本发明涉及功能饮品技术领域,更具体的说是涉及一种黄精酵素抗疲劳 饮料及其制备方法。
背景技术
黄精的主要化学成分有多糖、甾体皂苷、蒽醌、生物碱等,具有降血糖、 降血脂、抗衰老、抗炎、抗肿瘤、抗骨质疏松、抗动脉粥样硬化、抗疲劳等 作用及功效。近年来,由于黄精具有良好的功能作用,以其为主要原料的相 关产品研究成为热点,其市场前景非常广阔。
功能饮料是2000年开始风靡于欧美和日本等发达国家的一种健康饮品, 具有抗疲劳和补充能量功效的功能饮料占据了大部分的市场,它含有钾、钠、 钙、镁等电解质,成分与人体体液相似,饮用后更能迅速被身体吸收,及时 补充人体因大量运动出汗所损失的水分和电解质,使体液达到平衡状态。目 前功能饮料受到越来越多的消费者喜爱,我国逐渐成为功能性饮料的消费大 国。但是市场上还缺乏利用黄精作为原料制备功能饮料的技术和产品,不仅 仅限制了黄精的应用,也限制了功能饮料的发展。
因此,如何提供一种利用黄精制备功能性饮料的方法是本领域技术人员 亟待解决的问题。
发明内容
有鉴于此,本发明提供了一种配制简单、成本低廉、营养丰富、口感好 的具有抗疲劳作用的黄精酵素抗疲劳饮料。
为了实现上述目的,本发明采用如下技术方案:
一种黄精酵素抗疲劳饮料,包括以下重量份的组分:黄精酵素原液20-50 份、赤藓糖醇20-60份、牛磺酸0.1-0.5份、咖啡因0.05-0.15份、薄荷冰0.01-0.05 份、维生素份、维生素份、水 200-1000份。
进一步的,所述黄精酵素原液采用如下工艺制备:
(1)将黄精用清水洗净后沥干水分,然后粉碎至粒径≤50mm;
(2)向步骤(1)粉碎后的黄精中加入蔗糖和去离子水,然后投入至发 酵罐中混合均匀后灭菌,然后静置至灭菌后的物料降至室温;
(3)向步骤(2)得到的降至室温的灭菌后的物料中加入果酒酵母菌, 搅拌均匀后密封发酵48-52d至发酵罐产生大量酵素原液后停止发酵;
(4)将步骤(3)得到的发酵产物经板框过滤器处理后分理即得黄精酵 素原液和发酵渣;
(5)收集黄精酵素原液并置于0-4℃的环境中低温保存即可。
优选的,所述步骤(2)中重量比黄精:蔗糖:去离子水=10:5:100。
优选的,所述步骤(2)中灭菌高压蒸汽灭菌,灭菌温度121℃、压力 0.12MPa、时间20-30min。
优选的,所述步骤(3)中加入的果酒酵母菌重量为黄精重量的0.2%,发 酵温度为20-25℃。
优选的,所述步骤(3)中发酵过程具体为:自发酵次日起,每天打开发 酵罐放气同时400r/min搅拌1-3min,增加溶氧,促进酵母菌繁殖,然后密闭, 持续该操作30d;30d后每天400r/min搅拌2-3min,不开罐放气,在缺氧条件 下进行厌氧发酵,使葡萄糖转化成酒精和二氧化碳。
优选的,所述黄精酵素原液为泰山黄精酵素原液。
本发明还提供了一种如上技术方案中所述的黄精酵素抗疲劳饮料的制备 方法,包括以下步骤:
步骤一:按重量称取黄精酵素原液、赤藓糖醇、牛磺酸、咖啡因、薄荷 冰、维生素B6、维生素B12和水,然后将称取的原料置于配料罐中均质;
步骤二:将均质后的混合液泵入灌装机中,采用90℃热灌装,灌装后密 封;
步骤三:将灌装密封后的成品投入杀菌釜中,加热至130-140℃杀菌 10-20min后冷却至45℃,取出成品喷码、包装即得黄精酵素抗疲劳饮料。
优选的,所述步骤一中的均质具体操作为:设定预热温度为65℃,均质 两次,第一次均质压力为30MPa,第二次均质压力为20MPa,至均质后混合 物放置2h后不分层、无沉淀。
经由上述的技术方案可知,与现有技术相比,本发明公开提供了一种黄 精酵素抗疲劳饮料及其制备方法,其有益效果如下:
黄精的主要化学成分有多糖、甾体皂苷、蒽醌、生物碱等,具有降血糖、 降血脂、抗衰老、抗炎、抗肿瘤、抗骨质疏松、抗动脉粥样硬化、抗疲劳等 作用及功效;本发明以具有保健功能的黄精酵素作为主要原料,辅加牛磺酸、 咖啡因、维生素B6,维生素B12等功能成分加工成复合饮品,强化了饮料中 的保健成份,而且本发明制成的黄精酵素抗疲劳饮料口感细腻、气味协调、 酸甜适中且有效地保持了生物活性,具有提神抗疲劳的功能,适合在办公、 运动、开车等场景饮用。
具体实施方式
下面将结合实施例对本发明的技术方案进行清楚、完整地描述,显然, 所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本 发明中的实施例,本领域普通技术人员在没有做出创造性劳动前提下所获得 的所有其他实施例,都属于本发明保护的范围。
本发明实施例中所使用的泰山黄精购自山东乾元生物科技有限公司。
本发明实施例中所用的泰山黄精酵素原液采用如下工艺制备:
(1)将泰山黄精用清水洗净后沥干水分,然后粉碎至粒径≤50mm;
(2)向步骤(1)粉碎后的泰山黄精中以重量比泰山黄精:蔗糖:去离 子水=10:5:100的比例加入蔗糖和去离子水,然后投入至发酵罐中混合均匀后 高压蒸汽灭菌,灭菌温度121℃、压力0.12MPa、时间20min,然后静置至灭 菌后的物料降至室温;
(3)向步骤(2)得到的降至室温的灭菌后的物料中加入泰山黄精重量 0.2%的果酒酵母菌,搅拌均匀后密封20-25℃条件下发酵,自发酵次日起,每 天打开发酵罐放气同时400r/min搅拌1-3min,然后密闭,持续该操作30d, 30d后每天400r/min搅拌2-3min,不开罐放气,继续发酵18-22d至发酵罐产 生大量酵素原液后停止发酵;
(4)将步骤(3)得到的发酵产物经板框过滤器处理后分理即得泰山黄 精酵素原液和发酵渣;
(5)收集泰山黄精酵素原液并置于0-4℃的环境中低温保存备用。

上述实施例1-3的泰山黄精酵素抗疲劳饮料的制备方法,采用如下方案:
步骤一:按重量称取泰山黄精酵素原液、赤藓糖醇、牛磺酸、咖啡因、 薄荷冰、维生素B6、维生素B12和水,然后将称取的原料置于配料罐中均质, 设定预热温度为65℃,均质两次,第一次均质压力为30MPa,第二次均质压 力为20MPa,至均质后混合物放置2h后不分层、无沉淀;
步骤二:将均质后的混合液泵入灌装机中,采用90℃热灌装,灌装后密 封;
步骤三:将灌装密封后的成品投入杀菌釜中,加热至130-140℃杀菌 10-20min后冷却至45℃,取出成品喷码、包装即得泰山黄精酵素抗疲劳饮料。
试验例
对上述实施例1-3的泰山黄精酵素抗疲劳饮料进行效果测试,具体方法 为:将健康成年小鼠(18~22g)随机分为5组,每组10只,分别为正常组、对 照组、实施例1-3制得的泰山黄精酵素抗疲劳饮料实验组,分别进行衰竭游泳 时间和生化指标测定。
其中,正常组和对照组小鼠灌胃自来水,实验组小鼠每天灌胃0.5ml泰山 黄精酵素抗疲劳饮料,连续灌胃三天后,除正常组外,其他组进行运动实验, 运动前30min各组动物以其对应的饮品灌胃0.5ml。
运动以每只小鼠负重5%体重铁环,测定衰竭游泳时间(水温30℃)。各组 90min后测定血乳酸和肝糖原含量。测试结果见表1。

上述表1的测试结果可见,灌胃实施例1-3制得的泰山黄精酵素抗疲劳饮 料的小鼠较对照组,衰竭游泳时间显著延长,肝糖原含量增加、血乳酸含量 明显降低。表明实施例1-3制得的泰山黄精酵素抗疲劳饮料有明显的抗疲劳作 用。

Claims (9)
2.根据权利要求1所述的一种黄精酵素抗疲劳饮料,其特征在于,所述黄精酵素原液采用如下工艺制备:
(1)将黄精用清水洗净后沥干水分,然后粉碎至粒径≤50mm;
(2)向步骤(1)粉碎后的黄精中加入蔗糖和去离子水,然后投入至发酵罐中混合均匀后灭菌,然后静置至灭菌后的物料降至室温;
(3)向步骤(2)得到的降至室温的灭菌后的物料中加入果酒酵母菌,搅拌均匀后密封发酵48-52d至发酵罐产生大量酵素原液后停止发酵;
(4)将步骤(3)得到的发酵产物经板框过滤器处理后分理即得黄精酵素原液和发酵渣;
(5)收集黄精酵素原液并置于0-4℃的环境中低温保存即可。
3.根据权利要求2所述的一种黄精酵素抗疲劳饮料,其特征在于,所述步骤(2)中重量比黄精:蔗糖:去离子水=10:5:100。
4.根据权利要求2所述的一种黄精酵素抗疲劳饮料,其特征在于,所述步骤(2)中灭菌高压蒸汽灭菌,灭菌温度121℃、压力0.12MPa、时间20-30min。
5.根据权利要求2所述的一种黄精酵素抗疲劳饮料,其特征在于,所述步骤(3)中加入的果酒酵母菌重量为黄精重量的0.2%,发酵温度为20-25℃。
6.根据权利要求2所述的一种黄精酵素抗疲劳饮料,其特征在于,所述步骤(3)中发酵过程具体为:自发酵次日起,每天打开发酵罐放气同时400r/min搅拌1-3min,然后密闭,持续该操作30d;30d后每天400r/min搅拌2-3min,不开罐放气。
7.根据权利要求1-6任一项所述的一种黄精酵素抗疲劳饮料,其特征在于,所述黄精酵素原液为泰山黄精酵素原液。
8.一种权利要求1-7所述的黄精酵素抗疲劳饮料的制备方法,其特征在于,包括以下步骤:
步骤一:按重量称取黄精酵素原液、赤藓糖醇、牛磺酸、咖啡因、薄荷冰、维生素B6、维生素B12和水,然后将称取的原料置于配料罐中均质;
步骤二:将均质后的混合液泵入灌装机中,采用90℃热灌装,灌装后密封;
步骤三:将灌装密封后的成品投入杀菌釜中,加热至130-140℃杀菌10-20min后冷却至45℃,取出成品喷码、包装即得黄精酵素抗疲劳饮料。
