸、苹果酸、柠檬酸钠的一种或多种混合而成。
所述的功能性组分为葡萄籽提取物、酵母抽提物、针叶樱桃提取物、红石榴提取物、透明质酸钠、橄榄提取物、重瓣红玫瑰提取物、山竹提取物、米糠油提取物、余甘子提取物、烟酰胺、维生素C的一种或多种混合而成。
本发明还包括一种权利要求所述的美白补水抗糖化软糖的制备方法,包括下述步骤:
(1)称取酸度调节剂,加水溶解,得到酸液;
(2)称取功能性组分,加水溶解,得到功效成分液;
(3)称取部分甜味剂以及银耳浆液与凝胶剂混合,加水溶解,得到复配胶液;
(4)称取剩余甜味剂,与步骤(3)得到的复配胶液混合;在真空度-0.05Mpa下,熬煮到85℃;
(5)在步骤(4)熬煮过程中加入步骤(2)的功能性组分、着色剂、食用香精,在真空度-0.05Mpa,85℃条件下继续熬煮浓缩,得到料液;
(6)将步骤(5)所得的料液输送至浇注机过程中,在螺旋输送管道内加入酸液,使料液与酸液充分混合,得到混合料液;
(7)将步骤(6)所得混合料液搅拌过滤,用浇注机器进行浇注,拌油摆盘后送至烘房干燥,至水分为14%-20%;
(8)将干燥后的软糖脱盘,制得最终成品。
与现有技术相比,本发明的有益效果是:
本发明中采用银耳进行研磨成浆后,加入果胶酶以及半纤维素酶,半纤维素酶能够将银耳多糖中酶解成小分子的银耳多糖,方便人体的吸收,同时,酸性调节剂的加入能与小分子的银耳多糖形成葡萄糖醛酸,葡萄糖醛酸能够有效清除自由基,抑制自由基引发的脂质过氧化,保护胶原蛋白,改善皮肤弹性与光泽,而果胶酶则能够破坏细胞壁,使银耳多糖以及胶质更好的溶出,银耳多糖本身具有凝胶性,与凝胶剂配合,可以减少凝胶剂的用量,使得到的软糖具有很好的弹性以及硬度。
同时,增加美白的功能性组分,达到美白补水的作用,还可以阻断糖化反应中间体生成,长效清除氧化自由基,从而达到抗糖化、抗氧化、改善皮肤弹性与光泽度的目的。
葡萄籽提取物主要活性成分“原花青素”,可以抵抗皮肤衰老和皱纹产生,能够有效清除自由基,抑制自由基引发的脂质过氧化,保护胶原蛋白,改善皮肤弹性与光泽,是功效显著的天然抗氧化剂。
针叶樱桃提取物是目前种植的植物中维生素C含量最高的,每100 克果中维C含量达2445毫克,是柠檬的35倍,草莓的17倍,也比被认为维生素C极高的番石榴高11倍,是名副其实的“天然维生素C之王”,同时还含有维生素A、维生素B1、维生素B2、铁、钙等元素,有加速皮肤细胞的新陈代谢与再造,减轻肤色暗黄和色斑的功效。
酵母抽提物是酵母破壁后将其中蛋白质、核酸、维生素等,再经生物酶解的富含小分子的氨基酸、肽、核苷酸、维生素等天然活性成分的物质,对于改善皮肤表层状态有很好的作用。它能促进皮肤微循环和加快新陈代谢,富含的氨基酸和其他营养物质可抑制酪氨酸酶活性,阻断黑色素的生成,达到全身美白的作用。
红石榴提取物能减少细胞线粒体中的氧化程度,减轻色素沉着,通过降低血管渗透改善血液微循环。同时能够抑制胶原蛋白酶和弹性蛋白酶来减少胶原蛋白和弹性蛋白的降解。有效改善皮肤干燥粗糙、皱纹,有助于恢复皮肤弹性。
透明质酸钠经口服消化吸收后,增加了体内透明质酸合成的前体,使体内透明质酸含量提高并集中定位于皮肤组织,进而增强皮肤的保水能力,软化皮肤角质层,达到改善肌肤弹性和减少皱纹的功效。含透明质酸化妆品仅作用于皮肤表层起局部性保湿作用,而口服透明质酸通过外源性透明质酸的降解、吸收和体内再合成,增加内源性透明质酸的含量,活化全身细胞,发挥整体美容保健功效。
橄榄提取物富含橄榄多酚(羟基酪醇),是一种天然多酚类化合物,具有安全卓越的抗氧化作用和抑制自由基的功能,阻止了UV引起的活性氧对皮肤组织的膜磷脂的破坏,有效抑制黑色素生成,显著淡化晒斑和色素。
重瓣红玫瑰提取物内含多种维生素,总多酚,总黄酮,单宁酸,长期服用可以改善体内抗氧化状态,加速新陈代谢,调节生理机能,舒气活血,帮助改善肌肤问题。
山竹提取物含有多种山酮素,其富含的山竹多酚,表儿茶素等都具有很强的抗糖化、抗氧化性,可以清除过多自由基,达到抗皱,延缓老化的作用。其作用机理是阻断糖化反应中间体生成,切断晚期糖基化终末产物(AGEs)的耦合,促进胶原蛋白肽和透明质酸的形成,产生协同作用,共同促进纤维芽细胞活化作用的增加。
米糠油提取物富含大米神经酰胺。而神经酰胺主要存在于皮肤角质层细胞间质中,所含比例高达50%。补充神经酰胺能够有效减少经表皮的水分流失以及增加皮肤含水量。口服型神经酰胺被小肠吸收后,转移到血液,然后运送到全身,能促使体内自身生物合成神经酰胺,使全身皮肤细胞都得到良好的恢复和再生。
银耳提取物的主要活性成分是银耳多糖,银耳多糖是植物类提取透明质酸中唯一分子量过百万的多糖,具备良好的润滑性,且可以起到一定的透皮吸收,增加皮肤表面透明质酸含量,可在皮肤表面形成一层均匀的有一定厚度的薄膜,使肌肤具有良好的滑爽感和湿润感,改善干燥和已出现皱纹的肌肤,使其恢复原有的光滑和弹性。
余甘子提取物其特有的多酚类小分子水解单宁酸,又称“余甘子素”,与其它抗氧化多酚不同,它可开启抗氧化连锁反应性。余甘子素透过特殊的抗氧化连锁效应,长效清除氧化自由基,抑制酪氨酸酶活性,达到肌肤亮白效果。
烟酰胺能保持皮肤能量平衡,同时能恢复细胞能量,加速胶原质合成,从而避免肌肤因油脂含量低、角质层变薄而导致的黑色素过度沉着。烟酰胺可以作用于已经产生的黑色素,有效抑制约35%-40%的黑色素从黑色素细胞向角质细胞传递,从而减少过度色素沉积。烟酰胺还能促进表皮层蛋白质的合成,增强肌肤自身的防御能力,增加肌肤含水率。
维生素C的还原性可以合成胶原蛋白过程中需要的酶。由于胶原蛋白主要依赖于体内合成,就需要皮肤中有足够的维生素C,来保证皮肤中胶原蛋白的合成过程。还可以阻断酪氨酸酶的产生,从而影响黑色素生成。它的还原性还能使深色的黑色素淡化成浅色的黑色素。维生素C可以中和并自由基带有的独立单电子,从而有效抵抗自由基造成的伤害,是有效的抗氧化剂。
在本申请的制备过程中,申请人发明由于添加的功能组分在强酸高温熬煮的过程中,功能性组分会被破坏,从而影响软糖的最终功效,因此在步骤(5)中首先加入功能性组分、着色剂、食用香精进行熬煮,并利用真空相对低温的原理,在不破坏功能组分的情况下,加快水分的蒸发;同时,在加入功能性组分的时候并不直接加入酸味剂,避免了强酸环境在高温环境下破坏功效组分,由于先进行了浓缩,也节省了烘干时间。而采用螺旋管道加酸的方式,能够实现酸液和料液的均匀快速的混合,避免了局部酸度过大,影响料液中的功能组分。
具体实施方式
为了使本技术领域的技术人员更好地理解本发明的技术方案,下面结合最佳实施例对本发明作进一步的详细说明。
实施例1:银耳浆料的制备:1)将银耳(20g)加水(800g)研磨成浆后,加入果胶酶(0.1g)以及半纤维素酶(0.4g),进行酶解处理,得酶解液;2)将步骤1)酶解液高温灭菌后,加入柠檬酸调节pH值至2-3,进行水解6h;3)将步骤2)得到的溶液调节pH值至5-6,然后进行均质,过滤得到银耳浆液;
实施例2:银耳浆料的制备:1)将银耳(20g)加水(800g)研磨成浆后,加入果胶酶(0.24g)以及半纤维素酶(0.4g),进行酶解处理,得酶解液;2)将步骤1)酶解液高温灭菌后,加入柠檬酸调节pH值至2-3,进行水解6h;3)将步骤2)得到的溶液调节pH值至5-6,然后进行均质,过滤得到银耳浆液;
实施例3:银耳浆料的制备:1)将银耳(20g)加水(800g)研磨成浆后,加入果胶酶(0.5g)以及半纤维素酶(0.4g),进行酶解处理,得酶解液;2)将步骤1)酶解液高温灭菌后,加入柠檬酸调节pH值至2-3,进行水解6h;3)将步骤2)得到的溶液调节pH值至5-6,然后进行均质,过滤得到银耳浆液;
实施例4:银耳浆料的制备:1)将银耳(20g)加水(800g)研磨成浆后,加入果胶酶(0.24g)以及半纤维素酶(0.2g),进行酶解处理,得酶解液;2)将步骤1)酶解液高温灭菌后,加入柠檬酸调节pH值至2-3,进行水解6h;3)将步骤2)得到的溶液调节pH值至5-6,然后进行均质,过滤得到银耳浆液;
实施例5:银耳浆料的制备:1)将银耳(20g)加水(800g)研磨成浆后,加入果胶酶(0.24g)以及半纤维素酶(0.8g),进行酶解处理,得酶解液;2)将步骤1)酶解液高温灭菌后,加入柠檬酸调节pH值至2-3,进行水解6h;3)将步骤2)得到的溶液调节pH值至5-6,然后进行均质,过滤得到银耳浆液;
对比例1:银耳浆料的制备:1)将银耳(20g)加水(800g)研磨成浆后,加入果胶酶(0.24g)以及半纤维素酶(0.4g),进行酶解处理,得酶解液;酶解液高温灭菌后得到的溶液调节pH值至5-6,然后进行均质,过滤得到银耳浆液;
实施例6-10:将实施例1-5得到的银耳浆液用于制备美白补水抗糖化软糖:

上述美白补水抗糖化软糖的制备步骤如下:
(1)配制酸液:将4.1份柠檬酸、1.5份苹果酸和1.8份柠檬酸钠在10份热水中溶解;
(2)配制功效成分液:称取20份酵母抽提物、15份透明质酸钠、35份红石榴提取物、10份维生素C,加水搅拌溶解,得到功效成分液;
(3)称取部分麦芽糖醇液,实施例1-5或者对比例1得到的银耳浆料40份,与16.8份卡拉胶混合,加水溶解,得到复配胶液;
(4)称取剩余麦芽糖醇液、306份麦芽糖醇,与上述(3)所得复配胶液混合,在真空度-0.05Mpa下,熬煮到85℃;
(5)在步骤(4)熬煮过程中加入步骤(2)的功能性组分、0.05份着色剂、2.9份食用香精,在真空度-0.05Mpa下,85℃条件下继续熬煮浓缩得到料液;
(6)将步骤(5)所得的料液输送至浇注机过程中,在螺旋输送管道内加入酸液,使料液和酸液充分混合,得到混合料液;
(7)将步骤(6)所得混合料液搅拌过滤,用浇注机器进行浇注,拌油摆盘后送至烘房干燥,至水分为14%-20%;
(8)将干燥后的软糖脱盘,制得最终成品。
测试结果:
1、对产品的弹性、硬度、咀嚼性以及感官进行评价。对上述实施例进行感官评价及质构分析:(1)感官评价方法:邀请10人组成感官评价小组,按照下面表1的感官评价指标给出评价,取平均值。其中,空白例为不加入银耳浆料的制得的产品。

依据上述评价表对实施例进行感官评价,其数据如下表2。

由上表可知,本发明制备的软糖在感官评价上评分均达到80分以上,最高可达90分,本发明软糖质地硬度适中,弹性好,韧性适中,耐咀嚼,香气浓郁,酸甜适中,无不良风味,是一种色、香、味、形、咀嚼性俱佳的软糖。
(2)质构对比方法:使用质构仪进行测试,选用TPA方法,选取10个样品进行测试,取平均数。如表3示出。

结果表明:增加果胶酶和半纤维素酶的量均可以促进细胞壁的水解,使得银耳多糖溶出率提高,银耳多糖的量增加促进软糖的成胶性,与卡拉胶配合使得软糖弹性、硬度、咀嚼性等提高,最优的方案为实施例7。但果胶酶和半纤维素酶的量增加过量,如实施例8和实施例10,对软糖的凝胶性没有太多帮助,反而容易影响风味。对比例1没有进行酸水解,与其他实施例相比软糖的凝胶性和弹性会适度降低。空白例中不加入银耳浆料,只有卡拉胶会使软糖弹性、硬度、咀嚼性均有降低。
实施例 11-12与实施例7的制备方法相同,区别仅在于,组分含量不同;

实施例13:实施例13与实施例7的区别仅在于,制备方法不同,
美白补水抗糖化软糖的制备步骤如下:
(1)配制酸液:将4.1份柠檬酸、1.5份苹果酸和1.8份柠檬酸钠在10份热水中溶解;
(2)配制功效成分液:称取20份酵母抽提物、15份透明质酸钠、35份红石榴提取物、10份维生素C,加水搅拌溶解,得到功效成分液,加热至80℃备用;
(3)称取部分麦芽糖醇液,实施例2得到的银耳浆料40份,与16.8份卡拉胶混合,加水溶解,得到复配胶液;
(4)称取剩余麦芽糖醇液、306份麦芽糖醇,与上述(3)得到的复配胶液混合,于熬糖锅内熬煮浓缩;
(5)向步骤(4)所得的料液中加入功效成分液,继续熬煮浓缩;
(6)向步骤(5)所得的料液中加入0.05份着色剂、2.9份食用香精、酸液,搅拌均匀,过滤出锅;
(7)将步骤(6)所得滤液,用软糖模具进行浇注,拌油摆盘后送至烘房干燥,至水分为14%-20%;
(8)将干燥后的软糖脱盘,制得最终成品。
美白性能的研究:选取年龄在18-50岁的健康成年志愿者100例,其中男性20人,女性80人,随机分为5组。第1-4组患者每天分别单独服用实施例7、11、12、13的软糖产品,食用方法:一天5粒软糖(每粒3g),咀嚼服用。第5组不服用任何软糖产品,作为空白组。检测方法:采用半脸测试法,分别在服用前、服用后1周、4周、8周和12周,利用CK-Skincolor仪器测定颜面部皮肤的L*,Maxmeter MX18反射光谱仪测量相同位置皮肤的黑色素指数,GLossymeter测定皮肤的光泽度,Conermeter测定皮肤的水分含量。结果如下表4为服用软糖前后皮肤水分MMV值统计结果。

根据上述结果表明,本发明实施例7、11、12、13软糖产品具有增加皮肤水分,改善皮肤光泽度,显著降低皮肤黑色素含量,增加皮肤白度的功效。由于实施例13是在强酸高温的熬煮过程中添加的功能组分,可能使部分功能活性成分被损失,进而影响了软糖的最终功效。因此由上述美白试验中可以看出,虽然实施例13也可以增加皮肤水分,改善皮肤光泽度,显著降低皮肤黑色素含量,增加皮肤白度,但效果不如改进真空熬煮和加酸工艺后的实施例7、11和12美白效果更好。以上所述仅是本发明的优选实施方式,应当指出,对于本技术领域的普通技术人员来说,在不脱离本发明原理的前提下,还可以做出若干改进和润饰,这些改进和润饰也应视为本发明的保护范围。
Claims (9)
1.美白补水抗糖化软糖,其特征在于,包括下述质量份组分:甜味剂500-900份;凝胶剂10-60份;功能性组分 50-200份;酸度调节剂1-20份;其中所述的功能性组分包括银耳提取物,所述的银耳提取物采用下述方式制备:
1)将银耳加水研磨成浆后,加入果胶酶以及半纤维素酶,进行酶解处理,得酶解液;
2)将步骤1)酶解液高温灭菌后,加入酸度调节剂调节pH值至2-3,进行水解6h;
3)将步骤2)得到的溶液调节pH值至5-6,然后进行均质,过滤得到银耳浆液。
2.根据权利要求1所述的美白补水抗糖化软糖,其特征在于,步骤1)中所述的银耳、水、果胶酶以及半纤维素酶的质量比为:1:20-80:0.5%-2.5%:1%-4%,酶解的温度为30-40℃,时间为2h。
3.根据权利要求1所述的美白补水抗糖化软糖,其特征在于,步骤1)中所述的银耳、水、果胶酶以及半纤维素酶的质量比为:1:40:1.2%:2%,酶解的温度为30-40℃,时间为2h。
4.根据权利要求1所述的美白补水抗糖化软糖,其特征在于,步骤2)中灭酶的温度为95+1℃,灭酶活时间为15-20min。
5.根据权利要求1所述的美白补水抗糖化软糖,其特征在于,所述的甜味剂为山梨糖醇、麦芽糖醇、赤藓糖醇、异麦芽酮糖醇、乳糖醇、木糖醇的一种或多种混合而成。
6.根据权利要求1所述的美白补水抗糖化软糖,其特征在于,所述的凝胶剂为明胶、果胶、卡拉胶、琼脂、刺槐豆胶、海藻酸钠的一种或多种混合而成。
7.根据权利要求1所述的美白补水抗糖化软糖,其特征在于,所述的酸度调节剂为柠檬酸、乳酸、苹果酸、柠檬酸钠的一种或多种混合而成。
8.根据权利要求1所述的美白补水抗糖化软糖,其特征在于,所述的功能性组分为葡萄籽提取物、酵母抽提物、针叶樱桃提取物、红石榴提取物、透明质酸钠、橄榄提取物、重瓣红玫瑰提取物、山竹提取物、米糠油提取物、余甘子提取物、烟酰胺、维生素C的一种或多种混合而成。
9.一种权利要求1-8任一项所述的美白补水抗糖化软糖的制备方法,其特征在于,包括下述步骤:
(1)称取酸度调节剂,加水溶解,得到酸液;
(2)称取功能性组分,加水溶解,得到功效成分液;
(3)称取部分甜味剂以及银耳浆液与凝胶剂混合,加水溶解,得到复配胶液;
(4)称取剩余甜味剂,与步骤(3)得到的复配胶液混合;在真空度-0.05Mpa下,熬煮到85℃;
(5)在步骤(4)熬煮过程中加入步骤(2)的功能性组分、着色剂、食用香精,在真空度-0.05Mpa,85℃条件下继续熬煮浓缩得到料液;
(6)将步骤(5)所得的料液输送至浇注机过程中,在螺旋输送管道内加入酸液,使料液与酸液充分混合,得到混合料液;
(7)将步骤(6)所得混合料液搅拌过滤,用浇注机器进行浇注,拌油摆盘后送至烘房干燥,至水分为14%-20%;
