Abstract
一种具有提高免疫力功能的食品配方,其特征在于由以下质量份的原料组成:大豆肽、鱼胶原蛋白肽、白蛋白肽、玉米低聚肽、牡蛎肽、茶叶茶氨酸。所述的食品配方是用常规方法制备的糖果、固体饮料、液体饮料。本发明以大豆肽为主,多种组份科学合理搭配,诸成份协同作用,经大量实验,并经过相应的动物试验和临床试验证明,本发明能补充最基本的能量物质,能有效增加人体机体免疫力,缓解易疲劳等亚健康状态,特别适用于胃肠功能减弱或免疫力低下等人群。本发明构思巧妙,组方合理,原料安全,是一种具有提高免疫力的食品配方。

技术领域
本发明涉及一种食品配方,具体是一种具有提高免疫力的食品配方。
背景技术
免疫力是机体应对外来侵害所表现出的一种能力,免疫力可分为非特异性免疫和特异性免疫。免疫力低下的人往往易于被细菌和病毒感染,人体的免疫力与遗传因素、生活环境、饮食情况、作息习惯等都有关系。 由于现代生活中很多年轻人生活和工作压力增加,日常生活不规律等不健康的生活习惯也会导致免疫力下降。通常情况下提高免疫力的方法无外乎均衡饮食、劳逸结合、适度足量的锻炼、补充营养元素如维生素微量元素等。但在日常生活中很难有人能够坚持按照科学的食谱和健康计划表来完成,做到饮食合理、积极锻炼等。市场上也有很多保健产品甚至是药品具有提高免疫力的作用。诸如使用人参等植物提取物、植物多糖、蛋白粉等原料。植物提取的成分相对较为复杂,很多提取物除了明确结构的化学成分外还含有其他的复合成分机理尚不明确,很多原料目前尚未列入可用于食品的目录中,长期服用其安全性尚无能定论。
发明内容
本发明的目的旨在从补充最基本的能量物质角度出发,采用安全的原料,提供一种具有提高免疫力的食品配方。
本发明的技术方案:一种具有提高免疫力功能的食品配方,其特征在于由以下质量份的原料组成:大豆肽1.0-5.0份、鱼胶原蛋白肽0.5-2.5份、白蛋白肽0.5-2.5份、玉米低聚肽0.5-2.0份、牡蛎肽0.05-0.15份、茶叶茶氨酸0.05-0.15份。
本发明的技术方案还可以是:由以下质量份的原料组成:大豆肽2.0-3.0份、鱼胶原蛋白肽0.5-1.0份、白蛋白肽0.5-1.0份、玉米低聚肽0.5-1.0份、牡蛎肽0.08-0.1份、茶叶茶氨酸0.05-0.08份。
本发明的技术方案还可以是:由以下质量份的原料组成:大豆肽2.65份、鱼胶原蛋白肽0.8份、白蛋白肽0.8份、玉米低聚肽0.6份、牡蛎肽0.1份、茶叶茶氨酸0.05份。
本发明的技术方案所述的食品配方是用常规方法制备的糖果、固体饮料、液体饮料。
由于现代生活中很多年轻人生活和工作压力增加,日常生活不规律等不健康的生活习惯也会导致免疫力下降。本发明原料中的大豆肽是以大豆为原料提取其中的蛋白成分经酶解、分离、过滤浓缩等步骤制成,具有较好的溶解性及稳定性,适用于多种形式的产品加工。鱼胶原蛋白肽主要是以鱼皮鱼鳞等为原料提取加工制成。胶原蛋白是一种高分子功能性蛋白质 它是皮肤的主要组成部分占皮肤真皮层80%的比重它在皮肤中构成了一张细密的弹力网牢固锁住水分支撑着皮肤。白蛋白肽以蛋清粉为原料提取的蛋白质,再经过定向酶切及特定小肽分离技术获得的小分子多肽物质。白蛋白多肽又名卵蛋白酶解物是人体血浆中的一种功能大分子蛋白质,是维持血浆渗透压、增加血容量,提供平衡氨基酸的重要成分,是人体不可或缺的营养物质。玉米低聚肽是将玉米中提取的蛋白质再经过定向酶切及特定小肽分离技术获得的小分子多肽物质,现代研究发现其具有抗氧化等多个生理活性,具有较好的开发应用前景。牡蛎肽是将牡蛎/生蚝经酶解制成,保留了牡蛎原有的维生素、微量元素和牛磺酸等营养成份,使富含核酸的牡蛎在人体摄入后比单一氨基酸或蛋白质吸收更快,更容易被肌体吸收,在人体代谢方面有着更重要的生物活性。茶叶茶氨酸是从天然植物茶叶中提取的,是特有的一种游离氨基酸,研究表明茶氨酸可以明显促进脑中枢多巴胺释放,提高脑内多巴胺生理活性。
针对蛋白质消化吸收早些研究认为经消化道酶促水解后,主要以氨基酸的形式吸收。近年的科学研究认为,人体吸收蛋白质的主要形式不只是以氨基酸的形式吸收的,大部分是以多肽的形式进行吸收。不同来源的多肽其氨基酸组成不尽相同,经吸收后对机体的有益作用自然也就不同。本发明中占比较高的大豆肽水解后氨基酸组成以谷氨酸占比最多,其次分别是天门冬氨酸、精氨酸、赖氨酸、亮氨酸,这几种氨基酸共占50%以上;鱼胶原蛋白肽中以甘氨酸、脯氨酸、谷氨酸、丙氨酸占比较高;玉米低聚肽中以谷氨酸、亮氨酸、脯氨酸、天门冬氨酸、丙氨酸占比较高。不同来源的多肽类成分氨基酸排布序列不同,在生理活性上也表现出不同的特点,本发明经过复配后各组分协同作用使人体同时获得人体最需要的多种氨基酸补充,支持最基本的生理代谢,如本发明中使用的牡蛎肽氨基酸组成中精氨酸较高,同时含有锌等微量元素,其多肽为一种肽锌结合肽。本发明配方中还添加了茶叶茶氨酸,有助于缓和疲劳的症状,起到舒心、放松,能让人更好的进入睡眠状态,其主要是通过促进脑中枢多巴胺释放,提高脑内多巴胺生理活性。本发明食品配方是从补充最基本的能量物质角度出发,添加帮助镇静助睡眠的茶叶茶氨酸,能够提高睡眠质量,对人体机能恢复等方面共同作用,从而达到提高免疫功能的效果。
本发明是根据当今人们的生活和身体对免疫力的需要,选择食用安全的新食品原料茶氨酸、玉米低聚肽及食品来源的植物肽、动物肽为原料,通过不同来源的多肽为人体提供机体代谢必须的多种氨基酸,是对日常饮食的有益补充,平时摄入的肉蛋等食物需要经过胃、胰腺、小肠等多个器官的消化分解后才能最终吸收,所以本食品配方尤其适用于胃肠功能减弱或免疫力低下等人群。本发明以大豆肽为主多种组份科学合理搭配,诸成份协同作用,经大量实验,并经过相应的动物试验和临床试验证明,本发明能有效补充最基本的能量物质,增加人体机体免疫力,缓解易疲劳等亚健康状态,特别适用于胃肠功能减弱或免疫力低下等人群。本发明构思巧妙,组方合理,原料安全,是一种具有提高免疫力的食品配方。
本发明动物实验报告
本实验是将本发明与单一原料对比的细胞免疫功能测试实验,按照原国家卫生部《食品配方检验与评价技术规范》(2003版)中增强免疫力功能实验方案进行实验。根据产品设计的推荐食用量分别设低剂量组20mg/kg、中剂量组40mg/kg、高剂量组80mg/kg、大豆肽高剂量组仅以大豆肽原料为饲喂80mg/kg,相当于人体推荐用量的10倍、20倍、40倍,同时以麦芽糊精40mg/kg为阴性对照组。结果显示各剂量组及阴性对照组大豆肽组实验小鼠的胸腺/体重及脾脏/体重比值均无明显差异,表明各实验组样品对实验小鼠的免疫器官重量无明显影响,对实验小鼠的体重增长亦无明显影响,详见表1和表2。

各实验组细胞免疫功能测定实验中对实验小鼠迟发型变态反应的影响实验结果阳性,本实验选择以二硝基氟苯涂抹耳部诱导小鼠耳部肿胀程度进行验证。实验各剂量组、大豆肽组实验小鼠的左右耳片重量差值高于阴性对照组,其中高剂量组、中剂量组及大豆肽组与阴性对照组的差异具有显著性,说明本发明配方具有促进小鼠的迟发型变态反应的作用,详见表3。

各实验组体液免疫功能测定实验中对实验小鼠血清溶血素的影响实验结果阳性,本实验选择以半数溶血值(HC50)实验进行验证。实验各剂量组、大豆肽组实验小鼠的血清溶血素结果均高于阴性对照组,其中高剂量组、中剂量组及大豆肽组与阴性对照组的差异具有显著性,说明本发明配方具有提高小鼠的血清溶血素水平的作用,详见表4。

本发明的特点在于使用了动物源及植物源的肽类成分,同时搭配新资源食品,产品配方的安全性有足够的保障,原料均来自于食品原料可长期食用。其中的玉米低聚肽根据新食品原料的公告(原国家卫生部2010年 第15号)其使用范围规定不适用与婴幼儿,每天食用限量建议不超过4.5克。茶叶茶氨酸(原国家卫生计生委2014年 第15号)使用范围规定不适用与婴幼儿,每天食用限量建议不超过0.4克。本发明使用的配比符合相关规定的使用限量要求,推荐用量5-10克每天,可根据自身需求每天2-3次食用。本发明与现有技术相比提供了一种具有提高免疫力的新产品配方,经过复配后能够从多个角度发挥保健的功效,较单一原料体验感更明显,且该配方经过了初步的功效体验验证,主要反馈集中在睡眠质量提升、易疲劳感减弱、体力持久性增加,试食体验反馈效果良好。
本发明在试验中对免疫力低下的患者进行功效体验调查。
观察对象为门诊以及体检异常的慢性病患者,参与实验志愿者97例,其中男42例,女性55例,年龄范围18-67岁。症状为经常感到疲倦,睡眠差,多梦,精力差,畏寒,手脚冷,易感冒,医院诊断为免疫力低下。病史均在一年以上,近三个月来未接受过安眠药、免疫调节剂或降脂药治疗。经志愿者同意服用本发明实施例1-5的各种制剂,服用量为本发明配方成份的量,每天5-10克,可根据自身需求每天2-3次食用,可采用各种制剂混合使用,服用60天后进行回访:有95位志愿者能够按照食用方法进行食用,其中睡眠得到改善的有40例;活动有力、倦怠症状减轻的有58例;感冒症状减少的有49例。
具体实施方式
下面结合实施例对本发明做进一步的说明,但不限于实施例。
实施例1:
本实施例所述具有提高免疫力功能的固体饮料产品,原料为大豆肽1.0重量份、鱼胶原蛋白肽0.5重量份、白蛋白肽0.5重量份、玉米低聚肽0.5重量份、牡蛎肽0.15重量份、茶叶茶氨酸0.15重量份。将原料混合均匀后加入总重量5%的60-80目白砂糖、总重量0.2%重量苹果酸,进一步混合均匀后分装成每袋10g,成为具有苹果酸味的提高免疫力的固体饮料。
实施例2:
本实施例所述具有提高免疫力功能的固体饮料产品,原料为大豆肽5.0重量份、鱼胶原蛋白肽2.5重量份、白蛋白肽2.5重量份、玉米低聚肽2.0重量份、牡蛎肽0.05重量份、茶叶茶氨酸0.05重量份。将原料混合均匀后加入总重量0.08%三氯蔗糖、加入总重量3%的60-80目麦芽糖醇、加入总重量0.1%柠檬酸,进一步混合均匀后分装成每袋10g,成为具有柠檬酸味提高免疫力的固体饮料。
实施例3:
本实施例所述具有提高免疫力功能的糖片产品,原料为大豆肽2.0重量份、鱼胶原蛋白肽0.5重量份、白蛋白肽0.5重量份、玉米低聚肽0.5重量份、牡蛎肽0.1重量份、茶叶茶氨酸0.08重量份。将原料混合均匀,加入总重量8倍重量的山梨糖醇,加入总重量3倍总重量的木糖醇,加入总重量0.2倍重量的硬脂酸镁搅拌均匀,还可根据口味需求加入不同香型的固体食用香精,所有原料混合均匀,按常规方法压制成各种剂量的片,成为具有提高免疫力的糖片。
实施例4:
本实施例所述具有提高免疫力功能的液体饮料产品,原料为大豆肽2.0重量份、鱼胶原蛋白肽0.5重量份、白蛋白肽0.5重量份、玉米低聚肽0.5重量份、牡蛎肽0.1重量份、茶叶茶氨酸0.08重量份。将原料混合均匀,溶解于5倍重量的纯净水中,按常规加入适量的甜味剂,还可根据口味需求加入不同香型的食用香精,按常规的饮料加工方法将原料混合均匀、过滤、分装并进行湿热灭菌,成为具有提高免疫力的液体饮料。
实施例5:
本实施例所述具有提高免疫力功能的固体饮料产品,由大豆肽2.65重量份、鱼胶原蛋白肽0.8重量份、白蛋白肽0.8重量份、玉米低聚肽0.6重量份、牡蛎肽0.1重量份、茶叶茶氨酸0.05重量份。将原料混合均匀后加入总重量3%的60-80目白砂糖、加入总重量3%的麦芽糖醇,也可根据口味需求加入不同的果粉或香精进行调味,进一步混合均匀后分装成每袋10g,成为具有提高免疫力的固体饮料。

2.如权利要求1所述的具有提高免疫力功能的食品配方,其特征在于由以下质量份的原料组成:大豆肽2.0-3.0份、鱼胶原蛋白肽0.5-1.0份、白蛋白肽0.5-1.0份、玉米低聚肽0.5-1.0份、牡蛎肽0.08-0.1份、茶叶茶氨酸0.05-0.08份。
