本发明涉及医用食品技术领域,具体为一种高能量密度酪蛋白型全营养特医食品乳剂及其制备方法。
背景技术
肠内营养(enteral nutrition,EN)制剂是为需要胃肠道营养支持的患者所提供一种特殊制剂,对于保障患者疾病期间的营养充足,避免因营养不良进一步加重机体的损伤,提高患者疾病的抵抗力,为患者创造良好的代谢机能和环境具有非常重要的作用。
重症病人常常因为全身炎症反应而出现分解代谢异常,可能导致感染性并发症增多、住院时间延长甚至死亡率升高。因此营养支持在重症病人的治疗中占有重要地位,是重症患者救治中不可缺少的重要组成部分,更确切地说是每日的能量摄入量对重症病人的结局至关重要。
但是在临床应用中,由于胃肠道不耐受(如胃残余体积大、反流和呕吐)和手术禁食等原因,大部分病人每日的摄入量不足推荐量的60%。显然这些病人的能量摄入远未达到指南推荐的目标。
高能量密度肠内营养乳剂为高蛋白、高脂肪配方,与常规能量乳剂相比,等体积可提供更高的能量供应,在改善重症患者的营养不良,降低病死率、减少并发症、缩短疾病病程和住院时间、减少经济耗费等方面,具有重要意义。

本发明的目的在于提供一种高能量密度酪蛋白型全营养特医食品乳剂及其制备方法。
为实现上述目的,本发明提供如下技术方案:
一种高能量密度酪蛋白型全营养特医食品乳剂,包括蛋白质、碳水化合物、油脂、维生素、矿物质、膳食纤维、牛磺酸、左旋肉碱、核苷酸、乳化增稠剂、口味调节剂和水;其中,所述油脂在所述乳剂中的体积分数为1~50.0%,所述水在所述乳剂中的体积分数为50.0~99.0%;每100mL所述乳剂中含有蛋白质0.1~15g、碳水化合物0.1~50.0g、矿物质0.1~10.0g、维生素0.01~2.0g、乳化剂0.01-5.0g、增稠剂0.01-3g、牛磺酸0.001~0.1g、核苷酸0.001~0.1g、左旋肉碱0.001~0.1g、口味调节剂0.09-0.54g。
进一步地,所述口味调节剂包括甜味剂、香精中的任意一种或两种。
进一步地,所述蛋白质包括酪蛋白、酪蛋白酸盐、乳清蛋白、蛋清蛋白、β-乳球蛋白、大豆分离蛋白、乳铁蛋白、乳清分离蛋白中的一种或几种的混合物。
进一步地,所述碳水化合物包括葡萄糖、蔗糖、海藻糖、麦芽糊精、麦芽糖、淀粉中的一种或几种的混合物。
进一步地,所述油脂包括大豆油、花生油、芝麻油、沙棘油、葵花籽油、亚麻籽油、苏子油、椰子油、橄榄油、鱼肝油及中链脂肪酸酯中的一种或几种的混合物。

与现有技术相比,本发明的有益效果是:本发明成人全营养特殊医学用途配方食品的制备方法中的所有操作均在符合《特殊医学用途配方食品良好生产规范》要求的洁净干燥环境内进行。
本产品配方依据为GB29922-2016《食品安全国家标准特殊医学用途配方食品通则》的严格要求,为高蛋白、高脂肪配方,辅以人体所需的维生素、矿物质结合起来,100ml可提供800KJ的能量,单位体积可提供更高的能量,可作为重症患者唯一营养来源或食物摄入不足的营养补充物。
本发明提供的一种具有特殊医学用途配方食品的全营养粉含有酪蛋白、大豆分离蛋白等多种优质蛋白以及海洋鱼低聚肽、大豆低聚肽、鱼胶原蛋白肽等小分子肽,能为人体提供不同形式的氮源,易于患者消化吸收。
添加紫苏籽油、椰子油、大豆油、橄榄油和中链甘油三酯等,富含EPA、DHA等不饱和脂肪酸,可改善患者的血脂水平。
添加菊粉、低聚半乳糖等膳食纤维,可帮助患者胃肠道功能恢复,维持肠道微生态的平衡。

实施例6:
结合实施例1中的一种高能量密度酪蛋白型全营养特医食品乳剂的制备方法,包括以下步骤:
步骤一:将氧化镁溶解于水,加入酸度调节剂调节溶液至中性,溶得到氧化镁的水溶液;
步骤二:将蛋白质、碳水化合物、矿物质、水溶性维生素、核苷酸、左旋肉碱、牛磺酸、香精、甜味剂、增稠剂溶解上述水溶液中得到水相溶液;
步骤三:将所述脂溶性维生素、乳化剂溶解于油脂中,得到油相溶液;
步骤四:将所述水相溶液与所述油相溶液混合剪切形成初乳;
步骤五:对所述初乳进行乳化均质处理;
步骤六:将上述样品适用超高温瞬间灭菌机灭菌处理后,即得。
所述步骤一酸度调节剂为柠檬酸和氢氧化钾调节溶液Ph至中性;
所述步骤二中溶解的温度为40℃,溶解的时间为1h;
所述步骤四中剪切的速度为100r/min,剪切的时间为2h;
所述步骤五中均质的方法为高压均质、微射流或超声乳化,且若使用高压均质,其均质的压力为200bar,均质的循环次数为20次;
所述步骤六中超高温灭菌温度为130℃,灭菌时间为4s。
实施例7:
结合实施例2中的一种高能量密度酪蛋白型全营养特医食品乳剂的制备方法,包括以下步骤:
步骤一:将氧化镁溶解于水,加入酸度调节剂调节溶液至中性,溶得到氧化镁的水溶液;
步骤二:将蛋白质、碳水化合物、矿物质、水溶性维生素、核苷酸、左旋肉碱、牛磺酸、香精、甜味剂、增稠剂溶解上述水溶液中得到水相溶液;
步骤三:将所述脂溶性维生素、乳化剂溶解于油脂中,得到油相溶液;
步骤四:将所述水相溶液与所述油相溶液混合剪切形成初乳;
步骤五:对所述初乳进行乳化均质处理;
步骤六:将上述样品适用超高温瞬间灭菌机灭菌处理后,即得。
所述步骤一酸度调节剂为柠檬酸和氢氧化钾调节溶液Ph至中性;
所述步骤二中溶解的温度为100℃,溶解的时间为3h;
所述步骤四中剪切的速度为30000r/min,剪切的时间为30s;
所述步骤五中均质的方法为高压均质、微射流或超声乳化,且若使用高压均质,其均质的压力为1500bar,均质的循环次数为2次;
所述步骤六中超高温灭菌温度为140℃,灭菌时间为10s。

结合实施例3-5中任意一个所述的一种高能量密度酪蛋白型全营养特医食品乳剂的制备方法,包括以下步骤:
步骤一:将氧化镁溶解于水,加入酸度调节剂调节溶液至中性,溶得到氧化镁的水溶液;
步骤二:将蛋白质、碳水化合物、矿物质、水溶性维生素、核苷酸、左旋肉碱、牛磺酸、香精、甜味剂、增稠剂溶解上述水溶液中得到水相溶液;
步骤三:将所述脂溶性维生素、乳化剂溶解于油脂中,得到油相溶液;
步骤四:将所述水相溶液与所述油相溶液混合剪切形成初乳;
步骤五:对所述初乳进行乳化均质处理;
步骤六:将上述样品适用超高温瞬间灭菌机灭菌处理后,即得。
所述步骤一酸度调节剂为柠檬酸和氢氧化钾调节溶液Ph至中性;
所述步骤二中溶解的温度为84℃,溶解的时间为2.5h;

所述步骤六中超高温灭菌温度为137℃,灭菌时间为8s。
对于本领域技术人员而言,显然本发明不限于上述示范性实施例的细节,而且在不背离本发明的精神或基本特征的情况下,能够以其他的具体形式实现本发明。因此,无论从哪一点来看,均应将实施例看作是示范性的,而且是非限制性的,本发明的范围由所附权利要求而不是上述说明限定,因此旨在将落在权利要求的等同要件的含义和范围内的所有变化囊括在本发明内。
Claims (10)
1.一种高能量密度酪蛋白型全营养特医食品乳剂,其特征在于:包括蛋白质、碳水化合物、油脂、维生素、矿物质、膳食纤维、牛磺酸、左旋肉碱、核苷酸、乳化增稠剂、口味调节剂和水;其中,所述油脂在所述乳剂中的体积分数为1~50.0%,所述水在所述乳剂中的体积分数为50.0~99.0%;每100mL所述乳剂中含有蛋白质0.1~15g、碳水化合物0.1~50.0g、矿物质0.1~10.0g、维生素0.01~2.0g、乳化剂0.01-5.0g、增稠剂0.01-3g、牛磺酸0.001~0.1g、核苷酸0.001~0.1g、左旋肉碱0.001~0.1g、口味调节剂0.09-0.54g。
2.根据权利要求1所述一种高能量密度酪蛋白型全营养特医食品乳剂,其特征在于:所述口味调节剂包括甜味剂、香精中的任意一种或两种。
3.根据权利要求1所述一种高能量密度酪蛋白型全营养特医食品乳剂,其特征在于:所述蛋白质包括酪蛋白、酪蛋白酸盐、乳清蛋白、蛋清蛋白、β-乳球蛋白、大豆分离蛋白、乳铁蛋白、乳清分离蛋白中的一种或几种的混合物。
4.根据权利要求1所述一种高能量密度酪蛋白型全营养特医食品乳剂,其特征在于:所述碳水化合物包括葡萄糖、蔗糖、海藻糖、麦芽糊精、麦芽糖、淀粉中的一种或几种的混合物。
5.根据权利要求1所述一种高能量密度酪蛋白型全营养特医食品乳剂,其特征在于:所述油脂包括大豆油、花生油、芝麻油、沙棘油、葵花籽油、亚麻籽油、苏子油、椰子油、橄榄油、鱼肝油及中链脂肪酸酯中的一种或几种的混合物。
6.根据权利要求1所述一种高能量密度酪蛋白型全营养特医食品乳剂,其特征在于:所述矿物质包括钠、钾、铜、镁、铁、锌、锰、钙、磷、碘、硒。
7.根据权利要求6所述一种高能量密度酪蛋白型全营养特医食品乳剂,其特征在于:所述复合矿物质中各组分的含量优选如下:钠29~178mg、钾43~256mg、铜33~220μg、镁8~48mg、铁0.4~2.4mg、锌0.57~3.42mg、锰100~600μg、钙28~168mg、磷17~102mg、碘4.1~24μg、氟0.3~2μg、硒3.6~21.6μg。
8.根据权利要求1所述一种高能量密度酪蛋白型全营养特医食品乳剂,其特征在于:所述维生素包括:维生素A、维生素D、维生素E、维生素K、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、肌醇、维生素C、生物素和胆碱。
9.根据权利要求8所述一种高能量密度酪蛋白型全营养特医食品乳剂,其特征在于:所述维生素中各组分的含量优选如下:维生素A 40.3~242μg RE、维生素D 0.9~4.54μg、维生素E 0.8~4.8mgα-TE、维生素K 3.5~21.2μg、维生素B1 0.11~0.62mg、维生素B2 0.11~0.62mg、维生素B6 0.11~0.62mg、维生素B12 0.16~0.98μg、烟酸0.17~1.02mg、叶酸18~108μg、泛酸0.27~1.62mg、维生素C 10.5~62.8mg、生物素1.6~9.6mg和胆碱32.9~197.4mg。
10.一种如权利要求1-9中任意一条所述高能量密度酪蛋白型全营养特医食品乳剂的制备方法,其特征在于:包括以下步骤:
步骤一:将氧化镁溶解于水,加入酸度调节剂调节溶液至中性,溶得到氧化镁的水溶液;
步骤二:将蛋白质、碳水化合物、矿物质、水溶性维生素、核苷酸、左旋肉碱、牛磺酸、香精、甜味剂、增稠剂溶解上述水溶液中得到水相溶液;
步骤三:将所述脂溶性维生素、乳化剂溶解于油脂中,得到油相溶液;
步骤四:将所述水相溶液与所述油相溶液混合剪切形成初乳;
步骤五:对所述初乳进行乳化均质处理;
步骤六:将上述样品适用超高温瞬间灭菌机灭菌处理后,即得所述高能量密度酪蛋白型全营养特医食品乳剂。
