技术领域
本申请属于保健酒制造领域,具体涉及一种阿胶芪术姜桂酒及其制备工艺。
背景技术
阿胶的主要成份为胶原蛋白及其水解产物、多肽、氨基酸及人体必需的多种微量元素,阿胶具有补血滋阴,润燥,止血等功能。用于治疗血虚萎黄,眩晕心悸,心烦不眠,肺燥咳嗽等病症。
目前,常见阿胶酒的制备方法是将阿胶以及其他药材进行混合浸渍后取上清液即得到阿胶酒。
但是目前的阿胶酒,存在以下缺陷:阿胶与其他药材之间的配伍性不好,使得阿胶在乙醇水溶液中的分散性不好,可观察到的现象是阿胶酒在制备后会出现沉淀物或絮状物质,使得阿胶酒不够澄清且浑浊,严重影响了阿胶酒的外观品质和质量。
发明内容
为了解决上述问题,本申请提出了一种阿胶芪术姜桂酒及其制备工艺,其中,一种阿胶芪术姜桂酒,包括如下重量份数的原料:白酒200~400份、黄芪2~5份、甘草1~4份、白术2~3份、干姜2~6份、桂枝0.5~2份、阿胶1.5~3份。
黄芪味甘,性微温;归脾、肺经;具有补气固表,托毒排脓,利尿,生肌的功效;
甘草是一种补益中草药,气微,味甜而特殊,功能主治清热解毒、祛痰止咳、脘腹等;
白术:性味苦温辛烈,有燥湿、化浊、止痛之效;
干姜:味辛,性热,有温中散寒,回阳通脉,温肺化饮之效;
桂枝:有特异香气,味甜、微辛;具有发汗解肌,温经通脉之效;
阿胶:味甘质粘,具有补血,滋阴,润肺,止血的功效。
优选地,由如下原料组成:白酒300份、黄芪3份、甘草2份、白术3份、干姜3份、桂枝1份、阿胶2份。
优选地,还包括:乳酸0.01~0.1份、三聚甘油单硬脂酸酯0.01~0.06份。
优选地,由如下原料组成:白酒350份、黄芪2份、甘草1份、白术2份、干姜4份、桂枝1.5份、阿胶2.5份、乳酸0.03份、三聚甘油单硬脂酸酯0.01份。
本申请各个成分之间的配伍性好,各个成分组合起来,使得组合物的口感较佳,且组合后的分散性较好,得到的阿胶芪术姜桂酒色泽澄清,没有沉淀或絮状物质的出现,品质和质量较高。
本申请还公开了一种阿胶芪术姜桂酒的制备工艺,包括:
S1:将黄芪、甘草、白术、干姜、桂枝进行粗碎;
S2:将阿胶加入白酒中,加热使其溶化得到阿胶液;
S3:将粗碎的药材倒入阿胶液中,加白酒进行浸渍5~8天;
S4:取浸渍液,静置24小时后取上清液,加蒸馏水加白酒配制得到阿胶芪术姜桂酒。
优选地,S3中将粗碎的药材倒入阿胶液中进行搅拌,搅拌均匀后将其置于冷冻干燥机中干燥30~50min后取出将其加白酒进行浸渍的步骤。
优选地,所述冷冻干燥温度为-60~-80℃,压力为8~16pa。
本申请运用冷冻干燥技术,先把混合好的组合物进行冷冻干燥后,再加入酒精浸渍,一方面使得组合物的各个成分可以更均匀的分散于白酒中,另一方面使得各个成分的有效成分可以更好的分散于白酒中,使得产物的口感更充沛。
优选地,利用白酒进行浸渍的过程中,每隔24~48h,将蒸馏水添加到其中以稀释所述白酒,最终浸渍液中的酒精度为45~50度。
发明人在生产过程中发现,在浸渍过程中,对白酒进行稀释,会提高组合物的分散性。
优选地,所述白酒是利用甜高粱籽粒、高粱籽粒、甜高粱秸秆经过发酵和蒸馏而成的酒精度为60~65度的白酒。
优选地,阿胶芪术姜桂酒的酒精度为38度。
本申请在制备过程中,对酒精度进行控制,使得到的阿胶芪术姜桂酒分散性较好且口感较佳。
本申请能够带来如下有益效果:
1.本申请各个成分之间的配伍性好,各个成分组合起来,使得组合物的口感较佳,且组合后的分散性较好,得到的阿胶芪术姜桂酒色泽澄清,没有沉淀或絮状物质的出现,品质和质量较高。
2.本申请运用冷冻干燥技术,先把混合好的组合物进行冷冻干燥后,再加入酒精浸渍,一方面使得组合物的各个成分可以更均匀的分散于白酒中,另一方面使得各个成分的有效成分可以更好的分散于白酒中,使得产物的口感更充沛。

具体实施方式
实施例1:一种阿胶芪术姜桂酒的制备工艺包括:
S1:将黄芪2~5份、甘草1~4份、白术2~3份、干姜2~6份、桂枝0.5~2份进行粗碎;
S2:将阿胶1.5~3份加入白酒80~150份中,加热使其溶化得到阿胶液;
S3:将粗碎的药材倒入阿胶液中进行搅拌,搅拌均匀后将其置于冷冻干燥机中干燥30~50min后取出,其中冷冻干燥温度为-60~-80℃,压力为8~16pa;
S4:加酒精度为60~65度的白酒进行浸渍5~8天,每隔24~48h,将蒸馏水添加到其中以稀释所述白酒,最终浸渍液中的酒精度为45~50度。
S5:取浸渍液,静置24小时后取上清液,加蒸馏水加白酒配制得到38度的阿胶芪术姜桂酒。

实施例2:表征
对于阿胶芪术姜桂酒的表征手段包括:
(1)阿胶芪术姜桂酒的分散性:将制备得到的阿胶芪术姜桂酒置于烧杯中,用水稀释10~20倍后,混合均匀,观察阿胶芪术姜桂酒是否处于澄清状态以及观察其是否有沉淀物、絮状物质出现;以澄清状态且无沉淀物、絮状物质出现为佳,并进行评分;评分为0~10分,10分最佳。
(2)阿胶芪术姜桂酒的分散稳定性:将制备得到的阿胶芪术姜桂酒置于离心管中,用水稀释10~20倍后,混合均匀,将其于3000~5000r/min离心20~30min后观察其是否出现沉淀;以无沉淀现象为佳,并进行评分;评分为0~10分,10分最佳。
(3)阿胶芪术姜桂酒的口感,对阿胶芪术姜桂酒的口感从以下两个方向进行评分:1、气味(以无明显异味、有酒香气为优)、2、味道(以酒味醇香为优),评分为0~10分,10分最佳。

从上述实施例的表征数据可知,本实施例通过在阿胶中加入黄芪、甘草、白术、干姜、桂枝,多种成分相互配合,得到的组合物在白酒中有极好的配伍性和分散性;通过加入乳酸和三聚甘油单硬脂酸酯,进一步提高了各个成分的分散性。
且本申请通过制备方法的调控,包括对原料继续冷冻干燥处理后浸渍,以及在浸渍过程中添加水对白酒进行稀释的操作,都有效提高了各个成分的分散性。
通过对比例1~5的数据说明,每种成分都是缺一不可的,都会对整个组合物的口感以及分散性起到一定的作用;通过对比例6~9的数据可知,在制备过程中,对于白酒的酒精度的控制使极为重要的,控制得当的话,会有利于各个成分的分散性和口感。

2.根据权利要求1所述的一种阿胶芪术姜桂酒,其特征在于:由如下原料组成:白酒300份、黄芪3份、甘草2份、白术3份、干姜3份、桂枝1份、阿胶2份。
3.根据权利要求1所述的一种阿胶芪术姜桂酒,其特征在于,还包括:乳酸0.01~0.1份、三聚甘油单硬脂酸酯0.01~0.06份。
4.根据权利要求3所述的一种阿胶芪术姜桂酒,其特征在于:由如下原料组成:白酒350份、黄芪2份、甘草1份、白术2份、干姜4份、桂枝1.5份、阿胶2.5份、乳酸0.03份、三聚甘油单硬脂酸酯0.01份。
5.一种阿胶芪术姜桂酒的制备工艺,其特征在于,包括:
S1:将黄芪、甘草、白术、干姜、桂枝进行粗碎;
S2:将阿胶加入白酒中,加热使其溶化得到阿胶液;
S3:将粗碎的药材倒入阿胶液中,加白酒进行浸渍5~8天;
S4:取浸渍液,静置24小时后取上清液,加蒸馏水加白酒配制得到阿胶芪术姜桂酒。
6.根据权利要求5所述的一种阿胶芪术姜桂酒的制备工艺,其特征在于,还包括:S3中将粗碎的药材倒入阿胶液中进行搅拌,搅拌均匀后将其置于冷冻干燥机中干燥30~50min后取出将其加白酒进行浸渍的步骤。
7.根据权利要求6所述的一种阿胶芪术姜桂酒的制备工艺,其特征在于,所述冷冻干燥温度为-60~-80℃,压力为8~16pa。
8.根据权利要求5所述的一种阿胶芪术姜桂酒的制备工艺,其特征在于,利用白酒进行浸渍的过程中,每隔24~48h,将蒸馏水添加到其中以稀释所述白酒,最终浸渍液中的酒精度为45~50度。
9.根据权利要求5所述一种阿胶芪术姜桂酒的制备工艺,其特征在于,所述白酒是利用甜高粱籽粒、高粱籽粒、甜高粱秸秆经过发酵和蒸馏而成的酒精度为60~65度的白酒。
10.权利要求1-4任一所述的阿胶芪术姜桂酒,或权利要求5-9任一所述的制备工艺制备得到阿胶芪术姜桂酒,其特征在于,所述阿胶芪术姜桂酒的酒精度为38度。
